Penley Estate Aradia Chardonnay

The objective of winemaker Kym Tolley has been to create a crisp, young wine with soft fruit flavours to be consumed now. This vintage has produced a stylish wine with soft fruit flavours. An elegant cool-climate style, the finely tuned acids allow crispness that many New World Chardonnays lack. Quality new French oak, barrel fermentation, partial lees stirring and no malo all contribute to the style, the fruit flavour is not shrouded, but enhanced by the handsome wood balance, a key feature in all Penley Wines.

Winter rains and spring temperatures were average and resulted in a late budburst, followed by warm conditions that produced ideal flowering. The long cool maturation period that followed, produced intense flavours, aromatics and colours. Penley's style is based on the harmony of subtle, subdued oak with very good fruit, always been the objective in crafting this Chardonnay. Fermentation of a percentage of this wine in specially selected oak is essential, with a portion kept in a stainless steel tank. The oak adds dimension and structure to the wine, not overt and buttery notes. 14% Alcohol Acid 6.8g/L pH 3.37.
 
The colour is medium yellow with touches of grapey green. An aroma is emphasised by melon and grassy fruit with a hint of soft French oak. The flavours are soft and smooth with lingering melon fruits. The oak is subtle but discernible, enhancing the grape flavours, without overpowering them. This white wine shows complexity even though there has been no malolactic fermentation, even so the wine is soft but crisp, with the accent on fresh fruit characters, rather than buttery richness. The overall impression is one of soft, discernible fruit with a clean acid and subtle oak background. Complexity of flavours make this an excellent food wine.
Penley Estate Hyland Shiraz 2010

A Coonawarra Shiraz of stature and breeding, vintages are regularly awarded with eminent international trophies and accolades, outclassing some of Australia's icon wines. Thomas Hyland is a splendid effort exhibiting generous varietal fruit and spiced pepper, a hint of American oak and plenty of flavour. Shiraz has taken well to Coonawarra, where the cooler growing conditions yield a slightly more supple, finer boned style than Shiraz grown to warmer climes. Balance is a key feature in all Penley wines, fruit, oak and tannins in complete harmomy.

Kym Tolley oversaw his Coonawarra Shiraz blocks to create vibrant red wines with plenty of flavour which are suited for early drinking while possessing the substance to mature gracefully. The objective with Hyland Shiraz is to create a youthful, rich and mellow wine with gentle tannins and yielding oak. Created to drink now, a wine of varietal fruits but only a hint of American oak which adds complexity to the nose and palate while enhancing the fruit. Fashioned to show good regional characteristics and discernible varietal fruit while offering plenty of flavour. Open fermented in heading down tanks and matured in a combination of new and used French and American oak barrels for eighteen months.
 
Deep red colour with faint purple hue. Fresh black cherry and blueberries on the nose, nuances of vanilla and smoke, mocha and chocolates curl. The youthful palate exhibits tight structure with good natural acidity, fleshy with a diverse flavour profile of berries, black olive, spices and smokey oak. The young tannins are quite dry, will soften and become more opulent, offering enough softness to be enjoyed immediately upon release. The oak is minimal but discernible, a small amount of wood tannins provide structure for the luscious fruit.
Penley Estate Phoenix Cabernet Sauvignon 2011

The history of Penley dates back to 1858 when The Phoenix Winemaking and Distilling Company was established at Stepney. In 1888 the company name was changed to Tolley Scott Tolley (T.S.T.) and remained with the family until 1960. Tolley's great grandson Kym re-established T.S.T. as Penley Estate in 1988. The eminent Phoenix exudes a dominance of spicy cabernet fruit, a dense ripeness with hints of smoky oak and grape tannin. A wine made to enjoy in it's youth, while the ripe but elegant, distinctly Coonawarra Cabernet characters are fresh.

The value and quality of Coonawarra was first recognised by D. A. Tolley who was a purveyor of oak barrels and winemaking gear in 1908, where he gained access to the wines of Coonawarra. To quote from early Tolley records, Coonawarra wines were distinctly different, dark purple in colour, they exuded a lovely perfume whilst fermenting. Nothing has changed. Phoenix is an early drinking Coonawarra Cabernet treated to an open fermentation in heading down tanks, followed by a regimen of barrel ferments to achieve balance and integration. The completed wine are treated to fifteen months maturation in a selection of new and prior use French oak barriques.
 
Bright crimson with hints of dark purple. Fragrant aromas of violet, black currant leaf, ripe wild berry and varietal Cabernet spice over complex, well integrated oak fragrances. Mulberry and blackberry dominate the tight palate, enhanced by silky grape tannin and elegant complex cedar oak. A very generous middle palate scented with hints of liquorice and chocolate linger long on the finish.

This icon Australian red can boast twenty trophys and over seventy gold medals throughout it's illustrious history. Penley Reserve captures and enhances the distinctive characters of Coonawarra Cabernet Sauvignon, highlighted by rich berry tones, superior length and layers of intense flavour. A wine which achieves perfect harmony between massive intensity of fruit, mouth filling grape tannins and elegant acids. The extended time in new French oak is a key factor to the integration and development. Flavour, depth and length dominate the style.

Ten blocks of Cabernet Sauvignon are grown at Penley, the best from each block will make it into the final wine to construct a complex, traditional Australian Coonawarra Cabernet dry red. Striking the perfect balance is a key consideration for the Penley team. Components of various clonal selection, soil type, canopy management, yield and irrigation all contribute to the wine. Careful ageing in oak are the final touches to enhance the quality of fruit. Cabernet Sauvignon off fully mature vines yielding a mere 2 t/A are treated to a temperature controlled open fermentation in headed down tanks before a lavish twenty months maturation in exclusively new, mostly Troncais French oak barriques.
 
Bright with deep crimson and purple tints. The aroma has a striking berry character with richness of fruit, added together with strong smoky oak tones, which highlight the intense nature of the Penley style. A perfect pitch of sugar and flavour, the palate is rich with sweet berry flavours, controlled oak and grape tannins, to balance and meld with the strong flavours. It is a strong held belief that these components need to be in balance, not just in place, for the wine to evolve in perfect harmony. The key elements are its rich varietal flavours and choice of oak, finely tuned acid and astringency.

The mission of Penley Estate and Kym Tolley is to produce a selection of wines with an emphasis on quality of product as well as the skill, enthusiasm and artistry of the team of people involved in the wine making process. Kym has always had wine in his blood, he is a direct descendant of two of Australia's most famous winemaking families, the Penfolds and the Tolleys.

Twenty five years is a long time to be in the same profession but ask Kym Tolley what he would do if he was not a winemaker and the answer is simple. "I've not been able to think of anything else I'd prefer to do," he said. "Winemaking satisfies all my creative urges along with my need for discipline. To me, it's simply fantastic to be able to make a life out of being creative."

Directly related to two of Australia's pioneer wine families, the Penfolds and the Tolleys, Kym continues to mix the best of traditional and modern winemaking methods at Penley Estate. Born in 1953, Kym Tolley was educated at St Peters' College Adelaide. He completed his diploma in wine production at Roseworthy College in 1977.

In 1973 Kym joined Penfolds under the tutorage of another famous Penfold, Jeffrey Hyland, and Grange creator Max Schubert

He remained with the company until 1988 when he left to establish Penley Estate. For Kym, Penley Estate is a dream come true. His vision was to develop a solid business which would allow perpetuity and future growth for his family, while providing the opportunity for him to continue to create interesting and quality wines.

Father to Hannah, Lachlan and Madeline, Kym often quotes an historic quote of Australian wine writer James Busby who in 1830 said: "A man who could sit under the shade of his own vine with his wife and his children about him and the ripe clusters hanging within their reach in such a climate as this and not feel the highest enjoyment, is incapable of happiness"

Throughout the years that Penley Estate has been producing premium quality wines, the winery has enjoyed an extremely successful wine show and review record. Penley's Trophy record alone, if averaged out over the years averages out at approximately 4 per annum, an impressive feat.
