Old Adam is the zenith of Langhorne Creek viticulture, it holds a place within the pantheon of great Australian Shiraz. The Willson family established a reputation for excellence, after providing fruit for many of the nation's most memorable vintages and illustrious wines. Old Adam is the pick of the Willson crop, isolated from the finest parcels off the very best blocks, treated to the most fastidious barrel selection. An extremely limited release wine to be cherished and savoured, a most remarkable rendering of new world Shiraz.

Before launching their own label, the Willson family grew grapes which went into Australia's most notable wines. Today, Bremerton are in a unique position to keep all parcels of wine separate from the time of picking through to fermentation and maturation. The most elite quality Shiraz grapes from low yielding vines are fermented in open vats, followed by two years maturation in completely new, extra fine grain American oak barriques. Following a spell of racking, each parcel is assessed and the most outstanding barrels are earmarked for inclusion. Those parcels worthiest of the Old Adam moniker are treated to another year in bottle prior to release, further integrating the oak, tannin and fruit.
 
Deep scarlet colour. Blueberry and plum bouquet, cardamon and leather, sweetly aromatic spices and mint. Showing intensity of rich fruit flavours and elegant integrated oak, a delicious, impeccably structured and engagingly complex wine. Their fruit has formed the backbone of Australia's finest vintages for decades, the pick of Bremerton's crop is now reserved for the estate's own label. Bremerton are well positioned to assemble parcels of Cabernet and Shiraz which are just perfect for Rosé. Vines are all closely husbanded, painstakingly treated to a regimen of leafy plucking and canopy management for optimal exposure to sunlight without over ripening. Judicious levels of acidity and perfect natural fruit sugar baumes are essential, bringing in the harvest, row by row, as grapes achieve ideal physiological ripeness, is timed to a schedule determined by eating the berries straight off the vine. Fruit is cold soaked on skins and drained, just as juices pick up the desired blush pink hue. Batches are vinified in controlled fermenters and bottled promptly to retain vivaciousness. Deeply salmon pink coloured. Lifted fruit aromas, fresh cut strawberries and orange cream. Racy and moreish palate, mouthwatering with bright berry flavours, textural mouthfeel with generous weight of fruit, cinammon apples and plum cake spice are complimented by bluberry and cassis notes before a refreshingly dry finish. Perfect for alfresco dining or piquant, lightly chillied recipes.

Selkirk is a small Scottish border town, ancestral home of Bremerton's Willson family. A source of fruit to some of Australia's most esteemed labels and memorable vintages, Rebecca Willson and her team have taken the quality of their wines to new standards. She keeps the pick of the crop for the Bremerton label. Langhorne Creek Shiraz has long been the secret ingredient to many triumphs on the national wine show circuit. Meticulous vineyard management and controlled yields achieve the quality of fruit that's so central to the creation of Selkirk.

Langhorne Creek is renowned for the annual flooding of Bremer River, which replenishes the rich alluvial soils and contributes enticing eucalypt characters into the wines, courtesy of the ubiquitous gum trees which populate the region. A meticulously managed, hands on viticulture and controlled yields translate into vintages of profound Shiraz wine. Following harvest and a term of cold soak, grapes are inoculated in traditional small batch open top fermenters. Upon completion, Selkirk spends eighteen months in a selection of American oak barriques. A high proportion of new oak, up to a third, enhances palate structure and adds luxurious complexity without masking the quality of fruit.
 
Deep, vibrant colour. Rich aromas of blackberries, ripe cherry and black plum are complemented by spicy oak, lifted by red currant and pepper notes. An exquisitely balanced palate structure, lined with dark bramble fruit flavours, framed by polished oak and supported by chewy, toothsome tannins. Decanting is advised, Selkirk matches well with the finest haute cuisine.

The four noble claret varietals, Merlot and Malbec, Cabernet Sauvignon and Shiraz, exclusively Langhorne Creek parcels are assembled into a generous and well balanced, eminently ready to drink red wine. Cabernet provides fine tannin structure, Shiraz adds berry fruit weight, Malbec brings perfume, Merlot rounds out the palate. Brimming with lifted fruit and spice flavours, a mouthfilling wine lined with the softest tannins and delicate oak, culminating on a long and flavoursome, decidedly savoury Langhorne Creek finish.

The moniker Tamblyn is in recognition of the winemaker's ancestors who migrated to Australia from Cornwall. Tamblyn is a wine formulated by Langhorne Creek's Rebecca Willson, one of Australia's champion winemakers. A finely engineered balance of fruit, making a whole which is greater than the sum, at the same time achieving a soft, well rounded approachable palate structure. Exclusively Langhorne Creek, the varietal components of Tamblyn are separately vinified in open top fermenters for maximum extraction of colour and flavour. Tamblyn is treated to eighteen months maturation in a combination of new and prior use French and American 225 litres oak barriques prior to assemblage.
 
Deep crimson red in colour. A bouquet of dark plums and spiced fruit, gum leaves and violet. Aromatic cocoa/ vanilla characteristics of quality French and American oak show through, accentuating the fruit without dominating. An absorbing red wine, but easy, uncomplicated and ramped up with sweetness, a terrific drink now proposition to all good food.

It's a bit of an enduring truism along the banks of Bremer River, that you need double letters in your name to qualify as a Langhorne Creek winemaker. Viz the Willson sisters, the Messrs Potts and Blass. Outstanding quality fruit and excellence in the art of vinification are essential too. The Willson family had been selling their grapes to the nation's most conspicuous brands, before they took the plunge to retain the best of harvest for their own label. Graciano is oft blended with suave and stylish Tempranillo, to fashion the most engaging and topical wines in Rioja.

Bremerton take their oak program very seriously, employing the best coopered 220 litre barriques to ensure a subtle and complementary influence of oak. The Willsons have been grapegrowers in Langhorne Creek for some considerable time but it wasn't until young Rebecca grabbed the reins to process and label her own fruit that the family name became synonymous with superlative Langhorne Creek wines. Following vinification in small batch open top fermenters and a judicious maturation in a selection of the finest oak barriques, components are assembled to define the brave synergy between Graciano and Tempranillo, without masking the distinctive character of Langhorne Creek.

The very limited release Walter Reserve is a wine of stature and opulence, an outstanding Cabernet Sauvignon grown to the rich, predisposed soils of Langhorne Creek. Assembled from a fastidious selection of the best barrels Cabernet, all originating from the estate's superlative vineyards, nourished by the flooding of Bremer River. Bremerton are in a unique position to keep all the individual parcels of Cabernet separate until completion, for the purpose of isolating the most exceptional lots, from the time of picking through to vinification and maturation.

The winemaking team headed by Rebecca Willson has taken the quality of Bremerton wines to stellar heights. Willson crafts traditional, full bodied, full flavoured, mouth filling Langhorne Creek wines that show a consistency of style, whilst encouraging the true varietal Cabernet characteristics to be expressed. Cabernet Sauvignon is fermented in open vats before being matured two years in completely new French oak. Following some barrel age, each parcel is assessed, the most outstanding parcels are treated to a further term of age before being assembled into the final wine. A term of bottle maturation, up to two years before release totally integrates the tannins, achieving remarkable flavour development.
 
Deep crimson colour. A powerful yet elegant wine, bouquet of blackberry, bramble and earthy notes. A firm and brilliantly integrated palate, showing dried herbs, lavendar and cassis, dark chocolate and spice meld seamlessly. Fine elegant tannins encapsulate the flavours, adding layers of length and persistence. The refined tannin structure provides an elegantly composed wine that drinks beautifully on release.

A tale of two winegrowing regions, fruit is harvested from choice vineyards in McLaren Vale, crushed and chilled to tanker, transferred to the Pokolbin wineworks in Hunter Valley. Parcels are treated to a vinomatic fermentation, without any excessive plunges or movement of juices, to extract only the finest supple tannins. Upon completion, components are filled to a selection of seasoned and new, French and American oak barriques for term of maturation.
 
Dense red, youthful purple hues. Red fruit bouquets, bramble and cassis, varietal Merlot plummy notes and Cabernet leaf over hints of cedar. A well rounded, stylish palate of ripe, dusty fruit flavours, plummyness, red cherries and game over a length of yielding tannins and background carob oak. A joy alongside lamb roast, pure delight with olive baguette and firm tangy cheese.

A heightened level of complexity is at the core, fashioned to express the character and charm of each vineyard, generously proportioned and layered with ripe, juicy flavours, followed by a satisfyingly savoury, mouthfilling finish.

Brokenwood was founded by a trio of Sydney based solicitors, Tony Albert, John Beeston and James Halliday, who together paid a record price of $970 per acre for a precious, ten acre property at the foothills of the Brokenback Ranges. The vineyard's first block, originally planned as a cricket ground for the local community, became planted to some of the country's most precious Shiraz vines. Parcels are vinified in a mix of open and roto red fermenters over the course of several days, a component finishes its ferment in oak. All batches complete malolactic before being treated to an extended maturation in a mix of new and seasoned French and American oak barrels.
 
Deep red, purple hues. Plenty of dark berry aromas, sweet oak marrying well. Spices and festive pudding characters on the rich, lengthy palate, liqueur cherry flavours and fleshy plum, supported by fine oak. Tannins are soft and ripe, nothing heavy about this wine at all, but it fills the palate, lingering pleasantly and long. Drink now alongside juicy lamb, crackling pork or succulent veal.
Brokenwood Wade Block 2 Shiraz

Growing happily to deep sandy soils in the premiere precincts of McLaren Flat, the remarkable vines on Wade Block 2 were sourced as cuttings from a distinguished, old site very nearby and replanted to their own roots. The extraordinary quality of Shiraz from Wade Block 2 merits a single vineyard wine, distinctive, articulate and complex. Its gracefully perfumed nose, penetrating palate and showroom tannins, define Wade Block 2 as a profound and evocative expression of McLaren Vale, albeit, uncannily eloquent of the stately Brokenwood style.

Fruit is harvested and crushed to chilled tankers for a cold settling during transfer to the Brokenwood wineworks at Pokolbin. Batches are treated to a gentle rotation in vinomatic fermenters, worked to a minimal amount of pumpover, as soft extraction of judicious tannins are essential. Upon completion, batches are held for a term of post ferment maceration, followed by racking to a selection of seasoned and new French and American oak barrels for maturation.
 
Vibrant colour, purple hues. Spiced cherry nose, raspberries and cassis, opulent and ripe. Medium weight palate, dark chocolateyness around a core of black fruits, confit plum, savouryness and spice, jube berry fruit flavours supported by background oak and fine grained tannin.

The Adams brothers carry the distinction of farming the oldest family owned Cabernet Sauvignon vines in the world. Planted to fourteen rows of Cabernet in 1891 by estate patriarch Arthur Formby, the distinguished Metala property yields some of the most highly sought fruit in the nation. The original plantings remain productive, forming the backbone of fruit for Brothers In Arms.
