A new wave and the next big thing? Been around forever actually. Great Pinot Gris can only come from fine vineyards. There are two distinctive styles in Australia, zippy with lemon freshness and crisp acidity or the richer, textural, full bodied type. Both share an attractive mineral element that adds complexity. For all you anything but chardonnay drinkers, here's a generously flavoured white, derived from red coloured grapes, crisp and refined, born and bred for food, goes great with charcouterie, fresh seafoods or highly spiced cuisine.

At its best, Pinot Gris it is like a fingerprint, inextricably linking the personality and mood of the land from which it has sprung. Innocent Bystander comes from the upper Yarra, where cool summer temperatures lead to fresh crunchy acidity and great aromatics. Due to the higher altitude of sites, fruit is harvested later in the season. Grapes are completely hand picked and whole bunch pressed, free runs are separated and batches are treated principally to wild yeast with some interesting Alsace isolates for complexity. Half are sent to fermenters and vinified at lower than 17ËšC, the balance is filled to seasoned French oak barrels and vinified at 20ËšC to 24ËšC, followed by assemblage and early bottling.
 
Medium straw hue. Honeysuckle, preserved ginger and cardamon nose, pithy lemons and grapefruit skin, freshly cut white pears and a hint of white joobs. Like fresh rain on beach rocks. Crisp like biting into a fresh green apple. Tight with a melting acidity that lingers like cottage lemonade. A really lively palate with a solid flick of crisp citrus. It will become your best table mate, sublime with sashimi or goat's curd bruchetta.

For those who like their Pinot Noir to be long, savoury and lean, with oodles of fruit to wax lyrical about. A collation of harvests from the Sexton and Tarraford vineyards, with contributions from a fraternity of superior local growers. The uncrushed grapes are wild yeast fermented and treated to a light carbonic maceration in the manner of a Beaujolais, achieving a vigorously fruit driven Pinot Noir with crisp acids and stirring aromas. Enjoy alongside both versions of rare breast or crisp skinned duck, the perfect match to tapas and Al fresco faire.

Innocent Bystander seek Pinot Noir grapes with perfect ripeness and sugar balance. Vineyards are selected for their high diurnal temperature range, to achieve wines with high natural acidity and low pH. All grapes are hand picked, a large portion of the fruit is included as whole bunches, uncrushed and unstemmed into open top fermenters. A term of cold soak at lower temperatures is followed by inoculation, mainly through the action of wild, indigenous yeasts. Variations of pigeage and remontage are applied. The major part is treated to malolactic and several months in French oak barriques to enhance complexity while infusing mouthfeel and texture.
 
Medium purple hues. Nose of dark cocoa and poached cherry, hints of truffle oil and tobacco leaves, wet earth and berries of the forest. Ripe cherry and mixed fruit compotes, bramble with a hint of tar and seasoned grilled meats. A round fresh palate showing rhubarb and radicchio over the twang of chalky tannins before a slippery, rich and slightly tart finish.

Very much in the style of a Rhône Syrah, aromatic, elegantly structured and suave, offering violet and white pepper notes, blueberries and soy over fine cherry tannins. Just a dash of Viognier imparts ethereal, teasing perfumes of honeysuckle and turkish delight. Fruit is hand picked from choice vineyards in the Pyrenees and Yarra Valley, treated to a course of old world style, whole berry ferments. Syrah is a great food wine, match with capsicum recipes and wild rice, the innocent bystander loves to feed!

The team at Innocent Bystander work with like minded growers to assemble the finest fruit. Components from great Victorian vineyards are determined each year to create a consistent style from one vintage to the next. Grapes are destemmed into small open fermenters, a deliberately small portion is incorporated as whole bunches. Treated to a cold maceration before a mainly wild vinification, ferments are plunged and drained regularly, while some experience a post ferment maceration to soften tannins. The wine is pressed, settled and gravity drained to a selection of exclusively French oak barriques and puncheons for malolactic and extended maturation.
 
Bright garnet red. A nose of orange zest and five spice, juniper and campari, cherry ripe, red summer berries, dark chocolates and cocoa. Firm bright tannins in support of brooding textures, wild blackberries and raspberry, a long savoury finish. Yarra fruit delivers spice and backbone while the Pyrenees contributes spiced plum and chocolate characters.
Irrewarra Chardonnay

Crafted from the meagre harvest of a precious two acres Chardonnay, planted to the top of a felicitious slope that looks away towards the idyllic pastorals of Victoria's fertile western agriculture. Irrewarra wines are encouraged in the making, to be articulate of the season in which they are grown, to express a pride of provenance and sense of place. It's all about the treatise of terroir at Irrewarra, composing Chardonnay of real structure, big boned, fruity and fleshed, a luxurious minerality in aqueous suspension of penetrating grapefruit characters, cumquat, seashells and brine.

Irrewarra Pinot Noir

Irrewarra vineyard was established to the eastern environs of Lake Colac by the Calvert family in 2001, predominantly six acres of a mixture Pinot Noir clones on own rootstock. A magical place defined by an eloquent expression of terroir, its long, fruitful growing season extends to mid April, as the closely packed bunches of Pinot Noir ripen fully into juicy treasure chests of flavour, adroitly lined by the finest, satin sheen tannins. Its bucolic splendour of animate pasteurs, wild cherries and sun dried spice, resonate long and lovely on an elegantly structured, texturally mineral palate.

John Gehrig Chenin Blanc

A consistent performer on the wine show circuit as it hails from a microclimate that is ideally suited to growing Chenin Blanc grapes with vibrancy and distinctive varietal characters. John Gehrig is a fourth generation winemaker, a descendant of Victoria's oldest winemaking family which settled in the late 1850s at Barnawartha at Victoria's northeast. From Chenin Blanc grown on the Gehrig family estate in Oxley along the King River which lies between Milawa and Glenrowan, a pure varietal wine with a full palate, exquisite balance and clean crisp finish.

John Gehrig has a passion for winemaking that stretches over sixty years, he learned the craft from his father and established his own vineyard in 1976. The diversity of a pretty countryside with a range of undulating aspects and viticultural microclimates was the determining factor in settling on the King Valley. Gehrig's vineyard is lovingly maintained and ergonomically watered by a trickle irrigation system. A grafting programme has ensured that half of the vines are on their own roots, the other half grafted onto American root stock to offset the danger of phylloxera. The practical size of the vineyard allows for hand pruning and picking which is essential to the production of the highest quality wine.
 
Light straw colour. Classic Chenin Blanc fruit characters are up front, with fresh apples, pears and orchard fruit on the nose. A mid weight palate with effusive varietal fruits, canteloupe, grasses and nut. Always a lively, generous wine with fresh full fruit flavours and a crisp, lingering finish. The perfect complement to seafood and spicy Asian dishes, John Gehrig can be enjoyed with a wide range of foods or as an aperitif to stimulate the appetite.
Jones Road Chardonnay

Tucked away off the beaten track, an ancient barn at Jones Road offers fantastic vistas of the rolling Moorooduc countryside. But the converted piggery is not just about sightseeing. The neighbouring Grange and Nepean Blocks deliver small but splendid harvests of intense Chardonnay grapes with superb flavour development and bright natural acidity. The team aim to capture all the classic Mornington Peninsula grapefruit, peach and nectarine fruit characters, retaining all the freshness whilst adding complexity and texture throughout the vinification process.

Vines are cane pruned and shoot thinning is performed as early as possible in September to ensure a low number of shoots per vine to create an open canopy. This provides good air circulation and even ripening. Summer pruning on the northern side promotes a relatively early harvest. Hand picked fruit is whole bunch pressed and cold settled before being run to barrel or fermenters for vinification at low temperatures to preserve vital fruit characters. The French oak component is lees stirred over the course of three months to promote oak integration and textural complexity. Parcels are assembled into a style which can best achieve great elegance, character and depth. Alcohol 12.5%
 
A brilliant medium straw colour. Bouquet of citrus, stonefruit and developed lees richness. Oyster shell complexity with hints of caramel, barrel ferments and vanilla. A wonderful mineral texture on the taut, fruit filled palate, offering great length while exhibiting drying grapefruit characters, peaches and nectarine, smooth complex texture and effortless balance.

Picked off a tally of vineyard blocks on the Jones Road property further down Mornington Peninsula, the fruit is treated to extended hang time for a fuller, luscious Pinot Gris. Vinified through the action of wild indigenous yeasts, without any crushing or destemming, a portion in seasoned French oak barriques. Artfully crafted and tastefully assembled, a savoury sauvage style, the palate reveals a delicious core of flower blossom and apple nut flavours, unravelling more spice complexity as it finishes, engaging, amenable and urbane.
