The Evans & Tate team have called upon a harvest of Cabernet Sauvignon from a special block of vine at Wilyabrup. Grapes are all hand picked, crushed and destemmed for several days of cold soak. Batches are inoculated and thoroughly aerated over the course of ten days to optimize colour and ensure softness. The musts are pressed for completion of ferments, racked off lees into a selection of seasoned and new French oak barriques and hogsheads for malolactic and sixteen months maturation.
 
Deep garnet/ purple colour. Lovely bright red strawberry fruit followed by a hint of vanilla showing through on the nose, a balance of bramble/cassis and cherry/plum over supple influence of oak that seems just right. Juicy blood plum and pomegranate flavours, supported by the solid Cabernet structure. Medium bodied, the smooth yet rich, lingering finish is complimented by a length of stylish, firm and judicious tannins.

Verdelho and Shiraz, Semillon and Sauvignon Blanc, the region yields the finest harvests in the new world, Breathing Space have assembled a choice parcel of each, to be fashioned into a satiating pink wine of unadultarated savouryness, fleshyness and style. The Verdelho component is treated to a rich course of barrel ferments in French oak puncheons, achieving a delightfully seductive, tittilatingly perfumed, Turkish delight and rose petal bouquet.

Sourced from choice vineyards, Breathing Space puts a focus on capturing the intense Margaret River regionality while retaining eloquence of fruit character. The highly favourable mesoclimes are further tempered by prevailing winds from the Indian Ocean which deliver excellent ripening conditions throughout the growing season. Hand picked throughout the cool of early morning, whole bunches are treated to a gentle press for extraction of the purest free run juices. The inclusion of light solids in the ferments contributes texture, aromaticness and complexity. After several months ageing on yeast lees, components are assembled and bottled unfined.
 
Brilliant pale straw with a light green hue. Ripe aromas of lychee and pear, paw paw and apple gala, mango and tropical fruits. Time spent on yeast lees has added white bread notes, barrel ferments in large format French oak has infused luxurious complexities. A richly flavoured palate brimming with lychee and pear, ripe apples and stonefruit, which continue on to a long, dry and refreshing finish.

Sourced from fine vineyards, Breathing Space puts a focus on capturing the intense Margaret River regionality while retaining the eloquence of varietal character. The well protected, south facing slope of the central Wilyabrup vineyard provides a cool pocket within an otherwise warmer location. These more temperate mesoclimes are further balanced by cooling breezes from the Indian Ocean, which deliver excellent ripening conditions throughout the growing season. Breathing Space wines are styled for fun, designed to be easy to drink and allow one to escape the chaos of the big city. Minimal winemaking influence allows the fruit to be the defining factor in the finished wine.
 
Light pale straw hue. Good varietal characteristics show through on the nose, tropical and stonefruit aromas. A zesty upfront palate of citrus and ripe orchard characters is followed by green vegetable and herbaceousness, over a backdrop of complex muted nettle and green pea notes. Clean, beautifully balanced and lingering, Breathing Space makes for easy and enjoyable drinking.

Fruit is sourced from vineyards which can provide requisite quality of fruit exhibiting great freshness and flavour intensity at low baume levels. Once the fruit has reached the desired level of natural acidity, harvest is carried out throughout the cool of night and early morning. Bunches are destemmed and softly pressed to extract the finest free run juices, settled and brought to temperature before being racked off solids. Upon completion, batches are racked off lees to retain primary fruit, bottled while fresh and vital to retain brisk vitality and crisp mouth feel.
 
Pale to mid straw with a fresh, light green rim. A showcase of the clean, generous Margaret River style, intense primary fruit aromas, lemongrass and ripe kiwi fruits, fresh green peas with a delicate herbal lift. Shows a splendid core of juicy flavours, green apples, thistle and chopped herbs all fill the mouth, building great length of flavour. Batches of the best grapes showing intense varietal flavours and high natural acidity at lower baumes levels are selected from good Margaret River vineyards. On completion of ferments, parcels are sulphured, chilled and coarse clarified to avoid extended contact on yeast lees. Some components are kept on light yeast lees for a period, building texture. The batches are then assembled, followed by a fine earth filtration. Minimal handling throughout achieves an intensely aromatic and varietally expressive wine.
 
Brilliant pale straw with fresh green hue. Lifted tropical aromas of passionfruit, lychee and gooseberry, a touch of nectarine from the Chardonnay. Semillon contributes pungent characters of grassiness and slate. The palate is juicy and succulent, exhibiting nectarine and tropical fruits, culminating in a fresh citrus finish. Juicy and well balanced, with a touch of maritime savouryness, a marvelous accompaniment to calamari, avocado and crab.

Shiraz is picked between midnight and early morning to ensure it reaches the winery as cold as possible. Grapes are gently destemmed and transferred to fermenters for three or four days cold soak. Batches are vinified at moderate temperatures for several days, treated to seed removal and thoroughly aerated every eight hours. Upon completion, each parcel is separately pressed and racked off yeast lees. Components are matured in a combination of seasoned French and American oak barrels to integrate tannins and fruit while introducing complexity.

Vines are treated to shoot thinning and bunch removal to achieve perfect balance and even ripening. Parcels of Cabernet Sauvignon are harvested at night and separately cold soaked for several days on skins in small fermenters to maximise colour intensity and bright, fresh fruit characters. Ten days of vinification and a further seventeen of maceration are followed by pressing into a combination of seasoned and new French oak hogsheads and barriques for completion of malolactic. After twelve to fifteen months maturation, components are assembled into the finished wine and bottled unfined for a term of bottle age before release.
 
Deep purple black with vibrant purple rim. Cool Cabernet characters of redcurrant and tobacco leaf overlay riper characters of cassis, green olive and blood plum. A medium bodied wine with remarkable depth and length of flavour. Underlying notes of cedar, toast and savoury spice from maturation in French oak contributes subtle complexity.

Evans & Tate were at the forefront of the Margaret River's rise to international recognition as one of the world's great winegrowing appellations

Like many tales, Evans & Tate's does not begin in Australia. Lionel Teitelbaum was born in 1899 in a village called Nicopol in the Ukraine. Still a young boy when he emigrated to Australia in 1909, Lionel was bounding with confidence and enthusiasm. Such energy translated into a successful family and business life, creating a solid foundation for the future Tate generations. Lionel ensured that his son John enjoyed the benefits of an education as well as an appreciation of cultural pursuits including art, music and wine.

Evans Tate

As his business career matured, John Tate was able to turn one of his lifelong dreams into reality when he purchased a small vineyard with friend and business partner John Evans. The following year the Tate involvement in the industry became absolute with the purchase of a small winery called Gnangara Wines, located in the historic Swan Valley, just north of Perth.

A state of the art 7500 tonne crush winery, built with this philosophy in mind, is sited at the Lionel Vineyard in Jindong. The winery reflects the professionalism and commitment shown in all areas of the company.

Evans & Tate have invested heavily in cutting edge winemaking equipment, impressive stocks of French and American oak, and the best laboratory facilities. The winery is close to all major vineyard sites from which grapes can be sourced, which gives the winemakers enough freedom to make each parcel of fruit in accordance with it's specific flavour profile and attributes.

The wines of Evans & Tate have consistently merited high critical acclaim and accolades from peers and public alike. "From its Swan Valley base 30 years ago, Evans & Tate became the largest Margaret River winery and producer. Having increased its estate vineyard holdings with the establishment of a large planting in the Jindong area, it raised substantial capital by listing on the Stock Exchange. It then turned its attention eastwards, with the acquisition of Oakridge Estate in the Yarra Valley, followed by Cranswick Wines (since sold). It became a casualty of the downturn in the market in 2005, its future direction uncertain, a merger with a US company aborted in March '07. No single achievement has meant more to the winemaking team than the Trophy for Best Red Wine of the Competition at the 2000 International Wine Challenge in London for Evans & Tate 1999 Margaret River Shiraz. This award was especially significant as it validated the Evans & Tate viticultural and vinicultural philosophy, whilst crystallizing the Margaret River region as a truly world class winegrowing appellation.
