The Wither Hills Rarangi, Benmorven and St Leonards Chardonnay vineyards, along with the eminent Fairleigh and Kerseley properties, are strategically sited on some of the most opportune sites around Wairau Valley. Night time temperatures can be cool, which is ideal for flavour development. The aim is to produce a structured wine with mouthfilling flavours, distinctively Marlborough, expressing the region's charm. Barrel fermented and matured in French oak, drinking well on release, Wither Hills will reward all devotees of New Zealand Chardonnay.

Each vineyard is harvested at its optimum flavour profile and kept separate throughout the winemaking process to ensure vineyard integrity remains intact and to provide the greatest possible expression of site. Grapes are gently pressed and ambiently settled overnight. Juices are racked to a selection of 225 litres French oak barrels for inoculation with select and feral strains of yeast. Batches are treated to a regimen of lees stirring, aimed at developing texture and complexity, then sent to relax for ten months in barriques. Parcels are racked and assembled, fined and filtered, then bottled to capture the remarkable mineral fruit weight and structure of Marlborough Chardonnay.
 
Bright lemon colour. Refined, elegant and restrained with the benchmark Wither Hills profile of white peaches and lime, grapefruit pith and flint, sorbet notes interlaced by fine grained French oak nuances of spice, nutmeg and toasted cashew. All this is bound up with the natural fruit structure, seamless acidity and poise of the Mendoza clone along with the texture and minerality of Rarangi vineyard component, making Wither Hills very ready to appreciate immediately upon release alongside all good faire.

Ben Morven and Taylor River are two exceptional Pinot Noir vineyards, strategically located in the lee of Wairau Valley's southern landmark range. Each site is hand harvested as the fruit comes into optimal flavour ripeness. The various clones and blocks are all kept separate throughout the winemaking to preserve integrity. From seductive bright morello cherry notes to fresh brambly wild berry compote characters, subtle French oak spice, black olive and lingering blue aromatics, Wither Hills delivers a youthful and evocative Marlborough Pinot Noir.

Wither Hills retain the choicest Pinot Noir from three hundred hectares of superb viticulture. The vineyards flourish in free draining, silty alluvial loam over deep stony river deposits, providing a near perfect environment. Experience has shown the importance of taking time to focus on nuances unique to each site and clone. Fruit is destemmed and cold soaked in square fermenters, inoculated with wild and select yeasts, drained off at dryness, basket pressed, treated to malolactic and left to relax over a period of fourteen months in French oak barriques. Following assemblage, the wine is treated to an egg white fining and light filtration. Wither Hills normally release several bottlings throughout the year. Alcohol 13.5%

Each of the contributing vineyard sites, strategically sited throughout the Wairau Valley, are harvested at the time of optimum flavour ripeness that's timely and unique to each. The batches are kept separate throughout the winemaking process to ensure integrity of the vineyard and to afford the most possibilities for assemblage. Fruit is gently pressed, cold settled, racked and cool fermented with selected yeast strains to enhance aromatics and flavour profile. The wines remain on light yeast lees to enhance palate feel and structure, followed by racking, blending, filtration and a prompt botting to capture and to retain the remarkable freshness of Marlborough Sauvignon Blanc.
 
Brilliant lemon lime hue. Benchmark characteristics, intense gooseberry, ripe herbal lime notes underpinned by the classically pungent melon, guava and passionfruit aromatics. Distinctive herbaceous and gooseberry aromas support a wonderfully balanced palate, presenting purity of ripe fruit, coupled with a lingering harmonious finish. The palate shows extraordinary balance with bright seamless acidity, concentration of rich nutty flavours exhibiting the puckering qualities of grapefruit, followed by a long satisfying finish.

Over the years, Chief Winemaker Brent Marris has poured his heart and soul into making Wither Hills a brand to be extremely proud of. Wither Hills goes to great lengths tp preserve the highest quality of their wines. The Estate abstains from the industry wide practice of releasing small batches blended specifically for winning accolades at wine shows. Wither Hills has become so popular both domestically and internationally, that each vintage normally consists of several bottlings to satisfy demand, the estate ensures the brand's integrity by maintaining taste consistency across all bottling runs.

The new Tasting Room and Cellar at the Wither Hills Estate was officially opened at a gala lunch by Lion Nathan Chairman, Geoff Ricketts. The iconic building is the realization of a dream for the estate's team. That dream was to create a centre of excellence which will become a showcase for the New Zealand wine industry. Guests at the lunch included the President of Kirin Breweries Japan (Major shareholder in Lion Nathan), The Lion Nathan board, The Mayor of Marlborough and key people who have assisted in the development of the Wither Hills success story, including friends and family of Brent and John Marris.

Architects JAZMAX were challenged to design a building that would serve as the public face for the Wither Hills brand. The state-of-the-art development is perfectly integrated with the landscape – with building materials, colours and scale reflecting the natural environment of the Wairau Valley. "The Wither Hills form the backdrop to the winery…the strength of the brand has been built around this spectacular landscape,” said the project architect. The transformation of the site from its humble origins as an apple pack-house was a labour of love for the team, and a lot of hard work.

Acting not only as the home for the Wither Hills brand, but also as a resource for the Marlborough region, the dream could not have been realized without the efforts of an enormous number of people – particularly the many highly skilled local trades people.
