Since 1979 Maxwell have built a reputation for producing hand made, rich and robust red wines that combine exquisite fruit quality with structure and finesse. Shiraz is a specialty and their superlative efforts have brought Maxwell much acclaim for their definitive McLaren Vale regionality and purity of expression. Situated right at the original heart of McLaren Vale, just north of main street on gently rolling hills, Maxwell's is the perfect place to make wine. There are five unique open fermenters, the idea being to recreate the gentle hand plunging methods of years gone by. Vinified over the course of several days to dryness, these fermenters provide a soft method of extraction, colour, flavour and tannin, from the skins and seeds into the juices. Holding only two tonnes each, they afford the team an opportunity to focus on premium small batch vinification techniques and to treat each parcel of fruit individually. The finished wine is matured sixteen months in a mix of seasoned and new French and American oak hogsheads.
 
Deep dark red with crimson hues. The bouquet is abundant with dark plum and blackberry fruits, coupled by hints of mocha, spice and a dash of liquorice. Delivers all the virtues of the finest McLaren Vale Shiraz, a plush palate showing rich dark berry fruits, mulberry and dark chocolates with underlying notes of freshly ground black pepper, matched by subtle oak.

Introduced to Australia by Ken Maxwell (1915-2004) the Maxwell family is the largest and most successful producer of Mead in the southern hemisphere.The many styles produced over the centuries were the inspiration for Ken Maxwell's research into it's production. Commencing in the 1950s, Maxwell's work culminated in three distinct styles. Years of devotion to this ancient style of wine have provided Maxwell with unique, esoteric skills to select the most suitable honeys and best strains of yeast, while perfecting the complications of stuck ferments and off flavours which can plague the process. Maxwell are now enjoyed around the world, bringing Australian honey wines to a new generation of ethusiasts.
 
Orange tawny. Bouquet of honey and citrus, an added zest from the spices, cinnamon and clove. These spicy characters are carried through on the palate, filling the mouth with a complex and satisfying array of flavours. Traditionally served hot but not scalding, to enhance its aromas and warm the soul, it can also find uses in the kitchen as an ingredient in cakes and fruit pies.

Whilst the main McGuigan winery is situated within the heart of the picturesque Hunter Valley, McGuigan's multi award winning wines can source fruit from a wide and varied expanse of good vineyards. The primary aim of the innovative winemaking team is to produce a range of complimentary wine styles that deliver exceptional quality and consistency. To achieve this goal, parcels of Merlot grapes from choice sites have been assembled into Bin 3000, achieving a vibrant plummy wine with luxurious mouthfeel and gentle tannins.

McGuigan Simeon Wines, being Australia's third biggest listed winemaker, retains an impressive inventory of prestigious vineyards. To ensure quality of fruit is consistent for Bin 3000, winemakers spend a considerable amount of time amongst the vines. Grapes are sourced from various irrigated and dry land vineyards, harvested at optimum flavour ripeness throughout the cool of night. The must is vinified for several days at moderate temperatures. After primary fermentation, the grapes are pressed then clarified before being inoculated with malolactic bacteria. Once this secondary fermentation is complete the wine is assembled and matured in oak barrels prior to finishing, filtration and bottling.
 
Plum colour with a deep red hue. Mocha and caramel aromas over a bouquet of raspberry jam, dark cherry and complex fruits of the forest. Rounded vanilla and caramel palate is balanced by intense fruit flavours of raspberry, cherry and ripe plum. A great accompaniment to dishes such as lamb sausages and roast duck legs. A fully balanced wine, the subtle oak flavours integrate perfectly with the lifted raspberry and persistent dark ripe plum fruit flavours. The rich and rounded palate has good depth and intensity of flavour. Bin 3000 delivers a solidly structured red wine with a well rounded finish to be enjoyed now alongsde lamb or lasagna, succulent roasts or runny, washed rind cheese.
Mesh Eden Valley Riesling

Vineyards selected for the Mesh Project are chosen for their potential to yield fruit that's most in keeping with their Eden Valley provenance, while exhibiting the potential to translate into wines of style. The aim is to construct a Riesling with strong citrus flavour and slight mineral profile, long, rich flavours with a greater emphasis on power, generosity, persistence and texture. From vines up to sixty years of age, the viticultural parameters for each site focus on painstaking regimens, pruning, leaf retention and nutrition to further improve quality of fruit.

Three vineyards, two different coloured buckets, one wine. High on the slopes of Eden Valley, bright yellow and blue buckets squat between the rows. Two subtly different methods are agreed upon to achieve the desired outcome, as grapes from each vineyard are pedantically divided by selectively hand picking alternate rows into buckets, Jeffrey's into the blue and Robert's in the yellow. The pair part company and the two separate parcels are then crushed at different locations, the finished components are jointly assessed to determine the final, final, final wine. Each component, while being close to identical at the start, undergoes a subtly different conversion, reflecting the personality of the winemakers.
 
Vibrant appearance. Aromas of zesty lemon and grapefruit, a hint of dried green herb and spice. Lively and generous on the palate, intense and generous with lively lime and citrus flavours, finishing clean and dry on a length of refreshing slatey, almost salty acidity.

Fruit for the White Label is sourced from splendid Langhorne Creek vines which can trace a heritage back to the original plantings of 1891. In its day, originally crafted by the current winemaker's forebears, the century old block at Metala Creek still contributes grapes. Metala stands as a beacon amongst the great vineyards of Langhorne Creek. A mostly Shiraz mix with a third of Cabernet Sauvignon, the famous Metala label stands as an icon of the Australian wine industry, still crafted by the same geneology, mostly from the same old vines. After careful harvesting to achieve perfect ripeness, fruit is crushed into traditional open fermenters and macerated for optimal extraction of flavour, colour and tannins. Upon completion of ferments, Metala is pressed and racked before being transferred into a selection of French and American and French oak barrels for extended maturation. A careful assessment of each barrel is carried out, the finest are assembled into the finished wine.
 
Dense, dark brooding colour. An enticing nose of sweet herbs, ruby red berries, ground black pepper and mint. Intense plum, cherry and blackcurrant fruit scents are supported by hints of eucalyptus and licorice which characterize Langhorne Creek. On the palate, Metala is full bodied and rich with wonderful, dense blackberry fruit coupled by substantial but tender tannins. The Langhorne Creek Shiraz Cabernet of choice to accompany grills, stir frys and lasagna.
