Yarra Ridge Cabernet Sauvignon 2006
Yarra Valley
A Cabernet Sauvignon with elegance, concentration and finesse. Yarra Ridge has made the most of the best fruit which the Yarra Valley can produce, treating the wine to the most exacting standards of vinification, followed by a lengthy maturation under the finest selection of oaks.

Grapes grown to warmer vineyards at the foothills of the Yarra Valley form the backbone of fruit. These sites are perfect for growing Cabernet Sauvignon with ripe flavours and the finest tannins. The cooler aspects of sites at the upper altitudes of the Yarra Valley encourage the late ripening Cabernet Sauvignon to develop slowly and evenly while maintaining natural fruit acidity. The parcels are inoculated and vinified in a range of fermentation vessels to create differing textural components. The parcels were pressed off skins and racked into a combination of prior use French and American oaks for twelve months maturation. The barrels are assessed and assembled into the final wine. Approx 14.3%
 
Deep purple in colour. Aromas of lifted violet and blackcurrant, leafyness, more complex dark berry fruit, strokes of cocoa and buttery oak. Dark and penetrative, assertively fruit driven and fresh, ready to enjoy immediately upon release and certain to develop beautifully.

One of Victoria's most reliable producers of distinctive regional wines, Yarra Ridge design a crisp, golden delicious Chardonnay with prominent varietal fruit flavour, fine structure, persistence and length. Yarra Ridge was an early instigator of the fruit forward Yarra Valley Chardonnay style and has been a staple on fine dining menus across Australia for decades. Ongoing developments in viticultural management and refinements in the vinification have achieved a consistent wine of character and charm to accompany all good faire.

Yarra Ridge collate harvests of Chardonnay grapes from choice Yarra Glen sites, fully mature vineyards husbanded by some of the Yarra Valley's most devoted growers. A diversification of soils and aspects, altitudes and mesoclimes yield fruit with a panoply of complimenting flavour profiles. Favourable terroirs combine with moderate Yarra Valley weather patterns to create the perfect growing conditions for Chardonnay. Irrigation is applied sparingly to maintain balanced vine growth and a steady rate of development. Intense flavours in the grapes are encouraged through a balanced leaf to fruit ratio for even ripening. The end game is a generous fruit driven style with complexity, texture and good varietal definition.
 
Pale straw with lively green hues. A bouquet of freshly cut apples, peaches and grapefruit. An exuberantly flavoured, stylish Yarra Valley white, it begins with a hint of tropicality, driving an impressive array of varietal characters, melon and peach, citrus and grapefruit, rich leesy textures with flourishes of custard apple. Generously flavoured, Yarra Ridge unravels layers of fruit, the finish is crisp, with good length and a refreshingly mineral acidity.

The Yarra Ridge team have captured the distinct expression of Yarra Valley Pinot Noir. Upper Valley fruit, known for it's aromaticness and delicacy, has been combined with components of richer and riper grapes picked off vineyards lower down the valley floor at close proximities to the Yarra Ridge wineworks. The emphasis here is on ageing in seasoned French oak to enhance the fruit, showcasing the velvety nature and sublime cherry, barnyard and rhubarb characters of truly satisfying and memorable Yarra Valley Pinot Noir.

Standards for inclusion into Yarra Ridge Pinot Noir are set to the most exacting specifications. Fruit must express luscious berry characters and distinctive varietal flavours while displaying ripe tannins and favourable acid profiles. Grapes are cold soaked to extract the maximum colour and flavour. Inoculation and vinification is followed by small parcels completing their fermentations in French oak. All parcels underwent full malolactic which softened any harsh acids. Each vineyard parcel is kept separate throughout the winemaking process and reviewed prior to the final assemblage. Yarra Ridge was treated to an extended maturation in a combination of tight grained, French oak barrels.
 
Dark cherry red in colour. Lifted aromas of strawberry and spice, a touch of cranberry, earthiness and hints of subtle oak, leafyness and whisps of cedar. Ripe plums and subtle five spice flavours on the tongue, the palate is soft and generous with doses of sweet and sour red and black cherries, the smoothest tannins are fully integrated with background oak.

Grapes are predominantly sourced from good vineyards in the Yarra Valley. Yarra Ridge retains a large inventory of reliable growers, ensuring the highest quality of fruit. Many viticultural innovations have been introduced, among them are trellising systems such as the geneva double curtain, Scott Henry and Lyre. A combination of relatively low yields and limited rainfalls translate into smaller harvests of higher quality Sauvignon Blanc. A cool vinification takes place in refrigerated fermenters with choice yeasts. Juices are kept separate from skins to reduce phenolics and ensure clean varietal flavours are preserved. A prompt and early bottling retains all the fresh fruit characters.

The nose displays bright, fresh aromas of snow pea and green bean, fragrances of honey and spice, hints of nettle, lifted citrus and fresh cut grass, followed by rich tropical nuances. The exciting bouquet leads onto a refreshing palate, showing citrus and gooseberry, flavours of lychee combined with a zesty acidity to produce a refreshing and elegant wine. Yarra Ridge is always outstanding as a food wine, easily mated to Al fresco cuisine, just perfect on it's own or with good company.

Yarra Ridge is a culmination of the devoted efforts from a highly skilled winemaking team as applied to the fruits of the Yarra Valley's best growers. Shiraz is sourced from vineyards situated on warmer aspects near the Valley floor. The steady, even ripening of grapes encourages development of good flavours and ripe tannins. The individual vineyard parcels were inoculated and vinified in a range of fermenting vessels to enhance the different flavour and tannin profiles. The wines were pressed off skins and racked into a combination of fine grained oaks for ten months maturation. Prior to assembling, the individual barrels are assessed with a view to achieving balance and integration in the final wine. Approx 14.5%
 
Deep red in colour. Aromas of berries and spice are present on the nose, bouquets of lifted white pepper, chocolate, cocoa and lithe oak, herbaceousness and menthol. Ripe plums and subtle five spice flavours combine with smoothly grained tannins, an elegant Shiraz, generously flavoured, the fully integrated oak runs the length of the palate to a long, fruit filled finish. As comfortable with poultry dishes as it is with meats and game, Yarra Ridge mates beautifully with traditional pasta and the best cheese.
Since its inception in 1988, Yarra Ridge has become one of the most successful vineyards in the Yarra Valley

Yarra Ridge was the brainchild of a lawyer, Louis Bialkower, who bought the land in 1982. The following year, Louis planted five hectares to Cabernet Sauvignon, Pinot Noir and Chardonnay. The reputation of Yarra Ridge grew, and from 1989 to 1995 every vintage of Yarra Ridge Chardonnay that was shown at wine competitions claimed a trophy.

Yarra Ridge

The 1992 Chardonnay was judged Best Premium Chardonnay at Australia’s National Wine Show in Canberra. In the following year the 1993 Yarra Ridge Chardonnay won Best Current Vintage Dry White at the same show. Since Beringer Blass entered the scene, in 1993, the Yarra Ridge winery and vineyards have expanded and improved at a dynamic rate. The original five-hectare planting has become 60 hectares, but the philosophy has remained the same. At Yarra Ridge, the wine is made in the vineyard.

The results of these viticultural innovations are extremely encouraging. Fruit ripeness has improved and the incidence of disease has been considerably reduced.
