Xanadu were one of the first to choose their ground in Margaret River. Exceptional growing seasons and good ripening conditions are what makes Xanadu's vineyards so special, the vines thrive under the favourable climes. Each parcel of Semillon and Sauvignon Blanc is harvested to a schedule determined by the optimum level of physiological ripeness. Fruit is crushed, destemmed and chilled before pressing. The settled, clean juices are vinified in temperature controlled fermenters through the action of aromatic yeast strains, to retain fresh varietal characteristics. The final components are selected on the basis of synergy, to be assembled and treated to a gentle fining and stabilisation.
 
Pale straw with slight green hue. A vibrant bouquet displays freshly squeezed citrus characters with passionfruit and dried herbs in the background. Medium bodied, the lively palate offers zesty lemon/ lime flavours combined whith guava and hints of thyme and spice. An easy drinking Margaret River style with wonderful purity, fruit driven, honest and lip smacking with crisp acidity and a clean refreshing finish.
Yalumba Christobels Semillon Sauvignon

Christobel Hill Smith was an integral part of the personality around the Yalumba household and wineworks for over sixty years, her vitality and charm bewitched all those around her. Her eponymous wine is equally charismatic, two thirds Semillon and a third of Sauvignon Blanc, fashioned into a well structured Barossa white supported by exquisite mineral slateyness. The aromaticnes and pungency of Sauvignon Blanc adorn the beautiful fresh flavours and lithe natural acidity.

Harvests of Semillon and Sauvignon Blanc are sourced from loyal Barossa growers, some have been supplying Yalumba for generations. Great care is taken to pick the grapes early to ensure maximum freshness and delicacy. Christobel's Semillon is always picked early to retain freshness and capture the classic varietal lemon sorbet flavour. Grapes are gently pressed to extract clean free run juices, minimally handled to protect fresh fruit characters. Parcels are inoculated to neutral yeasts and vinified at cooler temperatures to maximise the varietal expression and retain essential Sauvignon Blanc aromatic complexity. The finished components are left on light lees until assemblage.
 
Bright green hue. Aromas of lemon verbena, orange blossom and lantana, each variety of grape contributing its own charm. Semillon defines the palate, giving it light body with citrus blossom flavours, Sauvignon Blanc gives the palate zest and crunch. A wonderfully fruit driven wine for current drinking alongside fresh seafood, salads and Asian style faire.

Grapes are predominantly sourced from good vineyards in the Yarra Valley. Yarra Ridge retains a large inventory of reliable growers, ensuring the highest quality of fruit. Many viticultural innovations have been introduced, among them are trellising systems such as the geneva double curtain, Scott Henry and Lyre. A combination of relatively low yields and limited rainfalls translate into smaller harvests of higher quality Sauvignon Blanc. A cool vinification takes place in refrigerated fermenters with choice yeasts. Juices are kept separate from skins to reduce phenolics and ensure clean varietal flavours are preserved. A prompt and early bottling retains all the fresh fruit characters.

The nose displays bright, fresh aromas of snow pea and green bean, fragrances of honey and spice, hints of nettle, lifted citrus and fresh cut grass, followed by rich tropical nuances. The exciting bouquet leads onto a refreshing palate, showing citrus and gooseberry, flavours of lychee combined with a zesty acidity to produce a refreshing and elegant wine. Yarra Ridge is always outstanding as a food wine, easily mated to Al fresco cuisine, just perfect on it's own or with good company.

Three quarters Semillon, the balance in Sauvignon Blanc, from fruit selectively hand picked and sorted off dry grown estate vines at Gruyere. Grapes are gently crushed to encourage skin contact and infuse flavour, batches are manually basket pressed with minimal settling time before filling to seasoned French oak barriques for primary ferments and a rich course of malolactic, followed by eleven months maturation. A generously proportioned Semillon Sauvignon of ample palate weight and profound generosity of oak developed fruit.

From a parcel of auspicious vines, planted to wind blown silts over high mineral soils on the north facing G2 Block at Seaview Vineyard. The gently sloping, warmly sheltered coastal blocks, just eighty metres above sea level, have long inspired the Yealands team to create a judiciously oaked Sauvignon Blanc. A harvest of grapes in the riper spectrum is essential to such a wine, a choice component is treated to a course of barrel ferments in a selection of seasoned French oak puncheons. A richer, flint and pineapple style of Marlborough Sauvignon Blanc.

Yealands S1 Single Block Sauvignon Blanc

The marvelous S1 block is a sheltered, relatively warm site within the splendid vistas of Seaview Vineyard, on a north facing plateau at 160m above sea level, refreshed by maritime winds that blow in from the Cludy Bay coast. Fruit is crushed and destemmed, chilled and gently pressed, the clearest juices are racked off for a long, cool ferment to capture the full opulence of S1 vineyard grapes on the vine. Blackcurrant leaf, wet stones and nectarine, textural and fragrant, a lucid articulation of the unique terroir from a very special site.

A collation of parcels, harvested over the course of three days, off four elite blocks at Seaview Vineyard in Awatere. Fruit is crushed and destemmed, gently pressed and cold settled for three days. The clear run juices are racked off and separately fermented through the action of two select yeasts. A long, slow vinification at lower temperatures retains and enhances the pure, clean phenolic free aromatics. Batches are held on gross sedimentery lees for a term of three months, treated to a course of stirring battonage, building structure and enriching the texture, followed by a final assemblage into the finished wine. Alcohol 13.0%
 
Light straw hues. Perfumed nose of calico, lychees and oyster shell, snow pea and garden greens. A pristine palate of juicy guava flavours, blackcurrant leaf and south seas fruit, layered with bright citrus characters, seasoned by a cut of fresh herbs. The palate is textured and elegant, resolving on the distinctive mineral finish that marks Yealands as a superior single vineyard wine.
