Vasse Felix Cabernet Merlot 2010

It was as recently as 1965 that Dr John S Gladstones brought the world's attention to Margaret River. Two years later Dr Tom Cullity planted vines and Vasse Felix was born. The profoundly perfumed and structured Cabernet Merlot wine is synonymous with Margaret River. Cabernet's firm tannin structure is mellowed by the generous body of Merlot and Malbec, providing depth of colour and building aromas, flavour and structure. Parcels are all separately crushed into fermenters and treated to a careful cap management and extraction. Traditional vinification controls tannin and colour to conjure up a deeply coloured wine with great structure, length and defined expression of each variety. Cabernet Sauvignon is treated to a suitable duration of maceration to extract a fine backbone of structural tannins and blackcurrant laden fruit. The Merlot parcels underwent a cold pre fermentation maceration before being pressed off skins early to maintain a soft luscious mouth feel. The inclusion of Malbec really lifts the wine to glorious heights. The finished Felix is matured for a year in a selection of new to five year old French oak barrels. Alcohol 14.5%
 
Deep red with crimson hue. Fresh raspberry, red and black currant aromas support delicate herbal nuances of mint and bay leaf. Beautifully integrated, the French oak provides a subtle vanillin and spice fragrance. The palate alights with sweet fruit, fine powdery tannins and a juicy, mouth watering acid structure. The flavours show a lovely contrast of red berry, fresh mint and dried bay leaf. Finishes fine and long with sweet berry and savoury tones of earth and spice.

Vasse Felix is the region's original winery and protagonist of the genre. A measure of Merlot and Malbec has softened the tannin profile and contributes a perfumed, floral lift to the nose.

The finest Cabernet Sauvignon from Vasse Felix in four decades? Every vintage is part of an evolution. A pioneer of the region, Vasse Felix first released a Cabernet Sauvignon in 1972. Intense and statuesque, yet elegantly structured, it is the most enduring Margaret River wine. Cabernet Sauvignon is a robust varietal that consistently achieves a high quality wine when grown to the Margaret River's temperate ripening conditions and deep, well drained soils. All parcels are vinified separately before eighteen months maturation in a combination of new and older French oak barriques, followed by batch selection and assemblage with small amounts of Merlot and Malbec to add elegance and complexity. Deep maroon colour with a slight purple hue. The nose shows a stunningly complex perfume, exhibiting a level of integration that makes the wine difficult to pull apart. Layers of blackberry and blackcurrant fruit mingle seamlessly with hints of dried herbs and candied orange. The fragrant, spicy oak sits beautifully in the background. Succulent blackberry and cassis fruit flavours provide a ripe density to the palate while the oak spice adds a savoury edge. The structure is fine and firm with a freshness of acidity that makes the mouth water. It's rich, dusty dry tannins help create a wine of great power, length and persistence. Malbec and Merlot provide a lifted berry character while achieving approachability at a young age.

Vasse Felix are known for their intense and exciting editions of Cabernet Sauvignon, performing well whatever the year with consistently good quality, thanks to the choice of site and favourable climes. Intense, yet elegantly structured, the first red wine ever released from within the nascent Margaret River, it remains to this day, the elder statesman of the region. Fruit is sourced from the best vineyards in Wilyabrup. Cabernet is a robust variety, ideally suited to Margaret River's climate and deep, well drained soils.

The finest Cabernet Sauvignon available to Vasse Felix hails from the northern end of Margaret River, off vines planted to gravel loam soils within eight kilometres of the coast. Individual vineyard sections are fermented as separate parcels, many are left on skins to macerate for up to thirty days. Tannin influence is controlled through traditional oxidative handling, creating a deeply coloured wine with great structure and length. The Cabernet backbone of blackcurrant and herbal nuances with long, dry sinewy tannins is lifted to glorious heights by smaller portions of Merlot and Malbec. The finished wine is aged eighteen months in a selection of new and seasoned, exclusively French oak barriques. Alcohol 14.5%
 
Deep red with crimson hue. Rich, concentrated blackcurrant, violets, bay leaf and dried twigs with hints of mocha, menthol and graphite, all perfectly framed by subtle spicy, vanillin French oak. Enters the mouth rich and seductive, with a mixture of blackcurrant, bay leaf and chocolate dust, then bursts to life with an explosion of tangy, bright acidity. Finishes fragrant, long and full of superb, fine, structured, dry tannins.
Vasse Felix Cane Cut Semillon 2011 375ml
Margaret River
Cane Cut Semillon is all about timing and precision, exercising care in the vineyard to create fruit which can ultimately translate into a wine of purity and elegance. Vasse Felix produce a cane cut dessert style Semillon by slashing the shoots at the base, essentially detaching fruit from the vine. Bunches are then allowed to hang for several weeks, during which time the berries desiccate, concentrating the sugar, flavours and acid. The result is an attractive quince and tropical fruit flavoured wine offering amazing depth of flavour, freshness and a hint of spicy French oak.

The Semillon wines of Vasse Felix are amongst the best ever to come out of Margaret River, they show extraordinary freshness, vibrant lifted fruit intensity, elegance, balance and finesse. Being an early ripening grape, Semillon finds the growing conditions in Margaret River idyllic. Vines will usually compensate for cooler conditions by reducing yield so that every chance is given to obtain optimum ripeness. Given the amount of shrivel in a cane cut grape, yields are precious and extraction rates are very low for this style of wine. Following harvest and the crush, juices are inoculated to select yeast before vinification in a mix of fermenters, folowed by a judicious treatment in a selection of oak barrels. Alcohol 11.5%
 
Medium straw in colour. Intensely fragrant with lavender and spice, lime and lemon rind all combining to give a lovely fresh marmalade character. Complex aromas with lemon meringue and gingernut are integrated with toasty French oak providing hints of vanilla and spice. Preserved lemon, tangerine and grapefruit flavours burst onto the palate, a fresh tangy acidity perfectly balancing the rich luscious sweetness. The palate offers restrained finesse with the oak, acid, sweetness and alcohol in perfect harmony. A lovely viscous, silky, creamed honey mouthfeel provides medium bodied richness and texture with a finely focused mineral acidity and a long luscious finish. A wine to complement most every dessert.

Vasse Felix have always been well positioned to produce the finest Margaret River Chardonnay. Sultry maritime climes are ideal for the early ripening varietal. The grapes are smaller than normal, sugar ripeness is accelerated, and natural acid levels are always fortuitously favourable to the bright expressions of fruit. Wild fermentation to natural indigenous yeast and lees stirring derives texture, richness and complexity to the aromas and mouthfeel of this impeccably balanced wine. A proportion is barrel fermented, the balance is inoculated at lower temperatures to retain the freshness and enhance complexity. Components are aged in a selection of French oak barriques for up to a year.
 
Pale straw in colour with bright green tinges. A highly perfumed wine of lifted floral notes, excellent varietal definition, there are citrus oils and white peach, tropical fruit and lemon sorbet characters, restrained florals and freshly ground clove spice, clean and precise. The French oak maturation adds subtle toasty complexity and sweet honeycomb flavours. Green appley flavours, finely structured, crunchy tang of racy acidity, a full bodied wine with good fruit sweetness and depth, very regionally Margaret River.

Shiraz grown to the sultry climes of Margaret River is instantly recognizable for its sweetness and power on the palate, as well as the attractive floral, anise and cherry characters which form the body and flesh. Cabernet Sauvignon adds structure and length, further defining the tannins and contributing a savoury backbone which constructs a more complete wine. The Cabernet Shiraz vintages of Vasse Felix are legendary, known for their generous palates brimming with sweet red berry fruits, velvet textures and judicious measure of finely integrated oak.

Shiraz and Cabernet are harvested and separately crushed to fermenters, allowing for careful cap management and aeration, a process vital to harnessing the true potential of Margaret River reds. Vinification, maceration and aerations are employed to achieve the gentlest extraction of colour and tannins, preserving a true expression of each varietal. A small amount of Viognier may be co fermented with a parcel of Shiraz while on skins to add perfume and contribute some succulence to the palate. Components are matured fourteen months in a selection of seasoned French and American oak barriques before assembling into the finished wine. Alcohol 14.5%

Beautiful blackberry and raspberry fruit leap from the glass while spicy pepper and cool peppermint nuances waft through the background above deeper layers of spice, sweet vanillan oak, violets and pink orchids. Full, round and juicy mouthfeel with tannins that are soft and silky upfront, a middle palate bursting with blackberry and raspberry fruits, pepper and cedar. A bright and enticing structure runs the length of the palate and leads the wine through a long, savoury finish.

Vasse Felix enjoys near perfect conditions for viticulture. The Mediterranean climate features mild, wet winters and warm, dry summers, ideal for the growth of high quality fruit. Semillon and Sauvignon Blanc flourish in these climes, developing distinctive regional characters not found anywhere else in Australia. Ripening conditions provide the varietal definition and aromatic qualities which make Margaret River wines so unique. Grapes are picked to ripe and healthy baumes, capturing fine aromas, crisp primary fruit flavours and good, clean acid structure. The juices are fermented under cool conditions with specially selected yeasts to ensure the aromas and flavours are accentuated.
 
A bright and vibrant wine, pale straw in colour with fresh green hue. Lifted citrus aromas are supported beautifully by nuances of passionfruit with hints of yellow rose, orange and lemon rind. The palate is zesty and vibrant, with fresh fruit sweetness adding a juicy succulence to the pure fruit characters. Established in 1967, the Vasse Felix estate vineyard is planted at the heart of the Wilyabrup sub region, within the nucleus of premium Margaret River viticulture. Low yielding, dry grown vines planted on some of the world's oldest soils enjoy long, warm growing seasons and cooling summer breezes from the nearby Indian and Southern Oceans. This moderating effect is responsible for grapes exhibiting exceptional concentration and intensity whilst retaining elegance and finesse. Parcels of ultra premium fruit are fermented separately in small, static fermenters to retain the unique characters of the site before being basket pressed and sent to the finest of French oak barriques.
 
A beautiful, deep dark plum colour. The aroma is fragrant, lifted blackcurrant and fresh subtle peppermint leaves, blueberries and violet, coconut, cumin seed and thyme which meld into the background alongside rich perfumes of oak. The palate is bright with fresh, a splash of acidity and nice creaminess to the middle palate. The elegant acid structure and concentrated blackberry flavours provide a depth that can be savoured long after the wine is finished. The tannins are firm, Heytesbury finishes dry with pretty flavours of violets, dark berries and a hint of mandarin. The linear nature and firm tannin structure will ensure continued development and the long term cellaring potential of this flagship Margaret River red.

Half the grapes are hand picked and whole bunch pressed, the balance picked in the cool of night, preserving vibrant fruit character. Juices are pressed off and the free-run separated before settling overnight, racked to a selection of mostly new French oak barriques with varying levels of solids, achieving intense barrel ferment characters and palate weight. All batches are fermented wild without any added yeasts or malolactic to retain splendid natural acidity, stirred throughout nine months maturation, allowing the lees to impart further complexity to the texture and palate weight. The best batches are selected and individual barrels from each batch are assembled into the final wine. Alcohol 13.0%

Vibrant aromas of spiced pear, apples and orange blossom combine with a hint of toasted vanilla bean, showing the complexities achieved through natural fermentation, increased solids, and stunning French oak. High notes of sweet thyme, lime and white peach add a fresh, savoury element to the beautifully complex nose. The palate is fresh and tight, with restrained fruit weight complimenting the structure and texture of the elegant French oak tannins, followed by minerality and flint. The highly favourable climes range from cool maritime winds to tropical mid day sun. The vines will usually compensate for cooler conditions by reducing their cropping capacity so that every chance is given to obtain optimum ripeness. Grapes are picked at a reasonably low baume to capture fine, high note aromas, crisp primary fruit flavours and good acid structure. Specialised yeasts are employed to increase the aromatic lift. A portion is fermented and matured twelve weeks in new French barriques, adding an amazing complexity to the pure fruit characters, with a delicate influence of very fine grain tannins and the unique spicy vanillin characters of French oak. Enticing aromas of kaffir lime, dried herbal notes, vanillin spiced oak and pure florals complement the complex nuances of lime sorbet, spiced pastry crust, cloved orange and mineral. A delightfully zesty acid is complemented by hints of lemon, elegant oak spice and floral lime flavours. Mineral edge gives a wonderful line to the palate, balancing the subtle, creamy, vanillin oak.

Vasse Felix construct a vigorous Shiraz of considerable depth, concentration and solid structure whilst retaining elegance and finesse. Careful fruit selection and an astute use of oak achieve balance and complexity. One of the most satisfying examples of West Australian Shiraz, stylish and distinctively regional. Vasse Felix has the oldest Shiraz vines on the cape, while several slightly younger blocks provide an understated finesse and elegance that is so often lost in the rush to create a Margaret River Shiraz of opulence and power.

The oldest vines in Margaret River contribute the backbone of fruit. Small batch fermentation ensures the character of these precious old vines is preserved in the final wine. Grapes are crushed into fermentation vessels, vinification, macerations and aeration are combined in a way to ensure the gentlest extraction of colour, tannins and true expression of fruit. Each parcel is separately handled and matured. After sixteen months in a selection of new and seasoned French oak barriques, each barrel is rigorously appraised to identify the best of the best. A parcel of the most splendid Malbec is assembled into the final to contribute pristine blackberry fruit, exotic spice and structural complexity. Alcohol 14.5%
 
Deep red with a purple hue. Layers of stunning plum and blackberry fruit support intriguing notes of roasted peppercorn, musk and smoke. Gentle oak provides subtle hints of toasty vanilla and toffee. Rich and fleshy, with wonderful fruit and fresh acidity. Intense blueberry and blackberry combines with creamy vanillan oak, soft powdery tannins and zesty acidity to create an opulent and invigorating wine of great purity. Bursts to life and drives long and fresh right through to the finish, carrying an assortment of fruits and spice.

Silver Knight is crafted to true Methode traditionelle, Pinot Noir and Chardonnay in equal portions with a tot of Pinot Meunier. Assembled according to vintage conditions and fruit quality, a third of reserve stocks may be added to achieve complexity and to maintain the consistency of style. Post secondary fermentation Silver Knight is aged on yeast lees for two years prior to riddling and disgorgement. Sediments are removed and doseage liqueur is added. This freshly disgorged wine offers bready, doughy, yeast extract aromas.

Vasse Felix have cut no corners in fashioning a premiere, regional sparkling Cuvée par excellence. The reserve stock is a solera of wines from previous vintages. Methode traditionelle and the Solera system is the essence of the vinification. The base completes secondary fermentation in the bottle, formulating the natural carbonation and attaining the desired pressure. This promotes yeast autolysis, a natural breakdown of yeast cells, imparting an extra creamy dimension and texture to the wine. A fine, delicate clean wine with firm acid structure and intensity, the painstaking combination of winemaking techniques promotes extra richness to the palate but retains a nice dry, clean finish.
 
Colour can be described as eye of the partridge, in reference to the salmon pink hue, the mousse is fine and persistent. Bouquets of sourdough and mushrooms, quince, poached pears and yeast. Aromas of cold meats and toast, richness and palate weight from the aged Pinot Noir component. Pinot Muenier contributes fresh, uplifted and perfumed aromas, while the Chardonnay provides acid structure and length. Concentrated yeast and nougat characters provide extra complexity to the nose. The dry, chalky, mineral edges on the palate are balanced by subtle creamy textures and dosage liqueur. Best consumed when freshly disgorged, Silver Knight can develop extra richness and complexity in the short term.

Situated in the sub-region of Willyabrup, Vasse Felix is now owned and operated by the Holmes a Court family. Visitors to the winery are welcomed by a unique underground cellar, a spectacular restaurant overlooking the original 1967 plantings and an exquisite art gallery, making Vasse Felix one of the great drawcards of the region. Margaret River enjoys perfect conditions for viticulture. It's Mediterranean climate features mild, wet winters and warm, dry summers - ideal for the growth of high quality fruit. By comparison with Bordeaux, Margaret River enjoys less rain during a longer, drier moderate growing and ripening period. In 1965 Dr John S Gladstones emphasised the region's suitability on his report "The Climate and Soils of Southern WA in relation to Vine Growing". Two years later Dr Tom Cullity planted his Vasse Felix vines.

Vasse Felix

The name Vasse Felix was inspired by an early event in the district. Thomas Vasse was a French seaman who disappeared after his longboat overturned near the site of Busselton whilst exploring the treacherous coastline of Western Australia. (An expedition of Captain Hamelin’s Naturaliste and Captain Baudin’s Geographe) Felix was Hamelin’s middle name, and ironically, is the Latin word for lucky.

The Vasse Felix logo is a peregrine falcon. When Dr Tom Cullity’s first vines began to bear fruit, native birds or ‘silvereyes’ as they are commonly known, had a keen appetite for the sweet berries, so Dr Cullity trained a falcon to deter the pests. Although much time and effort went into this exercise, upon the falcon’s first free flight it soared into the sky and was never seen again. The Vasse Felix logo endures to this day.

The estate's low yielding, dry grown vines are planted on some of the world’s oldest soils. The sites enjoy long, warm growing seasons and cooling summer breezes from the nearby Indian and Southern Oceans. This moderating effect is responsible for creating wines of exceptional concentration and intensity whilst retaining elegance and finesse – these cooling summer breezes from two oceans are unique to the southwest corner of Western Australia.

The vineyards are mostly sited on gravel loam and loam soils. Principal red varieties planted are Cabernet Sauvignon, Shiraz and Merlot while Chardonnay, Semillon and Sauvignon Blanc comprise the white varieties. Parcels of ultra premium fruit are fermented separately in small, static fermenters to retain the unique character of individual vineyards sites before being basket pressed and sent to the finest of French oak barriques.

The continuing worldwide demand for premium wines created the need for a new state-of-the-art winery at Vasse Felix. To meet the demands, the philosophy has always been that wines should be unique, distinctive and expressive of their surroundings. Though production levels have increased, the completion of the new Barrel Hall has provided the winemaking team with further control to maintain the quality of the wines. An impressive expanse, the Barrel Hall holds up to 5000 barriques in conditions that ensure efficient barrel fermentation and a controlled environment. Making use of the best equipment available, utilising the best production processes and an unwavering attitude to quality control, has made Vasse Felix winery one of the best in Western Australia.
