The elevated northern districts of Barossa Valley make a perfumed and delicate style of Cabernet Sauvignon. Vines planted to drier, cooler climes than the Barossa valley floor, offer much lower yields, translating into rich and powerful Cabernet wines of great intensity and structure. Peter Lehmann retain access to some of the oldest and very best Cabernet sites in the region. The choicest parcels are selected on the basis of juicy berry fruit flavours and fragrant minty violet characters. Fruit is crushed into fermenters for a term of cold soak followed by a week of vinification. Upon completion, batches are pressed, clarified and filled to a selection of French and American oak hogsheads for a year's maturation.
 
Deeply coloured garnet red. Initial black cherry notes precede a redolent bouquet of currants and mint, violets and cassis. A richly endowed, solidly structured palate, offering great length of flavour, blackberries and cocoa, inky fruits and Barossa chocolate fruit characters, before a soft, fined grained tannin finish. Drinking beautifully, a superb accompaniment to beef, wild game or ripe, pungent cheese.
Peter Lehmann HV Chardonnay

A splendid high altitude effort, expressing fully the uniqueness of Chardonnay grown to the lofty terroirs of Eden Valley. Grapes are sourced from choice independent grower vineyards, tucked way up high in the eastern Barossa ranges. The region is particularly cool, perched atop steep slopes and on lean rocky soils, planted to clones of Chardonnay which can thrive in the challenging mesoclimes. Yields here are normally low, producing outstanding white wines with a measure of delicacy and purity of fruit.

An early harvest Chardonnay style, fashioned to a combination of old and new world winemaking techniques, followed by a term of cool barrel maturation, achieving a delicate wine with remarkable balance of fruit, preserving the divinely pristine persona of the vineyard. Determining the optimal date for picking is essential to constructing a wine of balance and finesse. Following harvest and the crush, batches are drained directly into French oak hogsheads set in a cool environment allowing natural yeasts present on the grapes to initiate ferment. Upon completion, the wines are treated to partial malolactic, barrels are topped up and stirred regularly for eight months prior to stabilisation and bottling.
 
Fine green/ gold tinge to the colour. Lovely nose of cut stonefruits and lemon preserve, hawthorn and ripe nashi. A lovely balance of fruit complexity on the palate has been derived from rich barrel ferments and battonage. H&V will acquire a deeper gold colour and become richer in flavour as it evolves. Today it represents a very ready to appreciate Chardonnay alongside chicken roast and rabbit terrines.

Pinot Gris has found the perfect idyll within the cool climes and elevated aspects of Valley Eden. The long slow ripening produces an exceptionally well balanced style of Pinot Gris with heightened acidity and brisk natural fruit characters. An aromatic, textural white wine that's so highly engaging, while serving as a contemporary Australian take on the established French style. H&V's mouthfilling and complex, layered palate makes it a cinch with food and a fine match to all cosmopolitan faire.

Parcels of Pinot Gris grown to a splendid site, high up the Eden Valley, atop bony, rocky soils, are picked a little later in the season to make a more textural style of wine. Following harvest, grapes are crushed and the juices drained immediately away to ensure a finished wine of delicacy and softness. A small portion is inoculated in French oak hogsheads to create a Pinot Gris of characteristic barrel ferment richness, the balance is treated to vinification in chilled fermenters to retain the urgency of Eden Valley fruit. After a few weeks on sedimentery yeast lees, components are assembled, stabilized and bottled early to preserve freshness. Alcohol 13.0%
 
Delicate colour with a green tinge. Bouquet of freshly cut pear, blossoms and pine nut, nashi and quince. The palate is rich and soft, offering lemon zest stonefruit flavours, hazelnut and vegetable, textural with a mineral crunch, before a pleasingly dry finish. Drinking beautifully now, serve lightly chilled alongside pan fried salmon or prawns, roast pork or chicken mushroom pie.

Eden Valley Rieslings are highly acclaimed, the finished wines revealing great definition of terroir, elegance and style. H&V is sourced exclusively from Stanton and Petney's property atop the High Eden Valley on the eastern Barossa ranges. This steep east facing site is particularly cool as it lies over 420m above sea level on shallow rocky soils, ideal for enhancing the natural acid balance of ultra fine Riesling. Grapes are picked early, crushed and chilled, juices are immediately separated from skins to enhance delicacy. Following a slow cool vinification in fermenters, the wine is clarified and treated to a prompt bottling for the retention of the elegant Eden Valley character.
 
Delicate green hues. Scents of freshly picked limes, lanolin and white floral. The palate shows great purity of fruit, penetrating yet elegant lime characters, orange blossoms and quartz mineral before a refreshingly crisp, dry finish. A superb white wine which will evolve brilliantly, as it reveals the complexity expected of a top flight Eden Valley Riesling. Grapes are sourced predominantly from three choice vineyards at Koonunga, Tanunda and Lyndoch, as well as contributions from other fine sites, dotted throughout the premier viticultural precincts of Barossa Valley. The Lehmann team take aim at constructing a full flavoured, seamless wine that's consistent with the enduring Barossa style of Shiraz, robustly flavoured yet gentle on the palate, generous yet finely balanced. Parcels of fruit are crushed into fermenters and treated to a term of cold soak for optimal extraction, the musts are vinified on skins over the course of a fortnight, followed by transfer to a selection of fine French oak hogsheads for a year's maturation.
 
Crimson with dark garnet hues. An articulate nose of lively black cherries, brambles and chocolatey French oak, garnished by twists of the pepper mill. A deeply layered palate, showing flavours of currants and plum, liquorice and mellow, dark chocolate oak. Drinking beautifully and will continue to evolve handsomely, the perfect accompaniment to meats or braises, recipes calling on chorizo or Grana padano.

Peter Lehmann Margaret Semillon

Peter Lehmann named Margaret after his wife, she is also an enthusiast of Semillon and outspoken advocate of all things Barossa. Small amounts are stored and matured at Lehmann's Tanunda Cellars for the discerning wine enthusiast who appreciates the delicious, rich, full flavoured characters of bottle aged Semillon. Margaret is crafted from the very best Semillon of vintage, precious parcels from a 1923 planting owned by the Fiebiger Family at Vine Vale and a 1936 planting owned by the Scholz family at Light Pass in the heart of the Barossa.

Peter Lehmann rightly espouses Barossa Semillon as a unique style, the estate is justly rewarded with a resource of the choicest vineyards. Lehmann has always had enormous faith in Barossa Semillon but it has been sorely challenged over the past thirty years. The commitment stands and some very old Semillon vines have been preserved. Released as a five year old, Margaret is a fruit driven, deliciously dry white which reflects Lehmann's passion. Grapes are picked early and vinified at lower temperatures for a fortnight, clarified and bottled immediately upon completion, unwooded and unoaked, followed by an extended cellaring.
 
Vibrant gold, tinges of green. Lively bouquet of lemon zest, lanolin and beeswax, lemongrass aromas and citrus acidity belie its age. Youthful and fresh, paradoxically shows remarkable complexity after five years in bottle, a zesty, tight mineral acidity, an effusive layered palate, pleasingly dry before an elongated, zesty finish. A superb accompaniment to scallops, fresh fishes and white meat roasts.

Peter Lehmann's finest of vintage Cabernet Sauvignon, collated from exceptional, low yielding sites in the Ebenezer and Light Pass, Rosedale, Vinevale and Tanunda sub-regions of Barossa. Over the years, an elite tally of superior vineyards which produce the best Cabernet wine have been identified, many planted over sixty years ago. These older, low yielding sites grow fruit that displays classic lifted cassis and violet characters of great Cabernet Sauvignon. Components are vinified and macerated on skins for up to a fortnight with some partial barrel ferments, followed by pressing and clarification, before maturation in French oak hogsheads for fifteen months.
 
Deeply coloured with dense centre. Inviting aromas of blackcurrant, cedar box and mint. The palate shows defined Cabernet cassis, chocolates and vanilla, a superb integration of oak and fruit, before a firm, fine grained tannin finish. Mentor is designed to soften and increase in complexity, emerging as a wine of immense power and richness. Stonewell is the very best of vintage, one of the new world's great Shiraz. A powerful, stately wine, Stonewell is the jewel in the crown of Peter Lehmann's most spectacular efforts, the grapes are drawn from the lowest yielding, old vine blocks in all Barossa Valley. Some planted well over a century ago, produce frugal bunches with parched berries, precious little black gems which are at the heart of Stonewell Shiraz. A wine of great intensity and refined muscularity, which demands time under the Lehmann estate cellars before release.

Usually no more than a dozen small, very mature vineyards are selected each year, the oldest planted in 1885. The berries are small and sparse with crops typically less than 1½ tons an acre. Stonewell is about the pedigree of these sites and the knowledge which has been passed from each generation of growers to the next. An assemblage of parcels from grand old Barossa districts, around a core of fruit from the estate vineyad on Stonewell Road in Marananga. Grapes are macerated on skins for up to a fortnight before a course of barrel ferments, a small batch basket press and clarification, followed by a year's maturation in a selection of French oak hogsheads.
 
Dense black centre with a deep garnet rim. Bouquet of dark chocolate and black forest fruits with hints of mint. A wine of great dignity, its structure is superbly taut, exhibiting intense depth of fruit reined in by firm tannins. Made in strictly limited quantities, a wine for posterity. Savour with rich game dishes, roast beef and hard cheese.

Every now and then, Peter Lehmann releases a rare jewel from deep within the cellar. The King is a superb fortified wine of great distinction which has laid undisturbed in the bottle for many years under the Peter Lehmann Tanunda Cellars. Twelve years old upon release, The King is showing the benefits of extended bottle age. A rich and mature cepage of Shiraz with Touriga Nacional, grown to good Barossa vineyards, the King must be decanted carefully, as a vintage Port of this distinction will show some sediment and crust. A treasure of a wine.

Peter Lehmann maintains the tradition of reserving a few barrels of fortified from each vintage and cellaring the bottled contents to mature. A beautifully made wine which has developed a deep velvet appearance and luscious characters with a lift of spirit on the nose. Shiraz and Touriga Nacional are vinified on skins for three to four days, a neutral brandy spirit is then added to arrest fermentations. Following a further ten days maceration on skins, batches are pressed, clarified and aged twelve months in a selection of older oak barrels. Components are racked and assembled, bottled and held under the Peter Lehmann Tanunda cellars for maturation until ready to release. The King is a vegan friendly wine. Alcohol 19.0%
 
Deep mahogany colour, brick robes. Deeply complex bouquet showing hints of liquorice and black cherries, almond and festive cake. The palate shows wonderful richness, full of nutty complexity and fine fruited, without being cloyingly sweet. Whilst richly mouthfilling, The King shows a taut structure and finishes remarkably velvety, spicy and dry, as do all the great Ports of the world, an intensely regal wine.
