There is a conjunction of unique and distinctive soils at Watervale, loam on limestone or loam on shale, all well-draining and enhanced by a favourable climate, warmth, sunshine and cool nights. The Crabtree team have a long history and experience with Riesling, growing it in the vineyard and handling it in the winery. A key strategy to formulating this wine is to pick and ferment all the Riesling blocks separately. Thirteen individual ferments provide the team with intimate insights into each block's flavour profile and unique terroir characteristics. The best free run juices are identified and cold fermented to dry. The finest of these batches are set aside for inclusion into the final wine.
