Hellyers Road was established by a co operative of Burnie dairy farmers who envisioned the creation of an accord between the finest Whisky Malt and dollops of the freshest local cream. A decadently moreish interpretation of the finest Tasmania Malt, irresistible on its own and essential for the most wickedly indulgent desserts, white chocolates and coconut, malt-o-milk biscuit, a drizzle of honey and orange creams, the palate is rich and textural, an indulgence of milk chocolate saturated malt baked biscuits, coconut creams and vanillan cherry ripe.

The Original Pure Australian Single Malt, a flagship Whisky distilled from Tasmanian malted barley, roaring 40s rainwater and yeast, matured in American white oak barrels. The distillation process begins by milling malted barley and producing a distinctive wash, to ensure a far greater level of quality control and product consistency. Exclusively Tasmanian barley, grown, pure Tasmanian water and special yeasts are the ingredients of this exceptional Malt. Hellyers Road has not been chill filtered and does not contain any artificial colouring.

Distilled from a malt of imported Inverness Highlands grown barley, aged in a selection of pre loved American Bourbon oak and bottled at a judicious 46%. A whiff of burnt fern smokiness greets the nose, pastoral peat notes over complex citrus, oranges and lemon, a dried apricot sweet palate supported by the warmth of layered Malt richness. A lingering aftertaste conjures up rain forests, layers of smoke, pepper and peatyness before a lingering fruit filled finish, malty, mealy, delicately complex citrus rind, salinity, grainyness and dried pith.

Highland Park's noble Peats are cut by hand from Hobbister Moor, only seven miles from the Distillery. Over nine thousand years old and nearly four metres deep, it’s composed of layer upon layer of densely compacted vegetation, the DNA of Orkney. Under constant onslaught by ferocious winds, no trees survive on the island’s exposed and barren moor, Orkney Peat is woodless, a unique mix that's cut in April, dried naturally over summer and burned in our ancient kilns, where its heathery aromatic smoke infuses the malting barley.

Highland Park are one of only a handful of Distilleries to turn Malt by hand, every eight hours, seven days a week, a laborious yet essential process which infuses the aromatic smokiness which makes Highland Park so distinctive. Obsessed with the quality of casks employed for maturation, it all begins with the cutting of oak staves at precisely 45°, sealing in the Spirit, exactly how Orkney's Viking ancestors made their longships watertight! Sent to to Spain for a term of Oloroso Sherry, before repatriation to Orkney to be filled with Highland Malt for extended age.
