The most highly coke addled marketing executive couldn't have come up with a brand like Dowie Doole, but fast forward and the label now enjoys a growing reputation for profound Shiraz wines in Australia and overseas. Small crops of extraordinary quality fruit are grown to some enduring Mclaren Vale vines, to be fermented and matured at the Boar's Rock wineworks.

The small 74 Block was the first parcel to be replanted on Norm Doole's California Road Vineyard in 1974, it produces fruit of unique concentration and complexity. Shiraz is harvested throughout the night to take advantage of cooler temperatures. Fruit is crushed into a small static fermenter for vinification on skins over a period of eight days while being treated to pumpovers thrice daily. At 2 baume the must is pressed straight to a selection of completely new French oak hogsheads for twenty four months maturation and a course of several rack and returns. Upon completion, the assembled Dowie Doole is given a coarse filtration before bottling.
 
Intense deep purple colour. A complex nose of dark fruits and leather, spices and dark chocolate. The full bodied palate is rich and generous, it follows on from the bouquet with blackberry and plums, spices and dark chocolate. A complex wine with excellent tannin structure, length and weight, marzipan and liquorice linger right through and onto the very long smooth aftertaste.

Dunes is assembled from Chardonnay and Pinot Noir grapes that are born to sparkle, nothing is left to chance and there is geat attention to detail throughout the vinification. Sites that are capable of producing fruit with the desired sugar and acid levels, whilst being generous with heightened flavour profiles are selected for Dune. Gentle handling in the winery ensures the maximisation of varietal characters whilst achieving harmony and delicacy in the final Cuvee. A period of rest on sedimentery yeast lees to infuse Dunes with enticing autolysis characters, to add rich textures, and to enhance the mouthfeel and palate weight. A rich effervescence and persistent bead. A lifted delicate nose with strawberries and cream from the Pinot Noir and fresh lemon zest from the Chardonnay. The palate is fruit driven and fresh, with added layers of cream and a lithe softness derived from the secondary fermentations. Dunes is brightly balanced and fresh with an excellent mouthfeel, a long lingering finish to flavours of citron, white cherry and biscuit.

Grapes are destemmed and crushed into wax lined, seven and four tonnes, open top concrete fermenters. The batches are tasted thrice daily and the temperatures are adjusted at each tasting to maximise flavour, keeping the tannin in balance with the intensity of fruit. When the tannin and fruit balance are extracted to the desired level, the wines are basket pressed, settled and racked into a combination of the finest 225L French oak barriques. Components are tasted regularly throughout maturation, racked and returned as required. After twenty months, the very finest barrels are set aside for inclusion into the final assemblage.
 
Vivid garnet, deep purple hues. Highly complex aromas of allspice, chocolate, olive, fresh blueberry and persimmon flesh complemented by underlying spicy French oak and savoury, smoky notes. Layers of dark chocolate, rhubarb and plum, ripe blueberries sit in harmonious balance over subtle French oak and fine silky tannins. Very concentrated and very long, exhibiting tremendous finesse, the intense flavours culminate in a long, persistent finish.
Elderton Ashmead Cabernet Sauvignon

The first and final word in world class Barossa Cabernet, aged in a luxurious selection of completely new French oak hogsheads. The Ashmead block is so low yielding that it was almost gutted and re established to more productive plantings. The vines suffer from the notorious Dead Arm disease but yields an extraordinary quality of fruit. Fortunately for the world of wine, Ashmead was retained as an Australian Grand Cru Classe. Elderton are not unfamiliar with ultra Cabernet, having claimed significant trophies including the 1993 Jimmy Watson.

The Ashmead block has consistently produced small parcels of peerless quality fruit. Traditionally this elite parcel has been blended into the estate range, but in 1998 Lorraine Ashmead was inspired by its excellence to release it under the family name. An unknown clone of Cabernet Sauvignon but most likely G9V3, planted by Samuel Tolley in 1944, is grown to deep alluvial silts over red brown limestone soils. Yields at this precious vineyard are a meagre one to two tonnes per hectare. Grapes are hand picked and teated to a chilled vinification in open top concrete fermenters, before transfer to exclusively new French oak puncheons and hogsheads for completion, malolactic and twenty two months maturation.
 
Deep purple/ black colour. Sweetly perfumed aromas of blackberries and candied plum, vanilla and oaken spice. Concentrated and lush palate showing dense dark berry fruits and suave baking spice notes, seasoned by savouryness and herb. Ashmead boasts excellent precision, harmony and depth, incredible persistence as the wine lingers on an immeasurably long finish.

A pure, single vineyard wine, from an unknown clone of Shiraz, picked off ancient vines, still growing on the original own roots, planted circa 1894, auspiciously classified as a centenarian block by Barossa Old Vine Charter. Following the initial budburst of a good spring, ample subsoil moisture allowed the old vines to flourish throughout the warm, dry summer. A cool February delaying ripening until late March, encouraging more blueberry and mulberry characters than is normal for Command Shiraz, very soft, pliable tannins adding structure and finesse. The finished wine was treated to an extravagant three years maturation in a mix of completely new American and French oak barrels.
 
Very dark purple with bright magenta hues. A radiant bouquet exhibiting a symbiosis of perfumes, savoury elements complexed by virile berry fruit and vanilla/cashew oak derived influences. An extensive, well layered palate of extraordinary elegance and generosity, capsicum notes and eastern spice, blackberry and fragrant blue fruit flavours, framed by sweet cedar oak and bound by a structure of finely tuned tannins, a Shiraz of immeasurable length and largesse.

One of the new world's great first growths, Command's grapes are grown to a choice block, from vines planted in the early 1900s. Growing on rich river silt soils and red brown earth over limestone, blessed by a Mediterranean climate, with cropping levels maintained to less than four tonnes per hectare. The strength and resilience of these vines shines effortlessly in the quality of what is in the bottle. Grapes are hand picked, chilled and vinified in open top concrete fermenters, treated to hand pump overs and cap submerging with oak header boards for eight days, followed by transfer to oak for completion of ferments, malolactic and thirty months in exclusively new French and American oak puncheons.
 
Very dark purple with bright magenta hues. Showing lovely seductive chocolate, violet and delicious oak characters. Big, ripe and powerful, but ultimately soft and seductive, blackberry meaty dark chocolate fruit, pronounced tannin structure and integrated oak, velvety texture and rich plum, dark chocolate and pepper flavours that echo beautifully as the finish sails on and on.

Elderton Cabernet was winner of the prestigious Jimmy Watson Memorial Trophy in 1993, the following years it claimed back to back Gold and Trophy at the Barossa Wine Show. The 1994 vintage gave Elderton its first international Gold medal in London, an unbroken tradition of remarkable vintages have embossed the Elderton Estate name as a national champion, being chosen by Qantas for service in first class. The superior quality of fruit grown to Elderton's fifty year old estate Cabernet vines, yield a wine of intensity, opulence and grace.

Elderton sits atop very old, deep alluvial soils over limestone, the majority of Cabernet vines which contribute grapes are over fifty years of age, the oldest established in 1949. Harvested throughout the cool of night, Cabernet clones 1654, BVRC12 and BVRC30 are crushed into open concrete fermenters and treated to a cold soak. Heading down boards are employed after two days to keep the cap submerged and allow better control of fermentation rate, constant pumpovers percolate oxygen through the skins. Batches are pressed into a selection of seasoned French oak hogsheads and puncheons for completion of malolactic and a series of rackings over twenty two months before assemblage.
 
Deep purple colour. Blackberries and cassis, beetroot and mint with a touch of cedar on the bouquet. Full bodied palate exhibiting plum and back fruits, classic Barossa varietal characters of cassis, black olives and mint. Medium bodied, a rich, classy palate, for a fully integrated Cabernet wine showing unobtrusive oak and polished tannins.
