Water Wheel Cabernet Sauvignon

The parched, sun exposed vines at Water Wheel are only a slight distance from the shade of giant river gums, which grow along the banks of Loddon River. The proprietors of Water Wheel have farmed locally for many years and place a strong emphasis on sustainable horticulture and vineyard management. Vines are planted to heavy clay soils interspersed by pieces of limestone. Hedge trellising exposes grapes to the sun for maximum ripeness. All vines are irrigated from the nearby Loddon river with ground level mini sprays, all cropped at three tonne per acre. Cabernet Sauvignon is vinified in open fermenters at 20C to 22C, the cap pumped over, plunged and pressed at dryness. Water Wheel has been aged in a combination of new and seasoned, mostly American oak hogsheads, crafted by prestigious European cooperages.

Deep ruby colour. Cassis and regional menthol aromas on the bouquet. Rich, forward drinking fruit characters, complex with savoury ripe berry fruit and cedar oak, lifted by hints of cloves and cinnamon, cherries and mulberry. Full bodied and complex with silky velvet tannins before a long and persistent, satisfying finish.

Dividends have arrived in the form of conspicuous award winning wines, meritorious accolades and superlative Chardonnay.

Vines are hedged trellised, exposing the grapes to the sun, achieving maximum ripeness, white wine grapes are planted to lighter, better drained soils. All vines are irrigated from the nearby Loddon river with ground level mini sprays. Chardonnay is treated to an extravagant barrel fermentation in French and American oak hogsheads. Upon completion, batches are held for a term of lees stirring on a weekly basis, achieving complexity, good mouthfeel and luxurious textures. The finished wine is protein and cold stabilized prior to filtration and bottling, a state of the art bentonite fining for protein stability.

Lemon gold hues. On the nose there are obvious stone fruit characters with some subtle cashew and vanilla aromas also showing. The palate is complex with peach and pear flavours apparent. There is a smooth and creamy mid palate balanced by subtle, integrated oak and lees complexity, followed by a clean and persistent finish. Perfect alongside seafood risotto, shucked oysters or tuna pappardelle.
Water Wheel Memsie Shiraz
Bendigo
Available by the dozen
John Catto left his native Scotland for the new colony of Australia to seek his fortune in 1833. He settled near what would become Bendigo, calling his new home Memsie, after the village whence he came. Catto chose his ground carefully and established vines upon a site of rich clay soils, fortuitously scattered with the perfect measure of limestone. The splendid terroirs which now yield harvests of articulate Bendigo Shiraz, produce a delicious, full flavoured red wine that's perfect for serving alongside your favourite mix of grilled meat and veg.

Soils beneath the Memsie Water Whell site are deep ripped before planting. Vines are hedged trellised, exposing grapes to the sun for maximum ripeness. All plantings are irrigated by the nearby Loddon river with ground level mini sprays. Red wine grapes are planted on heavy clay soil interspersed by pieces of limestone. Shiraz is harvested and crushed into fermenters, the caps are plunged and pumped over thrice daily for optimal extraction. After passing through a membrane press and completion of malolactic, a percentage of the wine is treated to micro oxygenation, the balance is transferred to a selection of American oak hogsheads for a term of maturation and the final assemblage.

A deep and vivid, violet red colour. Berry, blackcurrant and liquorice characters on the bouquet. The palate is full and rich with spice, berry and black pepper flavours. Memsie is well balanced, with a persistent finish complimented by fine tannins. Ready for immediate enjoyment, the ideal match to pasta, barbeques and game.

Bendigo makes a very special style of Shiraz that's unique to the region's distinctive terroir and clime. Grapes are harvested off vines planted to heavy clay soils littered by pieces of limestone. The vines are hedge trellised, exposing grapes to the sun as they achieve maximum ripeness. All vines are irrigated from the nearby Loddon River with ground level mini sprays, cropping has been reduced to three tonne per acre, resulting in a better quality wine. Fruit is vinified at 18C to 22C in open fermenters while being treated to a course of pumpovers and plunging. Components are pressed at dryness and treated to malolactic before ageing in a combination of new and prior use American oak hogsheads for up to a year.

A deep, vivid, violet red colour. Berry, blackcurrant and liquorice characters on the bouquet. The palate is full and rich with spice, berry and black pepper flavours. Memsie is well balanced, with a persistent finish complimented by fine tannins. Ready for immediate enjoyment, the ideal match to pasta, barbeques and grills or game.
