Hay Shed Hill Cabernet Merlot

Dominated by Cabernet Sauvignon with a fifth of Merlot off the Hay Shed Hill estate vineyard on Harmans Mill Road at Wilyabrup. Grapes are all de stemmed into open topped fermenters for a traditional course of hand pumpovers on skins, followed by a year's French oak maturation. Blooming with intense berry fruits, cassis and chocolate mint notes over bramble and cedar oak. In well defined Margaret River Cab Merlot styling, an indulgent array of ripe, juicy blue fruit flavours over a fine length of melt in the mouth, carob tannins.

Hay Shed Hill Cabernet Sauvignon

Hay Shed Hill is a mature old vineyard at the heart of Willyabrup Valley, the premier sub region where Margaret River's first vines were planted and the great local traditions of Cabernet Sauvignon established. The mission is to produce world class wines which reflect the place of origin, wines of depth and flavour that are true to the season and mesoclime. The vines were originally planted right, the right varieties on the right slopes to the right soils. Cabernet grown to the Hay Shed Hill property rank alongside the most splendid editions of Margaret River.

The Hay Shed Hill property produces low yields of outstanding quality fruit from fully mature vines which were sown in 1973 during the pioneer days of the local wine industry. Cabernet Sauvignon is harvested only when the fruit achieves optimum ripeness. Grapes are de-stemmed into open topped vessels for fermentation on skins, whilst treated to traditional pump overs and cap management. Upon completion, the wine remains on skins for a further ten days maximizing development of ripe, mature tannins. Maturation in French oak barriques for year adds further complexity and structure, enhancing the wine and softening tannins without dominating the fruit.
 
Dense dark red to black colour. An intense and rich bouquet led by the ripest cassis and berry fruits, rich and opulent but brooding in its youth, over distinctive vineyard characters of dark chocolate and mint. The oak shows background cedar which will recede further as the fruits emerge. An intense fleshy, full mid palate, massive fruit weight, dark cherry and blackcurrant flavours.

Modern wines from old vines. Hay Shed Hill Vineyard was planted to vine in 1973, right at the heart of the acclaimed Willyabrup triangle at Margaret River, during the early pioneer days of local viticulture. Hay Shed Hill can now boast of fully mature vines, yielding small amounts of noble varietal grapes which have established the reputation of Margaret River as a world class winegrowing region. Vinified to world's best practice, the Chardonnay of Hay Shed is characterful and charming, resonating with the essence of a truly wonderful site.

A product of exclusively free run juices from the old vine Gin Gin clone Chardonnay , the very highest in quality with the most intense fruit expression and the lowest in undesirable phenolic skin characters. Clear juices are fermented in French oak barriques, a third of which are new, the balance being one, two and three years old. Following vinification, the wine is matured in the same barriques for a further ten months. No lees stirring or malolactic fermentation is employed, the intent being to preserve and to retain freshness and purity of fruit. The objective is to construct a wine which expresses the character of a superb vineyard within an elegant and restrained style which drinks vibrantly and fresh.
 
Fresh green tinges within a pale straw colour. Aromas of cut pear and honey dew melon with some zesty citric notes. A very clean nose exhibiting clarity and definition of primary fruit without any overt wood or buttery characters. Fresh and lively with crisp acidity complementing vibrant flavours of stonefruit, melons and citrus. A restrained style offering an extended palate and identifiable Margaret River regionality, finishing clean and bright.

Hay Shed Hill Shiraz Tempranillo

Mostly Shiraz with a cogent proportion of the torrid Tempranillo, bunches are de stemmed and separately vinified in open vessels, treated to extensive pumpovers and cap management for optimal extractions, pressed off skins and sent to a mix of seasoned and new French oak barriques for fifteen months before assembling into the finished wine. Violets and milled spice notes of Shiraz, deep plum flavours and a peppery edge to the fleshy fruit sweet palate, Tempranillo brings savouryness and an animate tannin structure.

Hay Shed Hill White Label Malbec

Malbec loves the prevailing maritime climes of the west coast, yielding an amazing quality of wine with vibrant fruit character and the most affable tannins. Grapes are picked by hand and open fermented with a component of whole bunch inclusions, hand plunged for up to a fortnight in one and two tonne open fermenters, gently pressed for completion of ferments into French oak barriques for twelve to fifteen months maturation. A wine of suppleness and finesse, its brooding perfumes presage a palate that fills the mouth with serious weight of opaque fruit.

Houghton own and operate significant vineyard holdings in most of WA's premier appellations, the winemakers retain access to an exhaustive catalog from which to source the pick of Cabernet Sauvignon. Close management of vines and a holistic approach to viticulture make a major contribution to the ultimate quality of wine. Parcels are assembled from choice Frankland River sites, treated to vinification through the action of wild yeasts in traditional open top fermenters and gently pressed off skins at dryness into a selection of French oak barrels, for completion of malolactic and an extravagant sixteen months maturation.
 
Dark red, scarlet hues. Lifted aromatics of black olive and cassis, dark currants and blueberry are supported by the cedar and spice of French oak. Fruit forward palate of raspberry and cassis, loganberry and black bramble fruit flavours, supported by fine tannins and firm acidity, a wine of superb texture and splendid length.

Frankland River yields remarkable vintages of Shiraz, Houghton were at the very genesis of the region for viticulture, they retain the finest vineyards. A collation of the best parcels from choice sites have been assembled by the Crofters team, treated to vinification in traditional open top vessels, gently pressed to a selection of French oak for completion of ferments and a year of age. Its profound structure and piquantly spiced black currant fruit richness, makes a perfect match with game recipes, well seasoned lamb or freshly ground curry recipes.

Brilliant deep red colour, vibrant purple hues. Intense aromatics of cherries and blueberry, underlying pepper and anise, perfumed by French vanilla oak. The most exquisite parcels of Frankland River Cabernet Sauvignon are vinified in traditional open top fermenters and filled to a high proportion of new Bordeaux coopered French oak barriques for sixteen months. The inclusion of a large component Malbec makes CW Ferguson a sensationally well rounded Cabernet style, wrapped in a muslin of seamless, velvet tannins.

Dr Gladstones also played a role in the development of the Frankland River region, Pemberton and Manjimup. A prolific gold medal winner which honours his contribution to West Australian viticulture, this glorious wine offers a profound structure and generous palate, epitomising the peerlesss quality of Margaret River Cabernet Sauvignon at its finest.

Dr Gladstones was a long time friend of the late Jack Mann, pioneer of the West Australian wine industry and mentor of Houghton wines. Cabernet Sauvignon is sourced from the Batley vineyard in the Wilyabrup sub region of Margaret River. The red granite gravel loam soils, maritime climate and twenty year old vines contribute to producing wines with richness, structure and intensity. Fruit is hand picked, crushed and vinified in small 2T and 5T open fermenters, hand plunged then pressed to tank, settled and racked directly to a selection of new and one year old Bordeaux coopered French oak barriques. Gladstones is minimally handled throughout its life in oak, until assemblage, sixteen months after vintage.
 
Intense deep purple red with vibrant scarlet hues. High intensity and attractive aromatics of berry fruits, cassis and cigar box. Underlying aromas of star anise and charry oak spice provide wonderful complexity. The dense and structural palate is balanced by fine, firm tannins. Will impress as a youth and evolve over many years.
