OLeary Walker Adelaide Hills Sauvignon Blanc 2012

David O'Leary and Nick Walker combine a wealth of experience, acquired during their time as corporate winemakers behind such labels as Krondorf and Hardy, Yellowglen and Annies Lane. The Adelaide Hills is arguably the best region in Australia for Sauvignon Blanc. O'Leary Walker are amongst the region's most conspicuous proponents, sharing a love of winemaking and affinity for the undulating slopes and salubrious climes of the Adelaide Hills. One of the reasons for it's growing popularity is the pure fruit driven palate, clean flavours and fine length.

The O'Leary property at Oakbank in the Adelaide Hills, on a gently sloping hill which faces northeast on some rather high altitudes, was planted to vines in 1990% The altitude, soils and weather patterns, as influenced by Mt Lofty Ranges, dictate a long and even ripening, maximising varietal character and intensity of flavour. Each section of the vineyard is kept separate throughout hand harvesting. Fruit is de-stemmed and given a gentle crush to burst the berries. The finest quality free run juices remain unfiltered to preserve character. Partial lees are added back to juices for vinification, racked off lees after four days and seeded with natural yeast. The wine is chilled upon completion and filtered once prior to bottling. Alcohol 10.9%
 
Pale straw with green tinge. A bouquet expressing exceptional purity of fruit, lifted tropical fruits and underlying black currant. Aromas of passionfruit and lemon, with the sweeter contributions of green melon and jasmine. The palate is fruit driven and long, highly expressive of the vineyard and Adelaide Hills, offering ample lychee and passionfruit, a mouthwatering acidity and exquisite balance. A light minerality and the tang of lime at the finish, within a refreshingly fruit derived style that drinks beautifully on release. Excellent companion to Barramundi or spicy asian.

David O'Leary and Nick Walker amassed over three hundred gold medals and sixty trophies between them, including the prestigious Jimmy Watson. A shared confidence in the quality of Clare Valley fruit was the catalyst for them to establish their own winery. Cabernet Sauvignon grown to the Clare subregions of Armagh or Polish Valley can be quite powerful and require some years to soften. O'Leary Walker have added a component of choice Merlot, which contributes middle palate flesh, toning down the solid tannin structure and bringing the wine forward.

Walker and O'Leary both love the job of making wine. They find their inspiration working amongst the vineyards of picturesque Clare Valley. Components of Merlot and Cabernet Sauvignon from Martin Smith's Blue Cutting Road property, are blended into the crusher and co-fermented in a combination of open two and four tonnes fermenters. Fruit is vinified through the action of wild natural yeasts and hand plunged to maximise extractions of colour, flavour and tannin. Upon completion, parcels are racked to a selection of seasoned French oak hogsheads for malolactic and maturation, followed by racking and filtration prior to bottling. Alcohol 14.8%
 
Brilliant plum red colour with deep purple hues. An intense nose displaying violets and cassis, blueberries and mulberry enhanced by subtle hints of cedar and mocha spice derived from maturation in French oak. A rich juicy palate with dark forest fruits, immensely flavoursome and mouth filling, balanced by refined acidity and supported by long fine tannins. A good match with meat risotto and vegetable antipasto.

Blue Cutting is assembled from Semillon grown to Neil Grace's fifty year old vines and Sauvignon Blanc from Martin Smith's Polish Hill River property. Blue Cutting Rd was dug in the 1890s by Polish settlers, it remains a usable summer bush track connecting two main roads and dissects two significant Clare Valley vineyards which are a source of outsanding quality fruit to O'Leary Walker. The soils of Polish Hill River lend themselves to the dry, flinty qualities of Semillon as well as the more florid, aromatic expressions of Sauvignon Blanc.

It was a full confidence in the natural endowments of the region which was the catalyst for O'Leary Walker to establish their venture in the picturesque Clare Valley. Much of the early Polish Hill settlers influences have filtered throughout the lovely region, the fruits of their labour are still evident today. The fortuitous vineyard sites around Polish Hill consistently produce gentle, poised and refined white wines. parcels of Semillon and Sauvignon Blanc are de-stemmed and given a gentle crush to burst the berries. The finest quality free run juices are chilled to 5°C to preserve expression of fruit. The unfiltered juices are vinified in fermenters, settled and chilled, then treated to a single filtration prior to bottling. Alcohol 12.0%
 
Pale green with light straw yellow hues. Citrus and spice nose, gooseberries, an appetizing lychee bouquet, perfume of quince enhanced by the lively tropicals of Sauvignon Blanc. Palate features great purity, stonefruits and lychee over a fine juicy structure and zesty length. Lively acidity balances everything and drives the wine to a clean, crisp finish. A superb aperitif wine and a good match to Thai salads, seafood or chicken & pork wanton.

David O'Leary really knows about things Cabernet Sauvignon, having claimed a Jimmy Watson Trophy and being twice named International Red Wine Maker of the Year. Very much a fruit driven Cabernet wine reflecting the idyllic growing conditions of Clare Valley, from low yielding vines up to fifty years old, grown to superior sites within the Armagh Valley and Polish Hill River districts.

O'Leary Walker is the culmination of two like minded winemakers. David O'Leary worked for Heemskerk and Chateau Reynella, he was group red winemaker for Hardy's and later at Mildara Blass. He held senior winemaking roles at Quelltaller where he launched Annies Lane. Nick Walker took up residence at Krondorf for sixteen years and was also at Yellowglen and Yarra Ridge. Cabernet grapes are destemmed but not crushed, into two and four tonnes fermenters. Natural yeast is added as the ferments are hand plunged and pumped over to control temperature and flavour. Upon completion, the wine is macerated, pressed and run into small French oak hogsheads for up to twenty months maturation. Alcohol 14.0%
 
Deep brick red with a slight purple tinge. Bouqet offers fragrant perfumes of blackcurrant, cassis and juicy berry fruits with a hint of cedar and spice. The contrasting influences of Armagh Valley and Polish Hill form synergy. Fine tannin and acid structure with powerful fruit, blueberries and violets, exhibiting great depth and length. A very solid Cabernet wine with true character, highly varietal, the palate is rich and powerful, balanced with good acidity and fine grain tannin, a style which the Clare Valley has done well for many years.

The soils and surrounding mesoclimes are the thumbprint of all great wines. Virtually next door to each other in the Polish Hill River lie two outstanding blocks of Riesling, Martin Joan Smith's and the Molloy Vineyard. These sites have long been known to yield some of the most expressive fruit that the Clare Valley can achieve. A wine which espouses the virtues of Polish Valley, displaying great character and depth of flavour, offering mouth watering expressions of intense citrus fruits. The perfume is alluring with powerful slate characters and juicy minerality.

The avenue leading to these elite vineyards is called Blue Cutting Road. Grey loam acid soils over sandstone and slate make up the profile, much of the top soil is littered by rock, hinting at just how tough the vines must be to sustain growth and produce quality fruit, not to mention the work of the vigneron to ensure quality. Fruit is hand harvested, each section of the vineyard is treated separately. Grapes are de stemmed and given a gentle crush to burst the berries. The finest quality free runs are chilled to 50°C, preserving expression of fruit, unfiltered, prior to four days vinification through the action of natural yeasts before racking off lees. Post ferment, the wine is tank chilled and filtered once before bottling. Alcohol 12.1%
 
Pale straw with steely green tinges. Delicately perfumed with a hint of musk and bath powder. Textured palate with hints of orange rind, lime and spice. This wonderfully fragrant, blossom accented wine, has great mouthfeel, balance, and an impeccable lingering finish. Delicate, balanced with crisp natural acidity. The perfect accompaniment to oysters natural, fresh seafood and asian faire.

Clare & McLaren
Two great Shiraz terroirs, Clare Valley is all about power, structure and fragrant fruit. McLaren Vale contributes rich, licorice and chocolate characters along with a wonderfully sumptuous mouthfeel. Parcels from Doctors Block at Polish Hill and the superlative Maglieri property at McLaren Vale combine to produce a complex wine displaying opulent aromas of mocha and plums, anise and spice.

O'Leary Walker is the culmination of two like minded identities who were feted by destiny to produce wine together. After working with large companies for many years, the Messrs David O'Leary and Nick Walker amassed over three hundred gold medals and sixty trophies, including a Jimmy Watson. Shiraz is treated to a small batch vinification through the action of natural yeasts, hand plunged in a mix of two and four tonnes fermenters for twelve days. Batches renmain on skins for a fortnight to enhance tannin complexity, maximising flavour and length, pressed to tank and racked after four days into a combination of new and one to four year old French oak barrels for two years maturation. Alcohol 14.7%
 
Deep red with purple hues. Virulent and complex on the nose, savoury elements of ground pepper and olive combine with sweeter characters of dark blackberrry, red liquorice and spice. The oak is all French, subtle and integrated, gently enhancing the layers of fruit. A palate that's concentrated and powerful with sweet ripe mulberry and blackberries, long and persistent with juicy tannins and balanced acidity. A fruit driven style that's drinking extremely well now as it continues to evolve, a great match with meats, grills and cheese.

After twenty years of winemaking, having amassed over sixty trophies and three hundred gold (including a Jimmy Watson and twice International Red Wine Maker of the Year), David O'Leary and Nick Walker came home to classic Watervale soils. The superior Grace's dry grown Vineyard is hand pruned and hand picked, relying fully on natural rainfall. A combination of super rich soils and limestone makes the holy grail for Riesling. A stunning wine exuding wonderful florals and characterised by a delicate, chalky citrus tang.

Neil and Heather Grace's vineyard is dry grown to red loams over limestone soils which hold moisture and almost drought proof the vines in summer. Vertical shoot positioning encourages even ripening and provides important shade to prevent any unpleasant sunburn characters in the finished wine. Parcels from each section are kept separate. Grapes are de stemmed and treated to a gentle crush to burst the berries. The finest quality free run juices are chilled to 50°C, preserving the expression of fruit, unfiltered prior to four days vinification through the action of natural yeasts before racking off lees. Post ferment, the wine is tank chilled and filtered once before bottling. Alcohol 12.1%
 
Pale straw in colour with a slight green tinge. Delicate lime and citrus notes, restrained with hints of lemon and fennel. Very fine palate with great length of acid, purity of lime fruits and a crisp finish. The perfect accompaniment to freshly shucked oysters, Atlantic salmon or king george whiting.

Established in 2001 by David O'Leary and Nick Walker, their philosophy is pretty simple, source the best grapes from the best vineyard sites and craft great wine. O'Leary Walker is based at Leasingham in the Clare Valley, South Australia, but they don't limit themselves to producing just Clare Valley wines. O'Leary Walker also source fruit from other premium grape growing districts in South Australia including the Adelaide Hills, Barossa Valley, Coonawarra and McLaren Vale. The theory behind this is to draw on the grape varieties that excel in these quite different viticultural climates.

David O'Leary and Nick Walker both have a love of winemaking, a desire to create something exceptional and a strong affinity with the Australian wine industry. After working for large companies for twenty years and amassing over 300 gold medals and 60 trophies (including a Jimmy Watson and twice International Red Wine Maker of the Year), David and Nick had achieved just about everything that a winemaker could.

A new challenge beckoned and David and Nick's belief in their winemaking skills and their confidence in the fruit and the vineyards available to them was the catalyst for them to establish their own venture based in South Australia's picturesque Clare Valley. As with all things in life, a window of opportunity opens only a few times and they believed it was their turn to step up, have a go and return to what winemaking is all about, making great wine from great vineyard sites.

O'Leary Walker Wines was born

David graduated from Roseworthy Agricultural College in 1980. He spent a year in Tasmania working for Heemskerk Wines before joining Chateau Reynella in 1981. He was appointed group red winemaker for Hardy's in 1990 and held that role until joining Mildara Blass in 1994.

At Mildara Blass, he held senior winemaking roles at Quelltaller Estate in the Clare Valley where he launched Annies Lane and at Mildara's Coonawarra winery. During his time with Hardy's and Mildara Blass, he also made wine if France and California.

David has achieved considerable in his twenty years of making wine. A Jimmy Watson Trophy in 1988 and twice International Red Winemaker of The Year (1992 and 1994) sit proudly along with numerous other trophies and gold medals. David's goals have never changed, he simply wants to make great wine.

Nick's philosophy is pretty simple, make the best wines possible from the best vineyard sites, and make a little time for fishing

Nick graduated from Roseworthy Agricultural College in 1982 and took up residence at Krondorf Wines for the next 16 years. Nick was instrumental in making some of the great Eden Valley Rieslings of the time and had enormous success on the show circuit with his white and red wines. Nick undertook sparkling winemaking duties in 1998/1999 at Yellowglen and was chief winemaker at Yarra Ridge in 2000.
