Richard Hamilton Surgeon Shiraz

The focus of Richard Hamilton is to construct a wine of good fruit, tight structure and lovely palate roundness. Much of the Shiraz is selected from vines up to forty years of age, planted to sandy clay loam and black clay loam soils on the Leconfield farm. Grapes are treated to a detailed hand clean up and pressed for ferments to dryness, returned to oak for up to eighteen months in a combination of new and seasoned French and American oak barrels.

Deep dark red with attractive crimson hues. A fruit dominant wine showing mint, plum and black pepper. Oak derived spice characters of cinnamon and nutmeg augment the nose. Expect to see cedar characters as the wine develops. The palate shows definitive Shiraz flavours with the richness to be expected of a McLaren Vale wine. The tannins are tight and long with round texture, clean acidity and excellent persistence.

Riposte Cutlass Shiraz

One of the highest Shiraz vineyards near Lobethal in Adelaide Hills, planted to a gentle north facing slope for maximum sunlight exposure. Grapes are treated to a slightly artisanal winemaking, parts of the harvest are separately vinified as a mixture of whole bunches, crushed berries and whole fruit, moved to a selection of French oak barriques for a timely course of age before assembling into the final cuvée. An attractive carbonic lift and soft, textural palate, laden with red berry flavours and juicy dark plum fruits, redolent with the whole bunch derived perfumes and lithe tannin spice.

Riposte Dagger Pinot Noir

From Pinot Noir picked off choice vines at Charleston and Gumeracha on the Adelaide Hills. Riposte means a quick comeback, reply or retort, in the sport of fencing it is the term for a swift counter stroke. After more than a decade of confusion about the Tim Knappstein name and eponymous wineworks, Riposte was chosen as the appropriate moniker for Knappstein's comeback label. Pinot Noir clones are treated to a minimalist, hands on vinification in the traditional old world way. The Dagger has been finished to a vibrant and rich, earlier drinking style of Adelaide Hills Pinot Noir.

Bright purple scarlet hue. Cherry and spice nose with light tannin, rhubarb and raspberry complexity, a fresh yet complex attack on the senses. En garde! The illustrious Tim Knappstein has returned with the cut and thrust of Adelaide Hills Pinot Noir. Knappstein hails from a long lineage of great winemakers, he was the first to plant vines at Lenswood in 1981. He still lives amongst the undulating aspects of Adelaide Hills and works with the most dedicated growers. Knappstein has accumulated the experience and skill to put all his efforts to bear on any style of his choosing. Pinot Noir is sourced from some of the eldest and most distinguished sites in the premiere precincts of Lenswood and Piccadilly.

Of great interest to Knappstein is the spread of ripening between newer clones Pinot Noir, 777, 114 & 115, as opposed to the established MV6, D4V2 and D5V12. The newer clones ripen earlier and are better suited to the cooler, higher aspects of Adelaide Hills. The Knappstein team work closely with growers to produce moderate yields of superior quality fruit, well exposed to sunlight for optimal development of colour, flavour and tannins. The Sabre is made in small batches, all parcels are cold soaked and hand plunged in traditional open fermenters, treated to full malolactic and ten months maturation in a mix of seasoned and new French oak barriques, followed by a minimal filtration.
 
Scarlet purple colour. A substantive nose of ripe red berry fragrances, garden vegetable, barnyard and game. An opulent palate of earthy dark fruit flavours, currants and black cherry, tomato leaf and piquant bucolic characters, supported by a fine length of firm yet malleable tannins, sheathed within a an inseparable frame of sassafras oak, all providing balance and structure.

Tim Knappstein began his apprenticeship under the family owned Stanley Wine Company. Within a decade, Tim had won more than 500 show awards, gold medals and trophies for the premium Leasingham range. His unrequited passion for cool climate wines led Tim to the Adelaide Hills in 1981, where he planted the first vineyard at Lenswood. Working closely with choice growers to obtain the highest quality fruit, Tim's intimate familiarity with Adelaide Hills terroirs and long years of accumulated expertise, afford him the devotion and flair to create fully articulate high altitude wines of immense personality and appeal.

There are two superb high altitude sites in Carey Gully and Piccadilly Valley, which yield an extraordinary quality of Sauvignon Blanc. Knappstein take the top cut of each harvest, crushing the fruit for a long cool vinification, treating a batch to the added richness of oak barrel ferments for texture, complexity and weight. A highly contemplative style of Sauvignon Blanc, expressive of its masterful élevage while articulate of its Adelaide Hills provenance. Lead by an elegant passionfruit and floral nose, its long driving palate of intense fruit characters resolves on a clean and crisp, exquisitely balanced finish.

Rockbare Barossa Babe Shiraz

Tim Burvill worked at Wynns and Penfolds, where he refined his style alongside some of the best winemakers in the country. Establishing his own label, he embarked upon a secret project to acquire parcels of wayward Barossa Shiraz. With a backbone of fruit grown to some of the oldest sites in Australia, much of Barossa Babe comes off vines up to 140 years of age. The intense power and complexity of the primary fruit flavours are complimented by sweet oak and gripping solid tannins, culminating in a wine of extraordinary complexity and length.

Old vine Barossa Shiraz, the older the better. While Shiraz was the mainstay of the Australian wine industry for most of its first century, in the Barossa the variety has always held a special mystique. One of the only premium international viticulutural areas not ravaged by phylloxera in the 1800s, the Barossa remains as a living museum of the worlds oldest Shiraz vineyards. Tim Burvill has made the most of his years working with local growers, to isolate and to retain choice parcels of old vines Shiraz. Barossa Babe is treated to a warm vinification in small open top fermenters followed by up to two years maturation in a combination of new and prior use oak barriques.
 
Cherry black with vivid purple hue. Warming nose of brooding syrupy dark fruit, earth and leather, mocha and licorice. A big, rich, lush wine offering a degree of elegance, exquisite black berry fruits and subtle spiciness along a dreamy palate, through to a delightful finish of fine lingering tannins and warming touch of pepper.

Tim Burvill draws his insiration from the crisp Sancerre wines of France. His straight forward, low intervention winemaking techniques translate into solid Chardonnay wines with bold varietal definition and intense fruit. The same careful approach is taken in the vineyard. Grapes are harvested in the cool of the night just as the tropical flavours begin to appear. A completely wild, indigenous yeast vinification serves to enhance the aromatics, ferments are run very cool to retain valuable volatiles. A component of large format oak ferments reduce acid harshness while contributing complexity. Five months of lees stirring compliments the mid palate texture and contributes a rich nutty taste.
 
Pale green hue. Pungent tropical and melon fruit laced with exotic dashes of kiwi and cashew. Stylish and elegant, the vibrant fruit drenches the tastebuds with a wave of intense pineapple, peaches and nectarine. The mid palate is textural with a bounty of creamy, mealy complexity derived from extended lees stirring. A balanced acid finish, crisp, lingering on notes of clean tangerine and lemon freshness.
