Tim Adams can rely on harvests from Valley Clare's bravest vineyards to source the finest parcels of Pinot Gris. Rather than removing the distinctive grey tint of the grape's skin, Tim Adams chooses to retain this charming feature of Pinot Gris in the finished wine. Vinified from the complete pressings of fruit, the totality of which have made a remarkable contribution to a soundly structured Pinot Gris, the pinkish bronze hue sets the stage for an alluring nose, followed by a rich, robust palate and long, memorable finish.

A collation of harvests from choice Clare Valley sites, the Ladera and Sandow vineyards, Bastian and Sheoak, several of which are part of the estate portfolio. Tim Adams is focused exclusively on parcels of Clare Valley Pinot Gris, selected on the basis authentic varietal and regional characters. Fruit is harvested throughout the cool of early morning, grapes are crushed, chilled and pressed, all pressings are returned and included in the musts. A cool fermentation over the course of a fortnight is arrested just before completion to retain a slight residual sweetness. Components are cold and protein stabilised, followed by an immediate bottling to ensure freshness.
 
A distinctive rose gold hue. Opulent pear, lychee and peach aromas, complemented by subtle lemon zest notes. The palate exhibits pear, lychee and peach flavours, complemented by fullness and some sweetness in the middle, supported by cleansing acidity. To be enjoyed while young and vibrant, alongside Asian cuisine, Al fresco and all good seafood.

A collation of choice Riesling parcels, assembled from the Morrisons, Tim Adams, Baum and Goldsack properties in Valley Clare. Tim Adams focus is exclusively on Clare Valley fruit, selected on the basis of exemplary varietal expression and authentic regional expression. A pure Riesling wine, vinified exclusively from the first free run juices of crush, essential to the ultimate integrity of the finished wine, capturing an intensity of flavour and pristine, recognizably Clare Valley aromatic character.

Tim Adams began his career as cellarhand at the Stanley Wine Company in 1975. He progressed to the position of laboratory assistant in the following year, with the encouragement of Mick Knappstein, Adams began his formal studies in viticulture. Years of passion and hard have achieved a range of the most elegant wines, without forgetting obligations to the Australian wine industry, environment and wider community. Following harvest and the crush, retaining only the first 500 litres per tonne of free run juice, a fortnight of ferments at 12C to 14C, is followed by protein and cold stabilization to normal standards, a minimal amount of sulphur dioxide has been used to finish the final wine.
 
Light, pale straw hue. Tim Adams shows very lifted Riesling character, citrus aromatics, lemon and fresh cut limes. The palate is seamless with a lovely moderate viscosity before a brisk acid finish. Clare Valley Rieslings are delicate yet animate and enduring, eminently enjoyable when young and zesty, sublime when left to mature.

Tim Adams Semillon

Tim Adams knows about Clare Valley Semillon. He began his career as a cellarhand for the Stanley Wine Company, rising to the position of chief winemaker, he also worked under the tutelage of Mick Knappstein. Adams objective with Clare Valley Semillon is to retain its freshness and authenticity, for an aromatic wine of exquisite balance and generosity of flavour. Ferments in French oak infuse complexity into the grass and stonefruit character of Semillon.

The Tim Adams wineworks are located right at the heart of Valley Clare, along Warenda Road, not far from the Main North Road, about midway between the townships of Sevenhill and Clare. Harvests of Semillon grapes are selected off choice blocks on the Sheoak, Rogers and Fairfield Vineyards. Parcels are crushed and the juices left in contact with skins for twelve hours to maximize fruit flavour extraction. All pressings are retained and vinified for inclusion into the finished wine. Batches are vinified in a combination of fermenters and French oak barrels, components remain in oak for several months before being assembled and cold stabilized into the final wine.
 
A light, bright yellow hue. Citrus, mineral and vegetable bouquet with hints of dried florals, asparagus and pear. This aromatic wine has great balance and generous flavours so expressive of Clare Valley. French oak fermentation has added complexity to the grassy and stonefruit characters of the Semillon.

A collation of fruit from the Rogers, Bayes, Eldredge and Pat Seneca properties in Valley Clare, for a cogent Shiraz wine of exquisite regional and varietal definition. The tapestry of local sites has been woven into a wine of structure and power, while offering the elegance and grace to drink beautifully upon release. A fortuitous partnership with artisanal cooper Bill Wray, ensured from inaugural release, that the stellar quality of Tim Adams wines would be aged in an equally splendid measure of the finest oak.

Tim Adams began work in the industry as a cellarhand at Stanley Wines. He was encouraged by maestro Mick Knappstein to earn a degree at Charles Sturt University and embarked upon his own label in 1984. Tim Adams retains the Clare Valley's finest growers as his closest friends. Contributions of Shiraz from choice vineyards are fermented on skins to dryness before being pressed and returned. Upon completion of ferments, the wine spends twenty months in a selection of one and two year old American oak at the Tim Adams coolroom before assemblage and filtration. Bottled without cold stabilization, a harmless crystalline deposit may form in the bottle, decanting is recommended.
 
Bright magenta red. Aromas and flavours of violet, blackberry and mulberry with complexity evolved after two years in fine oak. The palate is full and soft on the front and middle, with flavours of small berry fruit complimented by oak. A finish that's medium firm over grape and oak tannins. Approachable today, Tim Adams displays a remarkable weight of fruit, controlled power and measure of finesse.
Tim Adams The Fergus

The Tim Adams label was born out of a venture to make small oak casks and limited amounts of wine. After three decades of consistently superb vintage releases, Adams is counted as one of the leading winemakers in Valley Clare. Fergus was a neighbour who was kind enough to sell his Grenache to Tim in 1993 during a desperate shortage. Tim quickly realized that what had been achieved through a serendipity of logistics was to have real potential as a full bodied, soft style with immediate approachability and splendid compatibility to good food.

A collation of harvests Tempranillo and Grenache, sourced from the Ladera, Sheoak and Mahons vineyards in Valley Clare, a choice parcel of Malbec is added for complexity. Grenache remains on the vine until fully mature, grapes are harvested late and crushed on to batches of drained Tempranillo skins for a week of vinification. The fermenters are topped and closed for another week prior to pressing. Components are racked several times before filtration and transfer to seasoned French and American oak hogsheads for an extravagant two years. Components are assembled and bottled without cold stabilizing, which may forn a harmless crystalline deposit.
 
Dark scarlet purple hue. Ripe berry and cherry fragrances, licorice and garden spearmint over spiced oak notes. Lifted red berry flavours, complexed by Grenache spice and given extra back palate astringency by virtue of the other more tannic grapes. A mouth filling wine that will go nicely with turkey and duck, gamey meats and lamb.

Tim Gramp is fifth generation of the family which made Orlando Wines famous. Tim has continued the tradition under his very own label, his estate wineworks are fortuitously based in the Clare Valley, home to some of Australia's finest Riesling vineyards. Tim Gramp is fashioned to a classically dry Riesling style. The palate is smooth and integrated, with a touch of intensity, elegance and refinement, ahead of a lingering, dry finish. An immensely well received and highly lauded wine to be found in Jetstar international business class.

Fruit is sourced from the Castine family Golf House vineyard at Watervale. Soil profiles are red loam over limestone, yielding just over two tonnes/acre. Watervale is famous for Riesling wines with uplifted floral/ citrus aromas, clean mouthfilling flavours and profound structure. Idyllic ripening conditions develop pronounced, identifiably regional expressions. Parcels of the finest quality fruit are treated to a traditional manual basket press for the retention of inimitable hand extracted fruit characters. Only the exclusively free run juices are vinified, fermented over the course of several days, cold stabilised, filtered and bottled in July.
 
Pale light straw colour. A vital clean bouquet, the classic dry style of Riesling with seductive lemon, lime and floral aromas. Zesty and elegant citrus components follow through onto the palate which displays refreshing acidity and superb length of flavour. Evocative citrus characters are balanced by an invigorating acidity and lingering clean mineral finish.

Conversely, the proprietor of Les Juveniles spends time with Powell whenever he's wine trekking around the Barossa. A delightfully fruit forward accord of Grenache, Shiraz and Mourverdre, crafted from fruit grown to old and very old Barossa vineyards, judiciously fashioned to an early drinking Rhône Valley styling, principally for the enjoyment of bohemians and artistes, épicuriens et bon vivants.

Designed for the fashionistas who attend Juveniles, enthusiasts who really know their Rhône Valley wines. Two thirds Grenache with the balance of Shiraz and Mourverdre, assembled from a collation of harvests, off vineyards between forty and a hundred fifty years of age, grown to the premiere Barossa districts of Seppeltsfield and Gomersal, Moppa and Marananga, Ebeneezer and Koonunga Hill. Fruit is all hand picked, passed over the sorting table and treated to a term of cold soak. Parcels are separately vinified in traditional fermenters and assembled into a single wine for completion of ferments and natural malolactic. The finished cuvée is bottled without fining or filtration in November.
 
Bright red hues. Perfumes of strawberry and spiced black plums, the energy and intensity of freshly fermenting must. Ripe juicy flavours of blackberry, spiced cherries, minerals and Asian spices wrapped around a skeleton of fresh acidity and fine mineral laden tannins. Soft and sensuous, ready to enjoy immediately on release, ideally alongside crusts and fresh baked goods, cured hams and cold roast duck.
