Fruit is treated to a week of ferment at temperatures as low as 14C, closely cap managed and imperatively tasted thrice daily. Batches are pressed while still sweet at five degrees of baume sugar level, into oak barrel for completion and a course of malolactic, an extravagant process which infuses and optimally consolidates the wine. Oak treatment is taken very seriously, working closely with World Cooperage and Heinrich, to develop barrels which are unique to the Mollydooker style.
