The grapes for [bubbles] are sourced from good vineyards which are highly specialised to yield fruit for sparkling wines. Harvested at optimum flavour ripeness in the cool of the night to preserve delicate fruit flavours, and quickly transported to the winery, the grapes are pressed, chilled and settled to remove solids. The wine is cold fermented to retain fruit aromas and clarified upon completion. Using the Charmat (or tank) process the wine then undergoes a secondary fermentation at low temperature under pressurised vessels. Once the wine has reached the desired sweetness and pressure level, it is stabilised and estate bottled, cannily restricting any contact with oxygen to preserve the fine fruit characters.

The [yellow tail] brand has become the most successful wine in the history of the Australian wine industry. Yellow Tail Sparkling Rosé is a delicious blend of Semillon with Traminer, Shiraz and Frontignac. The fruit is picked early and is handled as gently as possible to minimize skin contact and phenolic extraction. The wine is cold fermented to retain bright fruit flavours and is then clarified. Treated to the traditional Charmat process, [yellow tail] undergoes a secondary fermentation at low temperature in pressurised vessels to create the sparkle. This exclusively estate grown and bottled Cabernet wine is sourced from vineyards which have been established from the ground up to the highest standards of viticulture.

Cabernet Sauvignon is harvested to optimal levels of fruit ripeness and quickly transported to the Yellow Tail wineworks. Grapes are destemmed, crushed and fermented on skins whilst in contact with oak, for maximum colour and extraction of soft tannins. Batches are drained and the skins pressed before a course of malolactic. After settling, a portion is transferred to oak for maturation. Upon completion, batches are assembled, with a view to enhancing complexity, integrating components and softening tannins in the finished. Yellow Tail is then chilled and clarified, stabilised and bottled at the estate's Riverina wineworks.
 
A vibrant, deep purple colour. Bouquets of cherry and currant lead to lifted blackberry and dark chocolate, over hints of vanilla and mint. The palate is full bodied, exhibiting generous, berry fruit characters seasoned by spicy notes. A cabernet wine of structure and length, offering toasty oak and soft velvety tannins at the finish. After selling grapes from his farm to local wineries, Filippo Casella decided in 1969 that it was time for a new generation of Casella to put it's own winemaking skills to use, and Casella Wines was born. Yellow Tail is the nation's oenological ambassador, a label built up around the international thirst for Australia. Yellow Tail enjoys a wide expanse of vineyards in the sunny Riverina from which to source the best Chardonnay. Fruit is gently pressed to retain maximum freshness and flavour. Free run juices are cold fermented with select yeasts, the wine is lightly oaked, clarified and estate bottled.
 
A golden straw colour. Ripe peach and melon aromas, sweet oak nuances. He looks for flavour, acid balance and colour. Casella's goal is to make premium quality, fruit driven red wines with the added complexity of ageing in fine oak, while maintaining the softness and drinkability of [yellow tail]. Cabernet Sauvignon is harvested off closely managed vines at Wrattonbully, crushed and transferred to a mix of oak barrel and fermenters for inoculation to choice yeasts. Upon completion of malolactic the wines are matured and assembled in a selection of new and seasoned American oak barrels.
 
Deep, dark red colour. Aromas of ripe, black cherries, mint and sweet oak reward the senses. Velvety smooth tannins provide excellent structure and length to this complex, elegant wine. Concentrated blackberry and cassis flavours, blackcurrants and plum, well supported by the sleek Cabernet tannins and complemented by a persistence of spicy vanillin oak characters, fragrantly framing the bright berry fruit flavours and lingering on the palate as the clean, flavoursome finish demands another glass. The Casella family has been making wine in the Riverina since 1965

Filippo and Maria Casella emigrated to Australia bringing with them their know-how acquired through three generations of grape-growing and winemaking in Italy. Recognising the potential of the region, Filippo purchased a farm in the town of Yenda, New South Wales. After selling the grapes from his farm to local wineries, he decided in 1969 that it was time for a new generation to put its winemaking skills to use, and the winery was born.

Yellow Tail

John Casella, one of Filippo and Maria's three sons returned to the family business in 1994 and embarked on an ambitious expansion to build a new winery with the mission to blend old world heritage and new world technology. In 2002, Casella brought in Alan Kennett as Chief Winemaker. Alan previously worked with a number of other successful Australian wineries.
