From a single row of the Iberian Graciano, grafted on to mature Chardonnay rootstock on the auspicious Paxton Thomas Block at McLaren Vale. Fruit is treated to a fortnight of cool ferments, plunging and pumpovers, followed by a gentle press into French oak barriques for nine months maturation. A deliciously food friendly wine of lithe spice and herb aromatics, raspberries and lavender, gently seasoned with a touch of white pepper. Adorably elegant tannins lie in support of juicy raspberry fruits, its supple savouryness making the perfect accompaniement to cutlets and all Mediterranean fare.

An assemblage of Shiraz from four of the six Paxton Certified Biodynamic vineyards, Quandong Farm and Maslin, the Jones and 19th Block, crafted with a view to expressing the brightness of flavour and sublime charm, of fruit grown to the most exacting environmentally sustainable principles. The Paxton team are focused on making wines of intensity, but also with layers of texture, good flavour and genuine interest. Bee hives on the property contribute to diversity, aid pollination and maximise seed production of the inter-row pastures. Natural composts enrich the soils and are the basis for healthy vine growth. Each vineyard parcel is separately handled, destemmed and vinified in a mix of open and static fermenters, plunged and pumped over each twice daily over the course of a fortnight for optimal extraction of colour, flavour and tannin. Batches are pressed into a selection of seasoned and new French and American oak barriques for completion of ferments and a year's maturation.

Deep mulberry, purple hues. Powerful, lifted ripe berry fruit, vanilla and chocolate, French cocoa and American vanilla oak notes. Rich, juicy fruit, spiced berries and currant, dark chocolates and licorice, flavoursome, textural mouthfeel and a lingering savoury back palate. Mouthfilling, yet lingering, elegant flavours, drinking very well immediately upon release.

Those who surround themselves in the art and science of viticulture make the greatest contribution to the quality of wine. For three decades, the Paxtons have nurtured their prized McLaren Vale vineyards, some of which are over a hundred years old. It's this level of care and passion for the land that has produced remarkable wine. The quality of fruit marked for inclusion must be nothing short of exceptional. Paxton remains on skins just long enough to be blushed with a chic lipstick hue and infused with a light dose of quenching tannins.

$1999each $239DOZEN EACH DOZEN Located southwest of McLaren Vale township, the coastal, relatively cool hilltop Shiraz site consists of predominantly deep alluvial clays layered with seams of river bed gravel and stone. Slightly closer to the coast, the Maslin Beach property is the source of an early ripening Shiraz component. Grapes are harvested as they begin to show the bright, light berry fruit flavours which are just right for Rose. Fruit is crushed and held in contact on skins for several hours. After settling, juices are fermented at cool temperatures as you would for a white wine. A small proportion is vinified in new French oak barrels. The final mix is filtered and bottled early to capture the piquancy of Shiraz Rose.

Medium rose petal red. Fragrant, floral, sweet raspberries, cream and Turkish delight. Bursting with ripe red berries on the palate, lusciously full and fruity, with a clean, lingering back. During the winemaking process, ferments were brought to a stop by the addition of sugars to enhance the fruit driven qualities and enhance complexity. Paxton should be enjoyed while fresh and young.

From the closely coddled, fully bio dynamic Thomas Block at Landcross Farm, McLaren Vale Grenache can trace its legacy back to some of the most historically significant rootstock in the world. Grapes are all hand picked and destemmed, a measure are included as whole bunches and treated to a fortnight of ferments, pumpovers and plunge, before pressing into a selection of pre loved French oak barriques for a spell of age. Grenache's distinctive nose of pepper, brambles and lifted strawberry spice, before a wonderful palate of soft, silky textures, winegums, jelly jube and fine fleshy plum.

Originally released in 1976, the Koonunga Hill range has established a sound reputation for quality and consistency, while availing red wine enthusiasts of the opportunity to approach the enduring Penfolds style. The inaugural 1976 vintage of Koonunga Hill Shiraz Cabernet was a legendary wine, still drinking well at Penfolds red wine recorking clinics. Reissued under the Seventy Six moniker, it has attracted a tremendous amount of critical acclaim, twice recipient of the highly prestigious Wine Press Club Trophy for Best Dry Red Wine.

$2599each $311DOZEN EACH DOZEN A mostly Shiraz wine with a vital component of good Cabernet, assembled from harvests grown to choice Penfold vineyards, owned and operated by the most dedicated growers. Penfolds have had greater experience with Cabernet Sauvignon than any other Australian winemaker, the development of Cabernet vineyards in Australia is due in no small part to their efforts. Vines are trained and pruned throughout the growing season, allowing optimum ripening conditions for maximum flavour, fine tannin structure and balanced acidity. Fruit is treated to a temperature controlled fermentation and full malolactic, followed by fifteen months in a selection of seasoned and new American oak hogsheads.

Deep, darkly coloured core, purple robes. Brooding dark fruit nose, stylish oak with elements of char. Mocha, dark chocolate, liquorice, aniseed and black olives gives way to more savoury notes of demi-glace and lamb. A rounded, balanced palate with generous plush fruits. Texturally appealing, excellent grip and fine, pronounced tannins in support of red berry and cranberry fruits. Ideal with beef, lamb and Mediterranean recipes.
