Financial powerhouses Robert Kirby and Louis Bialkower collaborate with winemaking superstars Larry McKenna and Tod Dexter, to work on a selection of Heathcote's most spectacular parcels of Shiraz. The Messrs Kirby and Bialkower are fascinated by fine wine, especially the soft and medium bodied styles of French. What distinguishes Heathcote Estate Shiraz stylistically, are the techniques of vinification borrowed from the old world methods of Burgundy, open top ferments, whole bunch inclusion and hand plunging.

A dry and mild climate combines with ancient red soils to produce an effort of telling regionality. Five separate blocks of Shiraz are handled as fourteen individual parcels. Following a course of traditional open top fermentations, the finished wine is treated to malolactic and seventeen months ageing in a combination of new and seasoned French oak barriques. The most exceptional barrels are earmarked and only the best are included into the final wine.

Enter the Cravens Place, an elegant effort, stylish and quintessentially Heathcote. Sourced principally from sites at the warmer, northern periphery of Heathcote township, Craven's Place is fashioned to be a supple, bright and approachable wine. Ageing in choice oak barriques contributes to the complexity and allows the quality of Shiraz to realize its full potential.

Heathcote Winery is meeting the demand for wines that are truly reflective of the region, but with the individual stamp of innovation and excellence. Low night time temperatures contribute to vine balance and excellent berry development. Picking is all done by hand, fruit is delivered to the winery where juices are extracted from the grapes by pumpover in closed tanks and hand plunging in open bins to extract optimum colour and tannin. The finished wine is matured sixteen months in a selection of French and American oak barriques.
 
Brilliant ruby red with purple hues. Lifted blueberry and forest fruits dominate the nose, over a backdrop of spicy vanillin and plums. Bright fruits fill the palate, framed by chewy, fine grained American and French oak and supported by crisp natural acidity. A lively, medium bodied Shiraz, fleshy and dense in flavour, Craven's Place finishes long with persistent primary fruit characters over supple tannins.

One of the earliest commercial winemaking operations ever established in Victoria. Heathcote Winery can also boast some of the oldest Australian plantings of Viognier. The winery building dates back to 1854 when it serviced miners seeking their fortune in the heady days of the Victorian gold rush. Shiraz with a splash of Viognier is predominantly sourced from estate vineyards on the periphery of Heathcote township, harvested just when the chunky tannins, cherry acids, natural grape sugars and bold red Heathcote earth characters are at their peak.

Exclusively Heathcote Shiraz is treated to a Rhone styled co-fermentation with a small amount of Viognier, lifting the colour and infusing the aromatics with wonderful apricot floral scents, while adding body and increasing palate structure. Parcels are processed and vinified through individual batches to a regimen of old world winemaking techniques, including hand plunging in open vessels and pump overs in closed fermentation vats. Upon completion, Mail Coach is pressed and matured up to seventeen months in a selection of new and seasoned French oak barriques, crafted by a range of cooperages to facilitate complexity and encourage components to achieve their full potential.
 
Deep scarlet red with purple hues. Lifted, regional nose of blackcurrants and dark berry fruit, menthol notes highlight toasted oak characters and carry aromatics onto the palate. Brooding in style, medium to full bodied wine showing dense regional fruit and impeccable balance. High end French oak contributes to a tasty, supple tannin profile, concentrated primary fruit suggests added complexity as the wine continues to evolve.

Single vineyard wine from the Newlans Lane block at the very heart of Heathcote, the original block of Shiraz planted to the earliest survey of red Cambrian soils, established for the historical Heathcote wineworks. The old, dry grown vines, replenished by propitious underground aquifers, are treated to just the right amount of moisture to yield harvests of impeccable quality fruit. There are few places on earth, so predisposed to yielding vintages of world class Shiraz. Slaughterhouse Paddock is the second oldest block of vine in all Heathcote, originally a cattle yard adjacent to the township meatworks, its soils enriched for viticulture by the passage of livestock. Hand picked whole bunches are open fermented in the traditional old world style, building sound structure and infusing splendid weight of fruit. A fleshy Terra rosa palate of intensity and concentration, preceded by peppermint and eucalypt perfumes, adorned by the dulcet vanilla sweetness of new American oak.

Innocent Bystander Chardonnay

A compelling experience in Chardonnay, crafted by a team of winemakers and viticulturalists who eschew the bland direction and market dominance, increasingly exerted by the oligopoly of corporate players. In a nutshell, they see themselves as innocent bystanders. A collation of Yarra valley harvests from the Primavera, Shaws Road and Tarraford sites, assembled around a core of splendid fruit from the distinguished Sexton estate vineyard on the Warramate Ranges at Coldstream.

Yarra Valley has been producing distinctive and elegant Charadonnay wines since early settlement. On the higher, leaner soils of Sexton, vine roots explore deep and grapes ripen steadily, naturally checking their vigour. A close husbanding and intensive maintenance is essential to yield the most intensely flavoured grapes. Fruit is all picked and pressed as whole bunches, chilled and transferred to seasoned and new French oak barriques and puncheons. Indigenous yeasts and small amounts of cultured yeasts initiate ferments, barrels are treated to a regimen of lees stirring battonage over the course of nine months maturation.
 
Bright, light straw colour. Nose displaying lemon zest and cashew, white peach blossoms and river stones. Granny smith and grapefruit flavours, kernel and cashews, bright crunchy acidity, the savouryness of chicken stock. Oily lemon pith, lime zests and biscuit, before a lingering finish of viscous minerality. To accompany Sunday chicken, Moreton Bay bugs or freshly rolled pasta with basil.
Innocent Bystander Pink Moscato

A lively cépage of Black and Gordo Muscat grown to the Boulton and Duffy, Burge, Wall and Pratt Vineyards at Swan Hill. Early harvest is essential to arrive at a benign level of alcohol, a palate full of flavour, crispy citrus tang and natural fruit sweetness. A scrumptuous wine with an exotic mix of watermelon, musk and rose petal flavours, red apple, hubba bubba and pink ice cream. It's low in alcohol but a single bottle is unlikely to be enough because with a drink this good, there's no excuse for not sharing.

Black Muscat grapes are picked later than parcels of Gordo Muscat to allow for colour development. All fruit is harvested at night to modest sugar baumes, as flavour ripeness is achieved at lower sugar levels. Grapes are chilled and crushed, treated to six hours skin contact for optimal extraction of pink hues from the Black Muscat. Fruit is then pressed into fermenters and the juices inoculated for a long and cold vinification until full natural carbonation is reached and the optimum balance between sugar and alcohol is achieved. The finished wine is cold filtered and chill bottled at 0C to retain freshness and effervescence, before sealing under crown cap to capture the effervescence. Alcohol 5.5%
 
Lipstick colour with salmon hue, a slight frizzante and delicate bead. Fruit tingle and sherbet, fairy floss and fresh fuzzy peach nose. Sticky, a real turkish delight, raspberry jelly, peach sherbet and rosewater palate, clean and crisp, makes the most wonderful apertif. Match with fresh pancakes and poached fruit or cheeses and muscadel.

Great things come in small packages, at only 375ml, tiny little Pink Moscato has become a great big phenomenon. Why? It's the very definition of fun, one of the few indulgences in life which can be relied upon to set the perfect mood, whatever the ocassion and whoever the company. A true Moscato fashioned from the pick of the most succulent Muscat Gordo and Muscat of Hamburg grapes, light in alcohol, fantastically fizzed, brimming with berries and summer fruits, rose petal perfumes and luscious turkish delights.

Giant Steps seek to make wine that is less overt and obvious than most. The aim is to acquire the best fruit possible, whatever the cost, because without great fruit there can be no great wine. All work is done by hand. Grapes are only picked when optimum flavour ripeness is matched by good natural acidity. Fruit is harvested at night, chilled and crushed, followed by eight hours skin contact to arrive at the gorgeous blushing pink colour. Parcels are pressed to tank and filtered bright before inoculation. Juices are fermented long and cold until full natural carbonation is reached and the balance between sugar and alcohol is achieved. The final wine is cold filtered at -1C to retain freshness and effervescence. Alcohol 5.5%
 
Pretty in pink with a slight petulance. Turkish delight, fruit tingle, sherbet, fairy floss, fresh fuzzy peach. Raspberry jelly, peach sherbet, rosewater. Clean and crisp. To accompany fresh pancakes and poached fruit, a cheese plate with muscadel raisins, or just on it's own as an elegant apertif.

Fashioned from the ripest Sunraysia harvests of Black and Gordo Muscat grapes, parcels of the most intensely flavoured grapes, picked only as they achieve comely, watermelon pink hues. Treated to a course of natural spritzy ferment for maximum titillation, Innocent Bystander blooms with a brilliant bouquet of fairy floss and musk, blackcurrant and juicy turkish delights. Its moreish pink palate of muscat berries and tropical punch, makes her the libation of choice alongside smart nibbles, relaxed brunches, fruity sorbets and creamy, cheesy desserts.
