Marc Brédif was established in the 1890s but the Domaine can boast a history which dates back to 1550. Ancient troglodyte cellars, which contain local wines over a hundred years of age, were carved into the underlying chalk during the tenth century, among the finest and most extensive Chais in Valley Loire. Marc Brédif make the finest and most ageworthy Vouvray Chenin Blanc, wines which drink magnificently on release, they develop lovely white fruit rancio characters as they mature, honeyed complexities, nuttyness and fig.

Baron Patrick de Ladoucette acquired Domaine Marc Brédif in 1980 and continues the tradition, crafting wines in the same way under the original cellars, from fruit grown to the very same local vineyards. Chenin Blanc is assembled from choice sites, grapes are hand picked off vines growing to clay, chalk and silica soils. Parcels are treated to a pneumatic press, the exclusively free run juices are treated to a day or two of cold soak. Batches are vinified in fermenting vats for two months at a controlled 18C, followed by nine months maturation on sedimentery yeast lees before bottling.

Golden straw hue. Nose of green apples and stonefruit, honeyed citrus, acacia florals, hawthorn and fig. Generously layered palate, valencia orange and ripe apple, pine nuts and fragrant orange blossom notes before a complex, long and lingering finish of honeyed citrus and pear. Will accompany all fine cuisine, a great match to recipes which call on camembert and brie.

McWilliams have long been sourcing fruit from Tumbarumba for some of their most memorable vintages. It has taken many years of devoted viticulture and dedication to the land before arriving at 842 Chardonnay. This prolific award winner is the flagship white from Tumbarumba's highest plantings, crafted from fruit grown at an altitude of 842 metres. The driving inspiration for the team is to create a truly cool climate, elegant style of Chardonnay which offers engaging complexity while remaining true to the expression of Tumbarumba's lofty terroir.

$5999each $719DOZEN EACH DOZEN The most precious blocks of estate grown Chardonnay, planted to elevated east facing vineyards are hand picked and whole bunch pressed. Parcels are settled on full grape solids and inoculated to a combination of wild indigenous and winery yeast. Components are treated to an individual vinification in a high proportion of new French oak barriques. A course of lees stirring batonnage builds luxurious texture, palate richness and length. A total of nine months in barrel without any malolactic preserves and retains the wonderfully crisp, slatey acidity of Tumbarumba Chardonnay. Upon completion, the best barrels are treated to a strict cull to arrive at the final assemblage.

Straw yellow hues. Intense and complex aromas of golden peach, ripe figs and melon honeydew, all supported by toasty cashew nut and biscuit notes. A powerful wine with great fruit intensity matched by creamy rich textures and perfect acidity. Ripe stone fruit flavours, a pure line of grapefruit acidity that drives the wine to fantastic depth and length, an incredibly long, fresh and vibrant finish.

Vineyards selected for the Mesh Project are chosen for their potential to yield fruit that's most in keeping with their Eden Valley provenance, while exhibiting the potential to translate into wines of style. The aim is to construct a Riesling with strong citrus flavour and slight mineral profile, long, rich flavours with a greater emphasis on power, generosity, persistence and texture. From vines up to sixty years of age, the viticultural parameters for each site focus on painstaking regimens, pruning, leaf retention and nutrition to further improve quality of fruit.

$3099each $371DOZEN EACH DOZEN Three vineyards, two different coloured buckets, one wine. High on the slopes of Eden Valley, bright yellow and blue buckets squat between the rows. Two subtly different methods are agreed upon to achieve the desired outcome, as grapes from each vineyard are pedantically divided by selectively hand picking alternate rows into buckets, Jeffrey's into the blue and Robert's in the yellow. The pair part company and the two separate parcels are then crushed at different locations, the finished components are jointly assessed to determine the final, final, final wine. Each component, while being close to identical at the start, undergoes a subtly different conversion, reflecting the personality of the winemakers.

Vibrant appearance. Aromas of zesty lemon and grapefruit, a hint of dried green herb and spice. Lively and generous on the palate, intense and generous with lively lime and citrus flavours, finishing clean and dry on a length of refreshing slatey, almost salty acidity.
