Petaluma Hanlin Hill Riesling

From an almost perfect Riesling vineyard, careful pruning, sorting and selection, ensures that only the healthiest grapes are included. One of Australia's perennially feted Riesling, from fruit picked off old vines on Petaluma's Hanlin Hill Vineyard, planted in 1968 to the most easterly slope and highest aspects in all of Valley Clare. Late picked for optimal flavour development, yet paradoxically elegant and dry, the ideal choice to accompany grilled whiting, cornish hen or the traditional Coquilles St Jacques.

Established by Brian Croser in 1976, Petaluma are one of Australia's most eminent labels and artisanal crafters of flagship white wines. Hand picked grapes are transported to the Petaluma winery in Piccadilly Valley and processed immediately. Bunches are de-stemmed, the berries gently crushed, chilled to less than 5C and treated to a Willmes tank press. The free run juices are cold settled in tank and clarified without filtration. This bright, clear juice is then racked into fermenters and inoculated to a choice Petaluma yeast. A cool fermentation at 10C to 13C ensues over the next several weeks, at sugar dryness, the finished Hanlin Hill is chilled before a gentle filtration to bottle.
 
Light, pale straw in colour. Lovely bright floral aromas of lemon blossom and passionfruit are backed up on the palate by pristine, intense lemon/ limes, with some crunchy apple thrown in. Slatey minerality, a hallmark of the Hanlin Hill Vineyard for three decades, combined with high natural acidity to produce a wine that is very drinkable in its youth, while offering all the qualities of a great, long lived Clare Valley Riesling.

One of the new world's most distinguished Riesling, a sophisticated effort, floral and delicate and poised, Petaluma displays refreshing lemon and lime characters coupled with a wonderful balance which has been the hallmark of this elite vineyard since the inaugural 1979 vintage. At 1670 feet above sea level, Hanlin Hill is magnificent for its higher elevation and superior exposure to the cooling afternoon sea breezes. Another great edition in a long succession of superb Clare Valley Rieslings from the distinguished Vineyard at Hanlin Hill.

Hand picked Riesling is delivered to Petaluma for immediate processing. The bunches are de-stemmed, crushed and chilled to less than 5C then treated to Willmes tank presses. The free run juice is cold settled for a natural clarification then racked to fermentation tanks and inoculated. Fermentation is monitored over several weeks at temperatures of 10C to 13C rising to 17C over the last few grams of sugar. The wine is chilled to below 0C and the yeast allowed to settle. A gentle filtration retains all the fruit, dulcet aromas and lavish flavours.
 
Pale golden straw. A delicate, floral wine displaying minerality and lemon lime perfumes. Forward, mouth filling and generous, exceptional depth of layered fruit and distinctive characters abound, a seductive mouthful of bosc pear and white peaches, lime and green tea flavours. The passionfruit, pear and apple expressions are backed up by lovely intense lemon-limes with a slatey, minerality that lingers long and dry upon a highly polished finish.

Langtons Distinguished Classification. A powerful yet elegant wine, enriched by the extravagance of barrel ferments, new French oak and battonage. Petaluma assembles Chardonnay from an archive of superior blocks in Piccadilly Valley, all are fortuitious microclimes, blessed by slow ripening conditions, very similar to Chardonnay's ancestral home in La Bourgogne. These splendid sites are closely planted and fastidiously managed through strict regimens of shoot and fruit thinning, to achieve the most meagre yields of peerless quality Chardonnay.

Grapes are all hand picked, a portion are whole bunch pressed, the balance are gently destemmed, chilled and crushed. Following several days days of cold settling, most of the partially clarified juices are filled to a high proportion of new Dargaud et Jaegle French Vosges oak barriques and hogsheads for vinification. Upon completion to sugar dryness, barrels are racked and inoculated through Petaluma's own native bacteria. The unique bugs present at malolactic impart a lovely creaminess and contribute textural mouthfeel. Batches are treated to regular lees stirring battonage over the course of several months, before being racked and rested for the final assemblage.
 
Bright, light straw colour. Abundant white peach and nectarine aromas, gentle toasty smoke. A creamy textured palate, refreshing acidity contributes zing to support the distinctive, nutty sweet fruit characters, leading to a dry finish without hardness. A very textured wine with lovely lingering acidity in a drink now style which will evolve beautifully, one of nature's wonders from Piccadilly Valley.
Peter Dennis Cabernet Sauvignon

Exclusively estate grown Cabernet Sauvignon from the Peter Dennis Nindethana vineyard at McLaren Flat on the eastern side of McLaren Vale. The beautifull property is fortuitously situated at the base of Mount Lofty Ranges where the soil, climate and rainfall are a bliss for viticulture. Fruit is vinified in traditional open fermenters followed by an old fashioned basket press and fifteen months oak maturation. An intense Cabernet nose of currant, sweet violets and cassis resolves on a mouth filling McLaren Vale palate, layered with lozenge and dark berry fruit characters.

Egerton Dennis made a major contribution to the establishment of McLaren Vale as an internationally renowned wine region. His son remains a hands on viticulturallist who knows every vine by name. An immensely satisfying Aussie style of Grenache from the Peter Dennis estate vineyard adjacent the preeminent terroirs of Tatachilla and Kangarilla Roads. Fermented on skins for optimal extractions before feeding through a gentle basket press, a year's maturation in Fench and American oak barriques achieves a brightly lit style of lifted cherry fruit and lithe, supple tannins.

Egerton E S Dennis settled on ninety acres of vineyard at McLaren Flat after serving in the RAAF. Ege pioneered the production of Mead and sold his crop of wine grapes to some of Australia's most eminent brands before founding his own label in 1971, with the object of converting the high quality fruit into pure, estate made wines. Since establishment, Dennis Wines have collected hundreds of medals and accolades at national and international taste offs, twice claiming the revered Bushing King awards for best wine at the McLaren Vale Winemakers Exhibition.

Grapes are harvested throughout the cool of early morning and vinified at 24C in open fermenters, treated to a continuous gentle agitation of the cap and twice daily pumpovers. After several days of ferment on skins, juices are run off to a basket press and returned to the free runs. Following completion of malolactic, Peter Dennis is matured for a year in a selection of American and French oak hogsheads.
 
Bright, dark scarlet colour. Luscious nose of coffee, cherries and plum, pepper, tarry earth and baking spice. Big, full bodied and soft to the palate, characterised by fresh fruit flavours of blackberry and plums, laced with black pepper, supported by a lean firm acid/ tannin structure helping to round out the finish. The ideal accompaniment to roast meats, grilled steak and hard cheese.

Peter Lehmann's story with Noble Semilon goes back many years, when Andrew Wigan had the good fortune of experiencing vintage within the vineyards at Chateau d'Yquem, home to the greatest sweet white wine in the world. What he had assumed to be spoilage, was in fact Botrytis Cinerea. Traditionally, Botrytis affected wines are the most complex and longest lived of all. The Barossa Valley is an ideal region for late harvest, given the quality of local Semillon and the warm conditions that continue well into vintage.

Walking through the vineyards of Chateau d'Yquem, Andrew Wigan could see fruit in the same condition as what he'd experienced back home. Armed with the confidence that Botrytis Cinerea in the Barossa was identical to Sauternes, Wigan returned fully determined to create Peter Lehmann's own expression of Botrytis Semillon. Made exclusively from grapes picked at the Peter Lehmann Semillon vineyard, along the banks of the River Para, when infection of the Semillon is perfect. The grapes are crushed and left on skins overnight before being pressed the next day. Juices are clarified and treated to a mix of fermenters or French oak hogsheads for six months before bottling.
 
Brightly polished gold hues. Classical aromas of lime marmalade, dried pear and a hint of apricot kernel. Stylish, more-ish and luscious, delicious with dried currant and apricot flavours, complemented by fully integrated French oak, pierced by superb natural acids. A wine of remarkable intensity and superb weight, multi dimensional fruit, everywhere on the middle palate, beckoning for another sip.

The Barossa stands amongst the great wine regions of the world, it's finest editions of Shiraz can express a magical diversity in flavour, style and texture. Parcels of fruit collated from mature, low yielding sites in the Stonewell, Light Pass and Vine Vale districts, are vinified and macerated on skins for up to a fortnight, along with some partial barrel ferments. The diversity of terroir is reflected in the finished wine, soils, elevation and vine age vary from one site to the next. After pressing and clarification, Eight Songs is matured in completely new French oak hogsheads for eighteen months, followed by a further period of bottle ageing under the Peter Lehmann cellars before release. Dark cherry colour, garnet rim. Lashings of dark chocolate and black plums with just the first hints of attractive bottle development. The palate shows dark plums, choc/ mocha notes with hints of vanillin undertones. The seamless integration of opulent fruit and velvety tannins creates an elegant expression of Barossa Shiraz at its sensuous best. Eight Songs resonate alongside rare beef or roast game, making sweet music alongside aged cheddar or stilton.
