Sauvignon Blanc is carefully selected from vineyards in the Wairau and Awatere Valleys of Marlborough. Each block of vines is carefully monitored during ripening to be harvested at optimum ripeness and maturity. The cool nights and ample sunshine extend the ripening period, which is perfect for intensifying flavours and concentrating aromatics in Sauvignon Blanc. Grapes are immediately pressed with minimal skin contact to avoid juice deterioration, treated to a spell of cold settling followed by a cool vinification in temperature controlled fermenters. Upon completion, components are stabilized, assembled into the finished wine and prepared for bottling.
 
Pale straw colour. Lifted notes of guava, grapefruit and touch of green bean. Delicate gooseberry and passionfruit characters extend onto the palate, succulent, full of tropical flavours and ripe citrus notes, before a crisp, fresh finish. Very ready whilst young and fresh, to serve slightly chilled alongside scallops and oysters, grilled fishes or soft wet cheese.

Waipara Hills are crafted from fruit grown to choice sites across New Zealand's South Island. Much is sourced from the Waipara Valley itself but Waipara Hills also operate an estate owned property in the Bendigo sub-region of Central Otago. Named after a local gold rush in the 1800s, the Waipara Hills Golden Terraces are covered by free draining loam schist gravels which make it a natural home to grow fantastic Pinot Noir. Grapes are wild fermented over a term of four weeks on skins. Components complete malolactic during spring and are racked in summer, followed by several months maturation in a selection of new and seasoned French oak barriques.
 
Dark garnet purple colour. A wonderfully rich, in some ways, rustic palate of earth, chocolates, spice and dark cherry aromas. Rife with dark fruits, complemented by savoury spice from the French oak. The nose follows onto the palate with dark cherry and earthy, chocolate notes, as the firm tannins pull the flavours together and leave the palate crisp and awaiting the next sip. Fully approachable while young as it exhibits the essential character and firmness of palate expected from Central Otago.

Each vintage signals the beginning of a new adventure, to create wines which are recognizably from a place of contrasts and great natural beauty. Crafted exclusively from Sauvignon Blanc grown to the Awatere and Wairau Valley. To retain vibrancy of crisp Sauvignon Blanc characters, Marlborough Cuvée is vinified in temperature controlled fermenters and treated to a cold rest, off lees for a period of several months, permitting the fullness of palate flavours and aromatic complexity to open up and evolve. Very pale with a slight tinge of yellow green, exhibiting a good bead and creamy mousse. Grassy, tropical and zesty bouquet exhibiting a complexity of green vegetable characters with lemongrass, lychee and kiwifruit. Fresh and lively showing bright, ripe tropical fruit and gooseberry flavours combining with a slight sweetness. The characters on the nose continue onto the palate persisting to more tropical hints and developed gooseberry flavours. Waipara Hills Marlborough Gewurztraminer 2009

Waipara Hills made a name as Marlborough's best Gewurztraminer after romping home with the trophy for best entry at Liquorland International. Waipara Hill's low cropping Traminer vineyard produces fruit with intense aromas of rose petal, lychee and turkish delight. Stunningly fragrant and lusciously flavoured, completely unwooded, vivacious and fresh, medium bodied with a soft well rounded palate, exhibiting a rich oily texture, only slightly sweet but intense. An extremely limited production of only a few hundred cases makes every edition collectible.

Waipara Hills can source grapes from an inventory of splendid South Island properties. The focus is to exploit the terroir of each by growing varieties best suited to the terrain. All vines are managed by small and highly motivated core teams of personnel, each of sufficient scale to provide maximum economies. Planted predominantly to Riesling, the Mound Vineyard in Waipara Valley holds very tiny blocks of prized Gewurtraminer. Grapes are crushed and left on skins for three hours before pressing. Juices are cold settled for seven days, followed by a clean racking and cool tank vinification. Ferments are stopped at a rich yet crisp balance and kept cold on lees for several months before racking and warming. Alcohol 14.5%
 
Pale yellow with hints of green. Spicy, lifted honeysuckle, pear drop and musk aromas. Rich and inviting, flavours of melon, spice and honey flow through the palate. Waipara Hills sources Sauignon Blanc from several hundred acres of prime Wairau Valley vineyards. The focus of each site is to exploit the terroir by growing the most suitable clones. All vineyards are managed by a small and highly motivated core team of personnel, and each is of sufficient scale to allow for the selection of the highest quality fruit. Every parcel is carefully harvested and de juiced before being sent to tank for a gentle cold settling. Once clear, juices are inoculated with a range of yeasts and vinified for three weeks at cooler temperatures, followed by racking off lees and further cold settling, assemblage and clarification before bottling.
 
Pale yellow colour. Nettles and snow pea on the bouquet, flint, wet stones and guava. Citrus entry to the palate, grapefruits and mineral, good weight and texture before a long finish. A generous, lifted style with all the power and generosity you want and expect, yet with a lovely texture and mouth watering finish that coaxes you back for the next sip.

Waipara Hills are high achievers in the sphere of New Zealand Pinot Noir. Fruit is sourced off vines which have been trained to exploit the terroir by growing those clones of Pinot Noir which are best suited to the location and mesoclime. All vineyards are managed on site by a small and highly motivated core team of personnel, each site is of sufficient scale to provide optimal economy. A great amount of work is required to bring in the fruit all at once, but the effort is rewarded by a splendid wine. Waipara Hills is vinified by the addition of choice yeasts, followed by a term of maturation in a mixture of tank and oak barrels to retain fresh fruit character while introducing richness and complexity.
 
Garnet red colour. Lifted aromas of plums, dark cherries, leather and dried spice enhance the immediate appeal of the bouquet. A soft and silky beginning leads to a full, rich and structured palate with dark red fruits, dried spice and leather characters that linger and linger. A revitalizing drink now style of Pinot Noir that's perfect with duck or game.

Waipara Hills have become famous for their intensity, character and complexity, an expression of the innate contrasts of New Zealand's deep south. Southern Cuvée is fashioned exclusively from parcels of grapes grown to estate vineyards in the Waipara Valley. The focus within each site contributing components is to exploit the endowments of mesoclime and soil by husbanding the vines to yield fruit which is an embodiement of the growing season. To retain vibrancy of fresh Riesling characters, the wine is vinified in temperature controlled fermenters and treated to a cold rest, off lees for a period of seven months, permitting the fullness of palate flavours and aromatic complexity to open up and evolve. Waipara Hills has won international acclaim for consistently producing some of New Zealand’s best quality wines

At the 2005 Liquorland International Top 100 Wine Awards in Auckland Waipara Hills’ wines were awarded four trophies including Champion Winery of the Show. Trophies were awarded for Champion Pinot Noir, Champion Gewurztraminer, Champion Pinot Gris. Launched as a public wine company in 2001, Waipara Hills was awarded the accolade of fifteenth fastest growing company in New Zealand by Deloitte’s in 2004. Production From 6000 cases in 2001 to over 89,000 cases in 2006 Waipara Hills’ growth has been spectacular.

To facilitate the rising production a purpose-built 2000 tonne state-of-the-art winemaking facility was leased in Marlborough. Known as South Pacific Cellars the facility offers the company’s winemaking team a high tech platform from which to create the best quality award winning wines. Until recently the company owned no vineyards and relied exclusively on long-term relationships with some of New Zealand’s most established quality grape growers in Marlborough and Waipara.

In September 2005 Waipara Hills entered an exciting and significant merger with Marlborough based New Zealand Vineyard Estates Limited. NZ Vineyard Estates brings 325 hectares of premium, mature vineyards into Waipara Hills’ supply chain ensuring enhanced volume and continuity of supply to expanding world markets. The merger was completed on 3rd July 2006 and included the aquisition of a new prominantly placed winery and restaurant facility on State Highway 1 in Waipara. This brings the company's net asset to around $48M

Along with this growth has come a considerable list of international trophies, medals and accolades. For any wine producer to win eight trophies, thirty gold medals and thirty-two silver medals in such a short time is a notable achievement and one which Waipara Hills is proud of. A condensed ‘Honours Board’ for Waipara Hills’ wines is included. The vineyards previously owned by NZ Vineyard Estates were strategically planted in three of New Zealand’s key grape producing regions: Marlborough (Sauvignon Blanc), Waipara (predominately Riesling) and Central Otago (Pinot Noir)

Waipara Hills sources grapes from its own vineyards totalling 968 acres of producing vineyards including 220 acres in Marlborough, 588 acres in Waipara, and 160 acres in Central Otago. The focus of each vineyard is to exploit the terroir of each region by growing grapes best suited to that region. All vineyards are managed on site with small and highly motivated core teams of personnel, and each is of sufficient scale to provide maximum economies.

The Marlborough Delta vineyard comprises 220 acres of Sauvignon Blanc with the potential to produce around 740,000 litres of Sauvignon Blanc juice or the equivalent of 80,000 cases. The 150 acre Home Vineyard at Waipara is planted in Sauvignon Blanc, Pinot Gris, Riesling Chardonnay, Pinot Noir and Merlot. The 278 acre vineyard at The Mound in Waipara is planted predominantly in Riesling with small blocks of Sauvignon Blanc, Pinot Noir and Gewurtraminer. This vineyard is also capable of producing around 740,000 litres of wine the equivalent of 80,000 cases.

The Clearvue Vineyard close to Lake Dunstan at Cromwell, Central Otago consists of 160 acres of Pinot Noir which can produce around 375,000 litres or 40,000 cases of wine. Waipara Hills Winery also holds long term supply contracts with a number of skilled and experienced contract growers in Marlborough. These contracts cover approximately 125 acres (50 hectare) throughout the Central Wairau Valley in Marlborough.
