Forest Hill Estate Shiraz

Established 1965, Forest Hill is the oldest cool climate vineyard in Western Australia and the first ever commercial planting in all of Great Southern. This solidly structured Shiraz demonstrates the virtues of a region that's endowed with an outstanding potential to craft the most intensely structured Rhone style wines. A medium bodied, fleshy style, Forest Hill displays white pepper and subtle spice on the palate enhanced by delicate toasty vanilla and perfumed Burgundian oak flavours, fine chewy tannins and a full firm finish.

Forest Hill can lay claim to producing some of Western Australia's finest Shiraz grapes. The winemaking facility itself is closely managed to vinify the exceptional fruit into a solidly structured, vigorous wine. Grapes are destemmed and crushed into open fermenters for a cold soak, inoculation and two or three pumpovers daily throughout the ferments. Vinifications are capped at 25C to prevent over extraction of tannins locked in the skins. A short spell of maceration is followed by transfer to barrel for malolactic where the wine integrates and softens. Matured sixteen months in a combination of new and seasoned, Francois Freres and Sirugue French oak barriques.
 
Deep red with purple hue. Lifted aromas of blue berries and plum, hints of subtle spice and earthy notes. Underlying savoury oak characters add complexity and evolve in the glass. Medium bodied palate with plum and blackberry flavours following through with subtle hints of earthiness and white pepper spice. Well integrated cedary oak flavours featuring fine chewy tannins and a firm rich mouth feel.
Forester Estate Cabernet Merlot

A complex cepage of mostly Cabernet Sauvignon with a balance of Merlot, totted up by smaller portions Petit Verdot and Cabernet Franc, sourced from neighbouring properties at Yallingup, the northernmost district of Margaret River. Particular attention is paid to inclusion of fruit from auspicious gravelly soils. Fashioned to retain youthfulness and fruit integrity, even after an extended ageing in French oak, a medium bodied, contemporarily styled Margaret River claret style to be enjoyed alongside meats with rich sauces or ripe, pungent cheese.

Around the vineyards, meticulous management of bud numbers through shoot thinning, achieves a balanced canopy and full fruit ripeness. Varieties come off in an orderly manner and the winemakers are rewarded by harvests of the finest quality. Each parcel is gently crushed into small open fermenters with traditional heading down boards under strictly controlled temperatures. Gentle extractions, always the priority at Forester, are achieved by daily drainings away from the skins and returning back. Batches are pressed to fermenters before being sent to a selection of seasoned and new, exclusively French oak barriques for completion of ferments, malolactic and eighteen months maturation. Alcohol 14.0%
 
Medium red colour, purple hues. Clean, aromatic and complex, the classic Margaret River characters of currants, bay leaf and dank earth, a perfumed lift with red berry, cocoa and fine cedar oak. Medium bodied palate with on a length of suede tannins, currant, blackberry and red berry fruit flavours, underlying cedar oak and floral musk like perfume supported by lovely gentle tannins. A smooth, firm finish.
Forester Estate Sauvignon Blanc

Margaret River does the Sauvignon Blanc so very well, some of the smaller boutique winemakers dotting the coast seem to have the magic touch with this rich and aromatic style of wine. Forester Estate focus more specifically on unique vineyard sites with exceptional terroir to construct the essential Margaret River Sauvignon Blanc. They have increased palate structure and complexity through partial barrel fermentation and storage on lees. A vigorously fruit driven wine, subtley oaked, eminently suited to creamy pastas and the freshest seafood.

An assemblage of fruit from the labour intensive, open lyre trellis Home Block on Wildwood Road and other good vineyards at Yallingup. An east west row orientation limits afternoon sunlight on the berries. Moderate sugar levels and good natural acidity ensure the superb varietal characters are well preserved. Hand picked grapes are held in cold storage overnight after the fruit has been passed through the crusher, to eliminate the need for must chilling, increase palate weight and contribute texture. A cool vinification through the action of choice yeasts ensues, half the components are sent to a selection of seasoned French oak barriques for several months on light solids. Alcohol 13.0%
 
Pale green/ straw colour. A slightly more serious style showing clean and focused characters of citrus, nettles, dried herbs and flint, with a touch of smoke adding complexity from partial barrel fermentation in one year old oak barriques. A fuller palate that offers great texture and freshness with dried herbs and citrus at the forefront. The wine finishes long and clean with lingering herbaceous characters and mineral acidity.
Forester Estate Sauvignon Semillon

The classically dry Margaret River style, though pleasingly not completely dry, Forester Estate is saturated with fully ripe, rich fruit, unfettered by any oak. Semillon and Sauvignon Blanc is sourced from neighbouring properties in the northern Yallingup sub region of Margaret River. Direct input from Forester's viticulturist ensures well balanced canopies and crops are grown for this ripe and judiciously unwooded white. A highly regional, vital white wine that goes down easy with seafood, approachable and satisfying, innately suited to good Al fresco cuisine.

A splendid component of Semillon gives this wine plenty of strong regional citrus and herbaceous characters. Modern white winemaking techniques are employed, temperature control is considered critical from the moment the fruit reaches the winery. Grapes are destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The must is cold settled for two to three days before being racked and clarified into fermenters, a range of specially selected yeasts are employed. A small portion of oak barrel ferments and maturation are employed to add texture and complexity, achieving a flavoursome young white in the inimitable Forester style. Alcohol 13.0%

Frankland Estate Isolation Ridge Riesling

A profound construct of West Australian Riesling, from fruit grown to a fastidiously managed site at Frankland River, one of the most isolated vineyards in the world, the product of uncompromising standards in viticulture. The vineyard is planted to Geisenheim and Rhine Riesling clones, into ironstone gravel over loam and clay subsoils, on an undulating northeast facing slope. Isolation Ridge slowly opens up in the glass, exhibiting purity of flavour, exceptional balance and a refined natural acidity, which carries the wine today and well into the future.

Dry grown Geisenheim and Rhine Riesling vines, established in 1988 and trained to Scott Henry vertical shoot trellis, planted to organically managed, rich ironstone gravels over loam and clay sub soils. The long slow ripening periods of Frankland River encourage maximum development of flavour while maintaining the distinctive racy acidity and dry finish for which Riesling is renowned. Grapes are pressed immediately and juices settled overnight, before being racked, aiming to minimise intervention, capturing the purest and finest expression of fruit grown to Isolation Ridge. The organically grown Riesling is treated to a cool vinification in a mix of fermenters and neutral oak at low temperatures of less than 14C
 
Light green straw colour. Intense aromatics of ironstone flintiness, lashings of lime with lifted floral notes. Fine and elegant, yet fills the mouth with a concentrated mix of juicy lime and citrus notes followed by a core of spicy ironstone minerality. A generous mouth filling texture but with an underlying tightness showing length, balance and focus giving the wine personality and direction.

Isolation Ridge are part of a larger wool growing enterprise. The decision to diversify the farm and plant vines came after a tour of French vineyards and two vintages worked at Bordeaux's Chateau Senejac. The Isolation Ridge vineyard is managed to organic viticultural practices which is reflected in the depth and concentration and palate weight of the finished wine. An elegant, tightly knit Shiraz wine that unfolds to reveal opulent flavours and savoury stylishness, the fruit of meticulous care in the vineyard and winery.

Shiraz is sourced from mature vines planted to the Isolation Ridge vineyard. The property sits on an undulating north and east facing slope on ancient duplex soils of gravel and loam over clay sub soil. Vines are trained to Scott Henry trellis, enhancing sunlight penetration of the canopy for optimal ripening. Fruit is vinified as long and as slow as possible, at temperatures not exceeding 30C in open pot fermentation tanks, allowing the cap to be worked by plunging and gentle pump overs. An extended maceration is employed for optimal extractions. The finished wine is aged in 500 litre French oak puncheons, contributing textural complexity without compromising the opulent natural fruit flavours.
 
Bright red plum. Concentrated aromas of plum and red pepper, an earthy dusty ironstone character. Intense flavours of red cherries, chocolates and plum, complemented by savoury complexity and structure with subtle oak integration supporting the long and fine palate.
