Margaret River does the Sauvignon Blanc so very well, some of the smaller boutique winemakers dotting the coast seem to have the magic touch with this rich and aromatic style of wine. Forester Estate focus more specifically on unique vineyard sites with exceptional terroir to construct the essential Margaret River Sauvignon Blanc. They have increased palate structure and complexity through partial barrel fermentation and storage on lees. A vigorously fruit driven wine, subtley oaked, eminently suited to creamy pastas and the freshest seafood.

An assemblage of fruit from the labour intensive, open lyre trellis Home Block on Wildwood Road and other good vineyards at Yallingup. An east west row orientation limits afternoon sunlight on the berries. Moderate sugar levels and good natural acidity ensure the superb varietal characters are well preserved. Hand picked grapes are held in cold storage overnight after the fruit has been passed through the crusher, to eliminate the need for must chilling, increase palate weight and contribute texture. A cool vinification through the action of choice yeasts ensues, half the components are sent to a selection of seasoned French oak barriques for several months on light solids. Alcohol 13.0%
 
Pale green/ straw colour. A slightly more serious style showing clean and focused characters of citrus, nettles, dried herbs and flint, with a touch of smoke adding complexity from partial barrel fermentation in one year old oak barriques. A fuller palate that offers great texture and freshness with dried herbs and citrus at the forefront. The wine finishes long and clean with lingering herbaceous characters and mineral acidity.

The classically dry Margaret River style, though pleasingly not completely dry, Forester Estate is saturated with fully ripe, rich fruit, unfettered by any oak. Semillon and Sauvignon Blanc is sourced from neighbouring properties in the northern Yallingup sub region of Margaret River. Direct input from Forester's viticulturist ensures well balanced canopies and crops are grown for this ripe and judiciously unwooded white. A highly regional, vital white wine that goes down easy with seafood, approachable and satisfying, innately suited to good Al fresco cuisine.

A splendid component of Semillon gives this wine plenty of strong regional citrus and herbaceous characters. Modern white winemaking techniques are employed, temperature control is considered critical from the moment the fruit reaches the winery. Grapes are destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The must is cold settled for two to three days before being racked and clarified into fermenters, a range of specially selected yeasts are employed. A small portion of oak barrel ferments and maturation are employed to add texture and complexity, achieving a flavoursome young white in the inimitable Forester style. Alcohol 13.0%

Showing dried herbs, citrus and pea pod flavours right through the long, crisp palate. Fraser Gallop Semillon Sauvignon

Fraser Gallop aim to create a wine which has true elegance, fine texture and ample complexity as well as lively, fresh fruit character. Semillon is sourced from Wilyabrup where it can mature past the green, herbal notes to the riper spectrum of flavours such as lemongrass and quince. Sauvignon Blanc comes from the cooler sub region of Karridale, an area which produces finer, more elegant berries with fresher flavours. The classic Margaret River white style, eminently drinkable upon release, a wine which is more than just simple fruit flavours.

Semillon and Sauvignon Blanc are harvested in the cool hours of morning and delivered promptly to the crush pad. Grapes are de-stemmed, crushed and gently pumped through a chiller on way to the Bucher XPF 80 press to get the must down to 8C. Juices are settled at 8C, racked off gross lees and warmed to 16C for fermentation. The juices are fermented in tank with two different yeasts to maintain freshness, bright fruit flavours and aromatics. A small proportion is fermented in new and one year old French oak barriques which adds to the complexity, structure and length of flavour. Sulphites are added upon completion to deter malolactic. The wine was protein and cold stabilised and cross flow filtered.
 
Pale straw with green hues. Gooseberries and passionfruit, lemongrass and fruit jube bouquets, rich bubblegum esters fade away to reveal a mineral edged wine. The palate is chalky as the fresh crispness of acidity sits well with supple sweetness. Lime and juniper berries make for a very delicious style. A well balanced wine with lingering flavours, a nice complexity that keeps you coming back for more.
Fresita Sparkling Chardonnay Sauvignon Strawberry

Fresita Sparkling is a base wine of Chardonnay and Sauvignon Blanc topped up with 3% natural strawberry pulp. This most exquisite of sparkling fruity wines is naturally fermented with selected yeasts that give the Fresita it's magical flavours. The fresh and natural strawberry pulp is added to the sparkling wine before being bottled thus creating a fine, pleasant blend of aromas that result in a balanced and attractive celebration sparkler. Fresita is served chilled and is absolutely insatiable by itself as aperitif or as an an accompaniement to hors d'oeuvres and desserts.

Chile is considered one of the best viticultural regions in the world. Natural geographical barriers have protected it from the arrival of Phylloxera and other aphids. The absence of these threats allows the Fresita Vina Manquehue winery and all Chilean producers to use the very minimum of chemical protection for the vines, leaving them to grow in the most natural conditions possible. Vina Manquehue received the initial selected French vines especially brought to Chile by the Rabat family in 1927. The technology applied to the management and production of vineyards has evolved with the years, and today the vineyard has a large, modern infra-structure that allows it to guarantee the quality of each wine.
 
The colour and appearance is a fresh dark pink. There is a unique effervescence that is fine and creamy, the sparkling fizz of this luxurious extends to into the air above the glass and remains salmon pink until burst. The nose is very rich, citrussy, honey-like. There are beautiful bouquets of praline, almond, stone fruits especially peaches and wisps of white chocolate. The palate is creamy, entangling the senses with brilliantly balanced flavours of luscious desserts based on fresh strawberries. While not overly sweet, this is a fruity wine in the truest sense and leaves the palate with a perfect finish.

Gapsted Ballerina Canopy Sauvignon Blanc
King Valley
The high altitude, cool ripening Gapsted vineyard at Whitfield in Valley King, facing east at an elevation of 375 metres, is ideally suited to harvests of the finest Sauvignon Blanc. Protected from the hot afternoon sun by hills behind the property, the managed canopy delivers vintages which are fully endowed with an intensity of aromaticness and flavour. As is always the case with good fruit, the wine virtually makes itself. Revealing just a hint of fine tangy acidity, Gapsted is lively, wonderfully balanced and refreshingly crisp, all the way to the finish.

The earlier parts of summer in Victoria's highlands are cool and dry, contributing to the health of Gapsted's vines. Warm days develop ripe tropical fruit characters and the cool nights ensure crisp, grassy Sauvignon Blanc flavours. Conditions in the latter part of the growing season encourage ripeness, full development and fleshyness in the grapes. Sauvignon Blanc is harvested throughout the chill of night, grapes are gently air bag pressed and only the free run juices are retained. Racked to fermenters, crushed and settled to collect much of the flavour from skins, juices are inoculated with choice yeasts and treated to a slow, cool vinification aimed at preserving the vital fruit characters. Alcohol 11.2%
 
Pale straw with green hues. Fragrant nose of nectarine, lychees and lime. A refreshing, balanced palate of citrus and sweet, green tropical fruits, silky honeydew softness fills out the mid palate and adds lovely length. Full of intense cool climate Sauvignon Blanc fruit characters, an envigorating aperitif style and an excellent food wine to enjoy today alongside spring asparagus, shaved parmesan, a squeeze of lemon and virgin oil.

Low yielding vines grown to a cool climate is what makes Giesen's wines so unique. Complex fruit aromas make them enjoyable whilst young, refreshing acidity gives the wines backbone for long aging in the bottle. Giesen aims for consistency of character and quality from vintage to vintage. Following harvest and pressing, the juices are processed under anaerobic conditions and coolly vinified in fermenters to preserve the fresh vibrant fruit inherent to Sauvignon Blanc, ensnaring the vibrant expressions of the vineyard and fruit. After inoculation with special yeasts and a temperature controlled fermentation, Giesen is stabilised and assembled into the finished wine, filtered and fined.
 
Pale yellow colour with green hues. The aroma is fresh and vibrant with a base of rich tropical fruit, dominated especially when young, by limes and lemongrass as well as fresh herbal notes. A lovely weight of fruit on the mid palate with flavours reminiscent of gooseberry and citrus, surrounded by a juicy, pure acidity giving the wine it's zesty exuberance. Charmingly laden with classic nettle flavours, a crisp, dry finish.

The palate has intense tropical flavours combined with classic nettle and gooseberry on a medium bodied, textural palate. Focused acidity, combined with dry, puckery orchard citrus characters, provide length to a refreshing zesty finish. Match with NZ seafood, fried fishes and white meat terrines.
