Dalrymple Cave Block Chardonnay

Hand picked Chardonnay from the steep, free draining soils of Cave Block on Pipers River. Grapes are whole bunch pressed into a selection of seasoned and new French oak barriques, wild indigenous ferments, light lees contact and partial malolactic achieve a deeply textural wine of lemon curd and preserved citrus complexity. Cashews and grain, a finely elegant acid palate define Cave Block, mealyness and vibrant citrus fruit. The finish is clean and long, lingering on languid notes of nectarine skins, roasted kernel and rye.

Dalrymple Sauvignon Blanc

Nestled within a cocoon of mixed vegetation and rolling hills, Dalrymple enjoys a unique and seductive aspect shared by only a few boutique vineyards littering Tasmania's Pipers River region. Discovered by Dr Bertel Sundstrup in 1987 after a long search for the perfect site, this small mature vineyard is now owned by the Hill Smith family and produces some of Australia's most distinctive cool climate, regional wines. Dalrymple is a textural Sauvignon Blanc, refined and exquisitely balanced, aromatic yet pleasingly dry, generous with ripe cumquat flavours.

The unique topography and lush vegetation around Dalrymple's vineyards mean that very few blocks require irrigation. The fruit is ripened on the vine until luscious characters of passionfruit and spice evolve. Sauvignon Blanc is sourced from a number of Tasmanian vineyards, including Coal River valley, the White Hills region of Tamar Valley and Dalrymple's own Block K, all assembled with a view to retaining the different flavour spectrums of each parcel, to achieve a wine of great complexity. Each component is harvested and vinified separately with a variety of yeast strains and lees contact, aimed at contributing complexity and developing layers within the mouthfeel and palate.
 
Pale straw green in colour. Aromas of cut grass, crushed nettles and passionfruit skins mixed with wild notes from indigenous fermentation and extended lees stirring. The palate is as crisp and refreshing as a cold Tasmanian morning, with a fleshy texture and long lasting, mouth watering acidity that gives the wine incredible length. Perfect alongside seafood or shucked oysters.
Dalwhinnie Forest Hut Viognier

Fashioned from harvests of Viognier grown to the cooler, slower ripening Forest Hut property at Moonambel. The climes are three to four degrees cooler than the Dalwhinnie estate vineyard all year round, so vintage arrives some three weeks later. Vines make the most of the extra time on offer, to ripen grapes fully and develop vibrant fruit characters, translating into a solid Viognier wine with stunning grilled nut perfumes and juicy apple orchard complexity.

Dandelion Wonderland Eden Valley Riesling

Eden Valley is Dandelion's Riesling wonderland, a unique fusion of terroir and vine, season and grower. Wonderland of the Eden Valley is made entirely from vines planted in 1912 which still thrive to this day. Vigneron Colin Kroehn is the custodian of these precious old vines and has tended them for sixty six of his eighty eight years. With a bit of bottle age, Wonderland will evolve exciting toast and custard characters. Nothing short of exquisite as aperitif, superb with seafood, a sensation alongside sultry soufflés.

Although the vineyard team see the devil in every weed, they encourage the humble dandelion to grow amongst vines as they supress winter weeds and provide mulch in summer. Their wishing clocks chime in spring to make the dream of ultra fine Riesling come true. Whole bunches are hand picked and destemmed into small batches without crushing grapes to comfortably fill the wine press. Free run juices are vinified in small fermenters at temperatures between 11C and 14C, to bone dry, preserving a high level of natural acidity. Wonderland is bottled directly without fining or filtration to capture the essence of the vineyard, a looking glass if you will.
 
Pristine pale straw hue. Lights on in this Wonderland, jasmine, mandarin leaf and even lychee juice bursting fruit freshness, invigorating, intense smells of lime skin, citrus blossom, green apple, ripe guavas and cinnamon spice. An extraordinary precise and clean fruit spectrum of crunch lime and other citrus fruit flavours, stonefruit, apricot and mandarin, morphing into rich lemon meringue tart flavours, over steely minerality, balanced by racy, slate acidity.

Lusatia Park is one of the most distinguished vineyards in Yarra Valley, choice clones of closely spaced vines were planted to the north facing Block A in 1995, they yield a spectacular harvest of intense, finely structured Chardonnay with each vintage. Fruit is hand sorted and whole bunch pressed, racked to barrel for a wild yeast ferment and completion of malolactic, followed by a course of intermittent lees stirring until the spring. A minerally, highly nuanced style of Chardonnay, creamy textured with a gentle acidity, mouthfilling and briny in the old world way, delicious.

Fruit from the superlative Dixons Creek property continues to be the focus for tremendous single vineyard efforts by De Bortoli. There is a common thread in the detail and texture of wine from these older sites, as influenced by the vagaries of growing season and clime. Some splendid blocks of vine were established decades ago, today they yield the finest harvests in Yarra Valley. Fashioned from the pick of fruit on Section A5 at Dixons Creek, an extraordinary Chardonnay of prominent peach, melon and fig characters, a wine of focus, power and restraint.

Vines are planted north to south, soils are highly mineral siltstones which produce a most interesting wine. Blocks which can enjoy less exposure contribute the greatest detail to the final wine. When optimum flavour in the ripening berries is achieved, grapes are hand picked, whole bunch crushed and pressed to extract some good phenolics for texture and minerality. Juices are cold settled for clarity, racked to a selection of seasoned French oak casks and treated to a wild indigenous yeast fermentation. Lees are stirred regularly from the late autumn until early spring. Components are matured for up to a year in a selection of prior use 225 Litres French oak barriques.
 
Light straw with green hues. White flowers and hazelnut, complex mineral notes, citrus and fig, flintyness and peach. Gently textured, slightly savoury palate of refined phenolics, hazel nuttynesss and crisp nervy acid, good drive and length. Long flavoured, textural, a bliss with John Dory or gnocchi and creamy sage sauce.

Delamere Chardonnay

Pinot Noir is selectively hand picked off some marvelous old vines, now into their fourth decade. Just over half of the fruit is assembled from the closely cossetted vines of D Block, a precious parcel that's specifically husbanded for making Rosé. Grapes are destemmed into open top fermenters, a third of the fruit is included as whole bunches. A wild indigenous yeast vinification over the course of a fortnight brings the ferments to complete dryness, for an adults only style. A small amount of blush hued saignée is added to round out the bouquet and infuse the rakish pink hue.
