One of the most mouthfilling Chardonnays to eventuate out of Pemberton, Wisdom has been recipient of the white wine equivelent to the Jimmy Watson trophy, an outstanding achievement. Chardonnay is hand picked into 10Kg picking buckets at varying levels of maturity, taken to the winery and chilled as whole bunches. Fruit is whole bunch pressed in small batches to capture and retain the maximum level of flavours. Houghton has been making wines in the same cellar since the 1850s and has built up it's own population of ambient yeasts. Juices are transferred to a selection of exclusively Burgundy coopered French oak barriques for indigenous yeast ferments and nine months ageing on lees.
 
Pale straw hue. Lovely complex aromas of peach and lemon citrus with nuances of lemon curd, walnut and oak spice. The palate is vibrant and full flavoured with abundant fruit characters. Finely textured with creamy complexity, derived from extended lees contact, a fine acid finish, bound in rich, creamy textures for a wine great length and exquisite balance.

Since inaugural release, Howard Park Chardonnay has wowed wine judges and reviewers internationally. It was awarded Best White Trophy at the Tri-National Wine Challenge, Gold Medal at the Concours Mondial de Bruxelles and Blue Gold at the Sydney International, two years in a row. There is a measure of opulence which defines this statuesque wine, a modern barrel fermented style, elegant and sophisticated. A well rounded palate of mineral, citric and pear fruit characters, seasoned by savoury nut notes from the interaction with oak and lees.

From a select group of vineyards in Margaret River and the Great Southern which experience wonderful ripening conditions, yielding harvests of Chardonnay with exceptionally fine acidity. Grapes are hand picked and refrigerated overnight. Fruit is manually sorted to eliminate any damaged berries before a whole bunch press of the purest, most elegant, clean free runs into a selection of seasoned and new, French oak barriques, hogsheads and puncheons for fermentation by indigenous vineyard yeasts. A regimen of lees stirring battonage is followed by a course of malolactic and nine months maturation on gross solids. Components are assembled and treated to a minimal fining filtration.
 
Pale straw in colour with bright green hue at the rim. A defined bouquet of grapefruit and white nectarines with underlying hints of cashew nut and fresh oyster shell. Fermentation to indigenous yeast in French oak barriques provides a creamy texture with flavours of almond meal, honeyed apricots and fresh figs. A crisp acidity combined with some gun flint mineral complexities adds to this contemporary and sophisticated style.

Crafted from a selection of superior parcels Gin Gin and Mendoza clones, picked off the best rows Chardonnay, grown to the south facing slopes of Block 5 Allingham vineyard in the Karridale sub region of Margaret River. Whole bunches of grape are gently pressed to reserve the purest free run juices, vinified to the action of wild indigenous yeasts in a high proportion of new French oak barriques, hogsheads and puncheons. Stone fruits and honeysuckle are deftly integrated with nutmeal, lemon curd, fondant oak, fine mineral texture and extraordinary palate length.

Wines made of Riesling grapes are exceptionally revealing, highly articulate of the environment in which they grow, exposing the influence of the winemaker, so very eloquent about the passage of time as the wine ages and evolves. After a number of years under the Howard Park cellars, the exuberance of youth is beginning to yield, zesty citrus is embellished with nougat, nutmeal, candied lemon and meringue. Whilst defined by a greater depth and complexity of flavour, the palate remains guided by a fine, linear acidity, paradoxically calico softness and wet, stony minerality.

Pale straw colour, pronounced green hues at the rim. Nose shows lime, granite and floral notes of apple blossom and jasmine. The palate has great focus and purity of fruit with a pithy lime and mineral texture balanced by clean acidity. The intense lime fruit characters drive through the finish which is tightly wound yet lingering with floral and wet stone hints.

The great speciality of Alsace, it is only here that the piquant aromaticness and decadent richness of Gewurztraminer achieves such opulence. A long cool growing season is essential, the temperate yet sunny days and clear chilly nights of Riquewihr, ripen Gewurztraminer at a slow steady pace, infusing grapes with acrid florals, turkish delights and maghrebi spice. Pungent yet suave, it can be enjoyed on its own but makes a marvellous accompaniment to full flavoured cuisines, smoked meats and curries, tanjin or well spiced faire.

Fruit is picked by hand, off vines twenty five years of age, planted to clay and limestone soils in a dozen of the finest winegrowing precincts of Riquewihr. Grapes are taken in small tubs to a gravity filled press and filled without any pumping or mechanism to retain integrity of fruit. Juices are decanted for a few hours and fermented in temperature controlled barrels or vats at 18C to 24C. Upon completion, batches are racked and treated to a natural clarification throughout the course of winter. The assemblage is lightly filtered in spring, bottled and sent to the Hugel estate cellars for a term of ageing.
 
Deep lemon hue. A fresh, open bouquet, fruity and aromatic, agreeably perfumed but not excessively, mango and passion fruits, pineapple and floral botes, jasmine and rose petal, acacia blossom, almond and pistachio. A velvety palate, offering a generosity of fruit, citrus and spice characters, lifted by an aromatic freshness at the finish. One of the world's most cherished wines, founder Hans Ulrich Hugel was chairman of the Riquewihr Corporation of Winegrowers during the 1640s. The Hugel estate vineyards have remained in Riquewihr ever since. Unique mesoclimes yield a distinctive style of Pinot Gris, richly flavoured yet charmingly dry, a true gastronomer's delight which calls for cuisine. Hugel make the world's most satisfying Pinot Gris, the wine of choice to accompany fine faire, dover sole almondine or a creamy sauced lobster, pheasant terrines and foie gras.

Batches are lightly filitered in the spring, bottled and sent to the Hugel cellars for maturation.
 
Intense lemon yellow hue. Alluring nose of orange and acacia, honey and apricots, almond and greengage, lightly smoked brioche. Perfectly dry palate offering an abundance of soft fleshy fruit flavours. Juicy, full bodied, a long lingering, textural finish. Drinking magnificently immediately upon release, Hugel matches well to richly sauced white recipes, veal and champignon or crayfish mornay.

Alsace as a winegrowing region was established by the Romans. Riesling grown here is healthy and highly aromatic, with remarkable natural acids that imbue vital crunchy expressions to the fine, classic wines. Grapes are taken in small tubs to the presses and filled by gravity, without any pumping or mechanical intervention. After pressing, the musts are cold settled and fermented in a combination of temperature controlled barrels and vats at 18C to 24C. Upon completion, batches are racked for natural clarification over the course of winter. The following spring, cmponents are lightly filtered and bottled for a spell of ageing under the Hugel estate cellars.
