Introducing a new addition to the Red Claw range, by the founders of Yabby Lake, one of Australia's most eminent winemakers. Handcrafted from estate grown Mornington Pinot Noir, vinified with an uncompromising approach in winemaking, to raise awareness of breast cancer. Pink Claw was created primarily to raise funds for women affected by breast cancer. Quantities are donated to fundraising events and campaigns for Breast Cancer Network Australia. A limited allocation is available for retail, a portion of the profits will also go to BCNA.

Breast Cancer Network Australia works to ensure that women diagnosed with breast cancer, and their families, receive the very best information, treatment, care and support possible, no matter who they are or where they live. BCNA is the peak national organisation for Australians affected by breast cancer. Pinot Noir is sourced from the Yabby Lake vineyard at Moorooduc. The fruit spends up to twenty four hours on skins for extraction of flavours and colour. Juices are run off to tank for cold settling, racked and fermented to dry, followed by six months resting on lees where the wine develops textures and complexity. Pink Claw is bottled without any oak treatment, refreshingly fruit driven and dry.
 
Lipstick rose colour. Lifted strawberry aromas with a complexity of citrus, spice and floral characters. A crisp palate exhibiting red berry fruit, cherries, currant and srawberry over light tannins, before a refreshing, savoury finish. Pink Claw is bone dry and perfectly suited to modern Australian cuisine.

Robert and Mem Kirby planted the first Yabby Lake Vineyard at Red Hill in 1992, following up with extended plantings on the Moorooduc sub region in 1998. Red Claw is the embodiement of collaboration between some of Australia's best winemakers and viticulturalists.

A juggernaut of activity has seen the Yabby Lake vineyards establish a position amongst Victoria's finest. The creation of Red Claw, in reference to freshwater yabbies, has been inspired by the estate's enthusiasm to produce quality wines which are accessible and truly expressive of Mornington Peninsula. Fruit is hand harvested, gently whole bunch pressed in small batches and completely barrel fermented whilst being treated to a course of lees stirring in a combination of new and seasoned French Vosges and Allier oak barriques. Aged on yeast lees for ten months before assembling into a wine that's bright and fresh and with loads of class, an affable Chardonnay that you can take anywhere.
 
Bright intense pale straw color with green tinges. Lifted aromas of clean citrus notes, stonefruit and a hint of spicy French oak. The palate leads off with beautifully textured and rounded fruit intertwined with the natural acidity that runs through the mouth binding the wine and leading into a lovely long complex finish.

Messrs Dexter, McKenna and Kirby know about things Heathcote Shiraz, having conspired to create the region's best rendition of the style. Red Claw is clearly a very special Shiraz, handcrafted from the most intensely flavoured Heathcote fruit, by master Pinot Noir makers Tom Carson and Tod Dexter.

Heathcote is best known for producing Shiraz. The rich red Cambrian soil and dry mild climate provide the idyllic foundation for producing world class wines, a pre-eminent internationally acclaimed Shiraz growing appellation. Yabby Lake have close ties to the region, and have secured fruit from the best vineyards, expressly for the formulation of an accesible and approachable Shiraz wine. Yabby Lake and sibling Heathcote Estate have achieved considerable success, recognition and respect under the guiding hands of experienced and acclaimed winemakers Tod Dexter and Larry McKenna. They have now been joined in their quest for the holy grail by ex Yering Station maestro Tom Carson.
 
Colour is a dark red/purple. Lovely intense Shiraz fruit leaps from the glass. Dark berry fruit, spice and cloves dominate. There is complexity already evident on this brooding young wine with underlying scents of pepper, provincial herbs and classy French oak. The palate is loaded with dark fruited intensity, texture, balance and length of palate.

Their collaborative approach to winemaking and commitment to producing the very finest, has crystallized into remarkable wines.

For everyone at Yabby Lake, the winemaking is all about persistence and vigilance, coupled with a deep seated passion for making supreme wine. The combination of a warm site in a cool region means the Yabby Lake Pinot Gris ripens in good order to produce wines of outstanding quality. The favourable microclimes translate into fully ripened fruit harvested to idyllic conditions. Crop levels are carefully managed to produce the consummate Pinot Gris. Fruit is handpicked and whole bunch pressed into tank. After settling, the major component is racked, while a component is transferred to seasoned oak barrels for fermentation. Parcels are left on lees and stirred fortnightly until bottling.
 
Pale straw with green tinges. The aromas are quite complex showing hints of hay, honey, lychees and a touch of spice. Flavours of orange and sultana, with hints of lychee and cut hay. Sweet fruit is enhanced by a clean, crisp lingering finish.

Yabby Lake are well positioned to produce the most generous Pinot Noir, vinified to traditional burgundian techniques. Significant resources have been devoted to developing Yabby Lake's vineyard to the highest possible standard. An assemblage of Pinot Noir clones MV6, G5V15, 114 and D4V2 for structure and complexity, the inclusion of clone 115 imparts layers of elegance.

Every aspect of Yabby Lake vineyard's establishment was fundamenal to the success of its wines many years later, from soil mapping to climate analysis to vine layout. Pruned and closely managed vines lead to restricted crop levels bearing fruit displaying intense fruit flavours, translating into well balanced wines. Fruit is hand picked and carefully destemed into open fermenters undergoing two or three days of cold soak. After inoculation to cultured yeast and fermentation on skins, the wine is pressed again before transfer into French oak barrels for several months where it completes malolactic, followed by racking and assemblage.
 
Deep crimson in color. The aromas are dominated by cherry, strawberry and dark berry fruits complemented by a touch of spice and underlying French oak. The palate has a lovely soft and velvety texture, with powerful flavours of dark fruits and a finely structured finish. Have it with duck or venison, game dishes and washed rind cheese.

A single block Pinot Noir, clearly marked with the DNA of the site whence it is sourced, Block 5 speaks clearly of its origin, a concentrated wine with a long seamless finish.

Yabby Lake begin with a commitment to listen to the land. To grow only the right varieties, the right clones on the right sites, row by row, block by block. Minimal chemical input in the vineyard is the priority with a move towards organic viticulture. Block 5 is a cépage of Pinot Noir clones MV6 and G5V15 from low yielding vines. The fruit is hand picked in excellent condition with high levels of natural acidity and gently de-stemmed into small open fermenters. Following a three to four day soaking the fermentation peaks at 32°C.The wine was pressed off skins after eleven days into tight grain French oak barriques for a term of malolactic and twelve months maturation, where it remained until February for bottling. Alcohol 14.0%
 
Deep crimson colour. Dark forest berries, black cherry, Asian spice with a brooding density of fruit dominate the aromas. The palate is concentrated and deeply saturated with dark berry fruit. Yabby Lake offers great intensity, persistence and a long seamless finish.
Yabby Lake Chardonnay 2011

Inspired by the great Chardonnays of Burgundy, Yabby Lake are a testament to the unique terroir and climes of the Mornington Peninsula. A blend of two clones, P58 and Mendoza, each planted to a specific regimen of aspects and soil, are exactingly crafted and assembled. A long term commitment to producing the finest Chardonnay has achieved the creation of a truly remarkable wine.

The subtle variations on each block infuse grapes with a great depth of character and personality which is realized in the finished wine. Fruit is hand picked and each block is handled separately to ensure individual parcels achieve their ultimate potential. Bunches are gently whole pressed through small batches into a selection of tight grain French oak barriques. Vinification commences naturally through the action of wild indigenous yeasts and was completes in a little over a fortnight. Yabby Lake is matured ten months on lees without any malolactic ferments before assembling into the final wine. Alcohol 12.0%
 
Brilliant, vibrant appearance. Fine, lifted nose, complex and beguiling. The palate is fine and tightly wound with a precise mineral intensity. Elegantly balanced, dominated by crisp varietal fruit and integrated nutty oak. Medium bodied, well structured, showing great length and poise, finishing with great purity and length.

The winemakers goal is to provide a clear and precise translation without distortion. Pinot Noir clones MV6 from Block 1 and 2, clone 115 from Block 8, grown to light sandy clay loam and sandy loam deep soils. Grapes are hand picked and destemmed into traditional open fermenters for three to four days cold soaking, some as whole bunches. The fermentation is hand plunged up to three times daily depending on extraction levels. Temperatures peak at 32°C, the wine is pressed after ten days into French oak barriques for malolactic and ageing. Alcohol 13.8%
 
A great depth of colour. Ripe black cherry, dark forest berries and asian spice with perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. Yabby Lake has excellent density, concentration and pin point balance. It is the texture and mouthfeel of this wine that is most exciting, rich and velvety with intense varietal fruit flavours and a powerful long, but restrained finish.

Yabby Lake Roc Shiraz 2004

Tod Dexter has made a very special wine out of a small planting of superb Shiraz. In 1997 when the Yabby Lake Vineyard was acquired, it was identified that there was a thin strip of soil through the middle of the property which was unsuitable for Burgundian varietals. It was decided that the two small blocks in the section would be best planted to Shiraz, a bold move in 1997 for the Pinot Noir and Chardonnay obsessed Mornington Peninsula. Two ancient Australian clones were selected, BVRC 12 and PT23, both known to be good performers.

The climes of the Yabby Lake vineyard are readily moderated with cooling sea breezes. Intensive, hands on, viticultural techniques such as shoot thinning and positioning, leaf plucking and fruit thinning is employed throughout the season ensured the fruit was in perfect condition. Grapes are hand picked and then gently crushed into open fermenters. A Pinot Noir winemakers approach to this wine, techniques such as retention of whole berries, gentle handling and hand plunging were utilized. Pressing occurred after three weeks on skins in an air bag press. The wine was then transferred to 100% new French oak barriques where it remained for maturation for twenty four months to gain mouth feel and complexity.
 
Roc Shiraz displays a deep magenta color. The bouquet has wonderful intensity and fragrance. Spicy French oak, plums, dark berries and hints of ribena. The palate oozes with luscious fruit and has a wonderful velvety texture that lingers on the harmonious finish that goes on and on. Yabby Lake Vineyard is owned by Robert and Mem Kirby who have been intimately involved in the Mornington Peninsula region for decades. The Kirbys are joined by two outstanding and renowned winemakers: Group Winemaker Tod Dexter and Consulting Winemaker Larry McKenna. Tod and Larry are known for their relaxed and unassuming personalities, and they apply the same approach to their winemaking: they work with the grapes to develop beautiful and distinctly superior wines that are truly expressive of Yabby Lake Vineyard. The first vintage from Yabby Lake Vineyard was produced in 2002.
