The mineral rich hills of Beechworth are Shangri-la for the realization of big boned Chardonnay wines in the like of Chablis. The mere 1.2 hectares of Piano Piano's vineyard make for an excruciatingly low yielding site, quality of fruit however is exceptional, the vinification is decidedly Burgundian. New oak ferments and vineyard yeasts are essential to the raison d'être of Sophie's Block, a mouthfilling Beechworth style to match west coast langoustine or suckling pork, caramelled goose liver or delicately seared abalone.

$4399each $527DOZEN EACH DOZEN Chardonnay is hand picked over the passage of two weekends to create a wine of complexity and depth, the first harvest adds grapefruit and tight mineral structure, the riper second pick contributes intensity and palate weight. Grapes are all sorted, destemmed and gently pressed. Fruit is treated to a wild, indigenous vinifiction over the course of a fortnight, through the action of ambient vineyard yeasts in a high proportion of the finest new French oak hogsheads and barriques. Ten months maturation and an occasional lees stirring battonage, achieves a powerful, multi dimensional wine of structure, complexity and amazing length.

Bright straw yellow hues. Attractive nose of dried herb, cashews and citrus bouquets, minerality and finely integrated oak. The palate is lively and complex, grapefruits and peach, nectarine flavours are supported by a seamless length of maple, tangelo and delicious caramel oak, resolving on a lasting finish of compote fruit and briny savouryness.

Picardy is a traditional Burgundian style of Chardonnay with impressive aromatics and profound fruit character. The wine possesses all requisite floral and fine grassy sour sob/ oxalis grass characters expected in a young Burgundy. Picardy offers great texture and solid structure with high acid and extraordinarily low pH whilst retaining perfect balance. Crafted from grapes grown to four clones of vine imported from France, selected over a decade of trials out of a field of several hundred, grown to some of the most illustrious vineyards in Burgundy.

$5199each $623DOZEN EACH DOZEN The history of Chardonnay at Picardy began when Bill and Sandra Pannell were fortunate enough to meet M. Vincent LeFlaive of the famous Puligny Montrachet, during his visit in 1989. Believing that Pemberton was ideal for the most refined styles of Chardonnay, Pannell decided to research the situation with respect to clones. Several hundred were trialled in Burgundy and four were selected, 76 and 95, 96 and 277, on the basis of the quality as opposed to yield. Twenty cuttings of each were imported into Western Australia, held in quarantine for the growing season of 1993 to 1994, replanted into the Picardy property the following spring. Picardy now has in excess of a thousand vines of each.

Bejewelled yellow colour. Bright and fresh, redolent with nectarine, while the oak adds a hint of spice and grilled nuts, very elegant, exhibiting minerally flavours, with the refinement and length of the great Burgundies, finishing on a note of citrus. The highlight is a purity of fine chardonnay fruit flavours, Picardy appeals as the quality of West Australian fruit shines within a fine Chablis styling.

A pure expression of Riesling and an embodiement of the uniqueness at Polish Hill River, Merle is crafted by a Riesling specialist after collation of the finest fruit from each vintage. Named for the estate's matriarch Merle Pike, she knew that she was going to have her own label and was quietly chuffed about it. An intense and pure Riesling wine with refined citrus characters over a slatey mineral palate, successive vintages of Merle have been selected for service in Qantas First Class.

$5099each $611DOZEN EACH DOZEN Merle expresses the slatey soils of the distinguished Pike vineyard. The Polish Hill subregion is considerably cooler than the rest of Clare Valley, imparting distinctive flavours and aromas into the ultimate wine. Vines are kept fresh with minimum levels of irrigation, just sufficient to keep the leaves intact and functioning, but not actually growing. This encourages all the vine's energy into ripening the fruit, optimizing flavour and aroma development in the process. Treated to the most exacting fruit selection and the highest standard of vinification, only the exclusively free run juices are included, Merle is inoculated to a mix of choice yeasts and coolly fermented without any malolactic.

Brilliant pale green colour. Pure, delicate citrus notes of lemon/ lime/ grapefruit with a twirl of regional slatey mineral character. Delicate, subtle and dry with vibrant lemon/ lime flavours tightly woven around a core of slate/ mineral acid that provides length and texture. A complex yet completely integrated, fully engaging wine.

From vines planted in the 1990s, to estate vineyards in Tamar Valley and around Pipers Brook. The fully ripe expressions of West Tamar are balanced by the naturally high, flavoursome malic acidity derived from Pipers Brook, achieving a tight, refreshing and complex style. The vines are meticulously hand tended, maximizing exposure of the bunches to the sun, realizing harvests with the most intense flavours. A generously complex wine of remarkable intensity, courtesy of the natural skin tannins, so ideal with antipasto, oven roasted turkey or white game.

$3399each $407DOZEN EACH DOZEN Pinot Gris ripens quickly in all but the coolest of climates, it's ideally suited to the temperate Tasmanian season. Crop levels are kept low by selective bunch thinning to maximize intensity of flavour. Grapes are hand harvested throughout the chill of early morning. Fruit is crushed and immediately processed, the philosophy being to capture and retain the delectable characters of Pinot Gris while still on the vine. Parcels are pressed and treated to a short period of skin contact, extracting additional flavours which are locked away in the skins, this creates a more complex, rich and savoury style of Pinot Gris. Juices are slowly vinified at lower temperatures in a mix of barrel and fermenters, followed by early bottling.

Copper straw hue. Complex bouquet with a lovely depth of aroma, blooming with fragrant pear, jonagold apple, tangelo zest and goji berries. Jasmine and potpourri, subtle nutmeg notes. The palate is generous, full bodied and dry, poached pear flavours, strudels and paw paw, ginger and cinnamon spice, finishing with a fine chalky, mineral dryness.
