Shiraz is a wine that Xanadu really does best. Their magnificent vineyards are situated within the most propitious mesoclimes, the growing conditions here are nothing short of an idyll. Xanadu's closely coddled vines love to yield harvests of the most succulent Shiraz, redolent of bright milled spice bouquets, supported by the firm palate structure that's essential of mighty Margaret River Shiraz. The finished wine is treated to the extravagance of fourteen months age over gross less in a selection of seasoned and new, French barriques and larger format oak vessels.

The essential Margaret River Cabernet in epic Medoc styling, solid and statuesque, reflecting the intensity of fruit flavours that flourish within the rich, free draining gravel soils of the vineyard. Xanadu now has a long history of producing wines of distinction, regional classics and some of the most memorable vintages in Australian Cabernet Sauvignon. By the early 1980s it had already established a reputation as one of the finest wineries on Margaret River. A generous, robust Cabernet with firm, ripe tannin backbone and warm lingering finish.

Xanadu's auspicious mesoclime enjoys an abundant supply of water that nourishes the grapes, the fortunate vines are sheltered by forests of magnificent marri trees. Grapes are crushed and destemmed before a predominantly small batch vinification in static fermenters for seven to eight days at 24C to 26C. The cap is managed to a combination of aerative pumpovers and regular plunging by hand. Upon completion, a third of components are treated to a period of extended maceration on skins before a gentle pressing and course of malolactic. Xanadu is matured fourteen months in a high proportion of new French oak, followed by assemblage and return to oak for two months before bottling.
 
Deep red with garnet hues. Ripe fruits of the forest, boysenberries and cassis integrated with dark chocolate, cinnamon and spice. Full bodied yet refined, the plush palate offers ripe, jubey fruits such as blackcurrants, plums and mulberries framed by subtle cedar/ spicy oak characters. A Cabernet that's dense and well structured, layered with dark fleshy fruit characteristics, ripe tannins and a lingering finish.

It is here that Chardonnay takes on an added dimension that's unique to Margaret River. More concentrated and more complex, more viscous and more tangy, without being weighty or cloying. The voluptuous fruit lends itself to wild yeast ferments and luxurious lees regimens, Xanadu's award winning team are masterful at both.

What good is a vintage of the finest fruit if it's harvested on the wrong day? The enduring philosophy at Xanadu is that timing is everything, picking at just the right time and guiding the fruit through to the bottle without too much intervention. Sandy loam soils over coarser ancient gravels encourage vines to yield the most intense fruit. Natural ferments keep the focus on preserving the integrity of Margaret River excellence with precision and depth. The choicest parcels of Gin Gin clone Chardonnay are whole bunch pressed into a selection of seasoned and new French oak barrels for a wild, indigenous yeast vinification, followed by nine months sedimentery lees battonage for textural richness and complexity. Pale straw with green hues. Bright citrus and white fleshed stone fruit notes over underlying hints of smoky oak, roasted hazelnuts and white flowers. A full bodied palate offering white nectarines, figs and zesty lemony flavours. Lovely complexity with a nutty, mealy texture derived from lees stirring, the taught mineral acidity combines with the bright fruit to focus the wine perfectly to a dry, persistent finish.

The growing conditions around Xanadu's vineyards, in the form of beautifully still Indian summers, cool nights and clear warm days, are second to none for the production of world class Cabernet Sauvignon. The ideal weather patterns at vintage afford vignerons the luxury to harvest each block as grapes achieve full physiological ripeness. Bunches are crushed and destemmed, inoculated to a variety of select yeasts and vinified in a combination of static and sweeper arm fermenters at 26C over the course of a week. Components complete malolactic before being treated to fourteen months maturation in a selection of new and seasoned, predominantly French oak barriques.
 
Deep red with ruby hues. Vibrant aromas of ripe blackcurrants, berry fruits and dark plum entwined with hints of spicy, toasty oak. The generous palate is packed full of juicy fruits of the forest, cassis and chocolate characters. Full bodied, the attractive fleshy fruits fit into a structure supported by supple tannins, a solid acid backbone and a persistent berry fruit finish. The classic Margaret River Cabernet style, drinking very well in its youth.

On the rolling slopes of Xanadu, vines flourish in the rich, free draining gravel soils, fed by an abundant supply of pristine water and sheltered by forests of magnificent marri trees. The site was chosen for its propensity to experience near perfect ripening conditions, beautiful indian summers with cool nights and clear warm days. The vines deliver an exceptional quality of Chardonnay, which Xanadu have fashioned into a generous, forward drinking wine. Natural ferments are encouraged, lees battonage is essential, infusing added complexity and charm.

Parcels of Gin Gin Chardonnay clone are harvested throughout the cool of night, pressed, crushed and filled into a selection of predominantly older French oak barrels for inoculation by a mix of cultured and wild indigenous yeasts. The balance of the harvest is crushed and destemmed, chilled before pressing and transferred to fermenters. The settled juices are coolly vinified at 15C through the action of aromatic strains of yeast to retain bright varietal characteristics. All components are lees stirred throughout several months of barrel maturation, to be assembled into the finished wine in November, judicious use of oak plays a supporting role.
 
Pale straw hues. Elegant yet powerful, grapefruits and nashi pear, gala apples with underlying hints of nougat and cashew. Medium bodied palate, white fleshed stone fruits and zesty citrus flavours. The taut mineral backbone is complimented by a lovely creamy marshmallow texture derived from lees stirring in oak. Fine and fresh, bright fruit and crisp acidity, a modern style of Chardonnay.

Xanadu were one of the first to choose their ground in Margaret River. Exceptional growing seasons and good ripening conditions are what makes Xanadu's vineyards so special, the vines thrive under the favourable climes. Each parcel of Semillon and Sauvignon Blanc is harvested to a schedule determined by the optimum level of physiological ripeness. Fruit is crushed, destemmed and chilled before pressing. The settled, clean juices are vinified in temperature controlled fermenters through the action of aromatic yeast strains, to retain fresh varietal characteristics. The final components are selected on the basis of synergy, to be assembled and treated to a gentle fining and stabilisation.
 
Pale straw with slight green hue. A vibrant bouquet displays freshly squeezed citrus characters with passionfruit and dried herbs in the background. Medium bodied, the lively palate offers zesty lemon/ lime flavours combined whith guava and hints of thyme and spice. An easy drinking Margaret River style with wonderful purity, fruit driven, honest and lip smacking with crisp acidity and a clean refreshing finish.

Owned by the same group who bring us Yering Station and Mount Langi, Xanadu is situated within an exclusive coterie of eminent Margaret River estates. Exmoor may be a second tier label but nothing is done to a lesser measure at Xanadu. All vines are closely managed to yield fruit at full physiological maturity and complete tannin ripeness, for wines which are brimming with profound Margaret River regionality. A juicy Shiraz wine with the redolence of a fragrant Viognier perfume lift, judiciously aged in a high portion of French oak.

Xanadu employ sustainable methods in everything they do to ensure harmony with the earth. Many options exist for a natural vineyard management, at Xanadu the guiding principle is to leave the environment in a better state. Shiraz is harvested, a significant portion of the grapes are destemmed and crushed through open rollers to introduce whole berries into a combination of static and rotary fermenters for five to seven days at 26C. A component is co fermented with a portion of Viognier to add spice and floral lift. Batches complete their malolactic in a combination of barrel and tank followed by fourteen months maturation in a selection of seasoned and new predominantly French oak barriques.
 
Deep red with purple hues. Vibrant and fresh, ripe berry fruits and spice combine with lifted floral notes, dark, blackberry conserve over violets and spice framed by hints of fine French oak. Full bodied, offering juicy ripe fruits of the forest, dark cherries, redskins and spice. The generous fruit and fine tannins achieve a well structured, appealing wine with a lingering fruit to the finish. A lovely, vibrant and aromatic expression of Margaret River Shiraz.
