Tar Roses Heathcote Sangiovese 2007
Heathcote
Sangiovese is a thin skinned grape, known for its earthyness as opposed to fruit. It has attractive mid red colour and can be characterised by high levels of tannin well balanced by acid. It is suited to well drained soils with abundant sunlight, both of which are characteristic of Heathcote.

Proprietor Don Lewis worked under the tutelage of the great Colin Preece before establishing an enviable reputation for crafting some of Victoria's most memorable wines. Sangiovese is harvested into 2.5t steel bins and immediately processed. Crushed to static fermenters it was pumped over twice a day for approximately twenty minutes each time. Temperature and acid levels are monitored constantly and adjusted as necessary, after completing fermentation the wine is transferred to tank using an air bag press, racked on gross lees directly to barrel for malolactic and maturation in a comination of new and older French oak barriques for twelve months. Barrels are checked and topped each month. Alcohol 14.1%
 
Ruby red colour. Earth and clay nose with mulberries, cooked rhubarb and licorice. Damp earthy aromas with mocha and chocolate over assertive tannins, good fruit sweetness and acidity. A lingering finish expressing savouryness over persistent tannins. Will match goats cheese or baked parmesan and onion flan.

Tar Roses Heathcote Shiraz 2008
Heathcote
A firm backbone of Shiraz from the Cambrian soils of Heathcote, embellished by a smaller component from the temperate climes of Nagambie Lakes. Heathcote dictates a rounder, fuller, fruit driven wine, Nagambie contributes elegance and restraint. A portion of Strathbogie Cabernet tempers the intensity, a dash of Tempranillo adds complexity, balance and structure.

Shiraz is sourced from a combination of vineyards, some are hand picked, all kept separate during fermentation and ageing. The larger machine volume is crushed, destemmed into a vinimatic fermenter and spun twice each day. The other smaller batches were crushed and destemmed into 2½ tonnes open fermenters, hand plunged three or four times daily. After ten days during which time the temperature and acid levels are monitored constantly, batches were individually treated an air bag press. Wines are racked off gross lees and transferred to barrel for completion of malolactic and twelve months maturation in a combination of new and seasoned French oak barriques. Alcohol 14.5%
 
Deep, inky ruby red and pink. Sweet blackberries and rich prune plums with hints of violets and menthol. Rich, classic sweet Shiraz fruit of plums with hints of blueberries and big chalky tannins.

A complex assembly of Grenache and Carineña grown to the Denominació d'origen Priorato, espoused by an equally stirring addition of Syrah and Cabernet Sauvignon. Priorat is a long forgotten winegrowing area, highly salubrious in it's time, it was ravaged by phyloxera and abandoned in the nineteenth century. The rocky, steeply sloped, mineralite soils have been rediscovered by Don Lewis and Narelle King who take time out from their operations in Victoria once a year to vinify the parched and precious fruit of Merum Priorati.

Older bush vine Grenache and Cariñena as well as younger trellised Syrah and Cabernet, added for complexity, balance and structure. The older vines are all dry grown while the younger vines have access to irrigation which until recently was banned in Spain. Each individual vineyard and in some cases, each variety within the vineyard, were vinified and matured in separate parcels before being carefully selected for the final assemblage. Hand plunged four to five times a day in 1.5t open fermenters, then pressed out using a wooden basket press and left to settle overnight before transferring to barrel. Treated to twelve months maturation in a combination of new and prior use French oak. Alcohol 15.0%
 
Bright cherry red with pink hues and good depth of colour. Rich sweet bouquet of plums, mulberry and slatiness with hints of wild thyme and aniseed. Sweet raspberry fruit upfront palate, the wine flows beautifully across the palate, offering fine tannins, good acid and excellent flavour balance, great structure with length.
Tar Roses Pinot Grigio 2012
Nagambie Strathbogie
Don Lewis spent thirty five years at Mitchelton. He travels to Spain each year where he makes wine for Merum Priorati, returning to Australia just in time for vintage. Harvests of Pinot Grigio grown to the cooler altitudes of Billie's vineyard at Merron Park, Browns Whitland & Bungamero in the Victorian Alpines, evolve delicious varietal pear flavours. The warmer climes of Stratford at Nagambie bring out gorgeous tropical characters. An assemblage from both climes constructs a luscious wine that's heaven sent for swordfish or tuna steaks.

Fruit is crushed and treated to an air bag press in the protective presence of SO2. Enzyme is added and the juices cold settled over a course of five to seven days before being racked off settled solids and directly inoculated. A cold tank vinification is maintained between 9°C and 12°C, pressings and free run are separately fermented. Pressings are transferred to barrel and stirred fortnightly for a month after completion before being assembled back into the free run for fining and cold stabilsation. Fermented to dry at less than a gram of sugar per litre, Tar & Roses is treated to a month's maturation under some older French oak barrels to enhance complexity. Alcohol 13.8%
 
Golden, salmon straw hue. Complex lifted bouquet of pears and guava, passionfruit and hints of blood orange, rockmelon with hints of mandarin. Pear and tropical flavours on the palate finish cleanly balanced beautifully by sweet fruit and classic Pinot Grigio viscosity. Match with barbequed prawn skewers, lemon and olive oil.

Heathcote Strathbogie

Winemaker Don Lewis adores the tannins, structure and electrifying expressions of Spanish wine. Fruit for Tar & Roses is harvested off two elite Heathcote vineyards, much of which must be hand picked, all components are treated separately throughout their fermentations and ageing. The larger volume of Shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher gravelly, grantic soils. The first component makes a rounder, fuller fruit driven wine with intense chocolate and earth characters, the latter contributes elegance and restraint.

After thirty years of leadership at Mitchelton and auspicious winemaking in the Spanish region of Priorat, Don Lewis made the decision to pursue the Tar & Roses label, a collaboration with protegee Narelle King. Tar & Roses is a mostly Heathcote wine with an eighth of fruit harvested on the Strathbogie Ranges. The larger volumes are crushed and destemmed into vinimatic fermenters and spun twice daily. After ten days vinification, during which time the temperature and acid levels are closely monitored, parcels are transferred to tank through an air bag press. Batches are racked off gross lees to finish malolactic and mature in a combination of new and older French oak barriques for twelve months. Alcohol 14.5%
 
Deep crimson colour. Intense black cherry aromas coupled with lifted raspberry notes, a compote of summer berries. Supported by hints of vanilla, chocolate and earthy complexity. Sweet black cherry fruit flavour with chalky cocoa/ chocolatey tannin. This, plus good acid and length makes a well balanced palate. A match with char grilled lamb cutlets and sugo.
Tar Roses Tempranillo 2011
Heathcote Alpine
A pure Tempranillo wine by one of Australia's most devoted purveyors of the style. In contrast to her sibling Nebbiolo and Sangiovese varietals, Tempranillo is an early ripener without any problem achieving full maturity in the ferrous soils of Heathcote. It is prone to developing big bunches and luscious fruit when the vineyard provides restraint.

From Don Lewis and Narelle King's Heathcote property with parcels from the Alpine Valley. An early ripener at Heathcote, it is picked slightly later in the Alpines. A combination of two vineyards, fruit is picked from both sites on the same day and combined into one batch once brought to the winery. Grapes are crushed and de-stemmed into a vinimatic fermenter where they are spun twice daily. Temperature and acid levels are constantly monitored throughout the vinification, upon completion the wine is moved to tank through an air bag press. Racked off gross lees and transferred to barrel for malolactic fermentation and maturation in a combination of new French oak and older barriques for a year.
 
Brilliant deep cherry red colour. Rich raspberries and cream bouquet with nutmeg and minerally notes. A burst of sweet fruit flavours with classic chalky tannin, well balanced with rhubarb like astringency. Great length and weight. Spicy pork sausages.
