A fine bead, delicate and persistent, forming a creamy mousse, within a rainbow of hues that range between platinum, snow gold and tawny amber. Fresh, crystalline and sharp, the nose reveals a unique vegetal, aquatic world, with hints of white pepper and gardenia. The wine's maturity then makes a gentle appearance before exhaling peaty accents. In the mouth, the attack is direct, a prelude to a lusty roundness that seems to curl up like a plant. The notes of anis and dried ginger glide over fruit skins (pear and mango), creating an effect that is more tactile than fleshy. The finale stretches out and then comes to rest, calm, mature and diffuse. An ineffable charm has made itself felt, with no effect on the wine's integrity.

Grapes are picked at the peak of their maturity, while going far beyond the character of the year, enhancing the natural richness of the wine. Viticultural regimens have been fine tuned over many generations. The spring was warm and dry, with no significant frost and a near perfect flowering. The summer was marked by long sunny periods, interspersed by regular cloud and rainy spells. The unexpectedly perfect weather just before harvest compensated for the heavy rains of late August and early September. The vines were in good health, and the dehydration of the grape berries helped them reach new heights of ripeness. Vintage 2002 was ultimately disgorged in 2009 before a further spell of bottle ageing.

The history of Champagne is inseparably linked with the Benedictine monk Dom Pierre Pérignon, who refined the Champagne process in the seventeenth century. The unique and inimitable chalky vineyards, retain heat from the sun and moisture from the rain which is gradually released, acting as a natural regulator. After a particularly cold, dry and severe winter, the spring frosts of 7 to 11 April left a lasting mark in Champagne. Summer was immediately scorching, the hottest for 53 years. Anything that had miraculously escaped the frost and hail was subjected to intense heat until harvest. The crop was perfectly ripe and healthy, like those of 1947, 1959 and 1976.
 
Honey coloured, white sunflower hue. A bead that is unique among Champagne, strong and delicate, ravenous and virile. The bouquet spirals through sweet, bright floral notes and the lively minerality of Dom Pérignon, notes of candied fruit, plants, the incredible freshness of camphor leaf and finally the dark hints of spices and liquorice root. The wine is currently still physical. It is compelling, tactile and vibrant rather than aromatic. The rhythm and tempo are more dominant than the melody. At first mild and delicate, then strongly, confidently mineral, persistent and precise, with a refined bitterness, iodine and a saline tang.

Œnothèque expresses the vivacity and vibrancy of the Pinot Noir grape while still maintaining a taught balance with the Chardonnay, unique to the Dom Pérignon style. Enotheque is the name given to the cellars where a limited number of Dom Pérignon from each declared vintage are kept, to monitor the progress of the wine as it matures under perfect conditions. These rare bottles are kept with their original corks on the original yeast lees, disgorged only a few months prior to release, essential to the character of the Œnothèque marque.

Ever since 1668 when the young Pierre Perignon took up his post as cellarer at the Abbey of Hautvillers on a hilltop north of the Marne River, the greatest care has been taken at at every step of the winemaking process, from a selection of the finest grapes to the declaration of vintage. Œnothèque's long intimacy with the yeast serves to soften the fruit's texture. The nose is denser, the wine is wider, longer and fuller in the mouth, yet more demanding. While Dom Pérignon is marked by its maturity, Œnothèque is more intriguing and ambiguous, with the paradoxical mix of youthfulness and completion. Maturation has sharpened the wine's colours rather than dulling them.
 
A light touch of aniseed and fresh almonds is quickly followed by notes of mango and dried figs, with toasty aromas completing the bouquet. The first hints of dry herbs soon blossom into candied grapefruit and cinnamon, rounded out by notes of biscuits and dried fruits. The palate has a firm structure, with a backbone of initial rich aromas leading to airy, delicate flavours. The initial density takes on a creamy fullness, as the wine's finesse expands and takes off. A tender, silky texture gradually evolves into persistent, fresh notes of candied grapefruit and pepper.

The 2002 vintage shaped up perfectly over summer through to the very end of August as the rain began to fall. At the time it brought back memories of 2001, when everything was going smoothly until it started raining, and never stopped. Fortunately the fate of the 2002 growing season was different, everything went fine, with the rain stopping after a few days and maturity levels being very high, sometimes even close to overripe for some of the Chardonnay. The release of each new edition Dom Pérignon is the climax after years and years of hard work, both in the vineyard and at the winery. Dom Perignon is named after the famous monk, who was the most important early influence in the development of Champagne, into the sparkling wine we know today. It was not the first Champagne to use his name, as smaller wineries employed it for their wines. Unfortunately for them they did not register the name, Dom Perignon, as their trademark. A rigorous selection in the vineyard and the Chais ensures that only the best wines go into this exquisite Cuvée. Chardonnay and Pinot Noir are used in roughly equal proportions without either dominating. Whilst the story of Moet Chandon dates back to the middle ages, it was not until an association with the Emperor Napoleon that Jean-Rémy Moët became the most famous winemaker in the world, overwhelmed by international demand. To this day, spread out amongst a thousand hectares of the finest vineyards, Moet Chandon is the largest and most prestigious estate in Champagne, managing 200 of the 323 Crus of the region. The twenty eight kilometres of tranquil estate cellars are hewn out of the limestone stratas thirty metres directly below the historic estate Chateau at Epernay. Years of patience are required for optimum maturity to be achieved. Within a few months, the wines are assembled. Within a few weeks, the yeasts have completed the malo-lactic fermentation process. Within a few days, the alcoholic fermentation has transformed the sugar into alcohol with the help of selected yeasts After harvesting, the grapes are transported, pressed and then juices fermented in vats. The climate plays a vital role

Indeed, it is this guiding aim which determines the oenologists' decisions on which, in turn, the wine's final shape will depend.

The assemblage or blend of grape varieties is critical in determining the champagne's distinctive style. It is largely during this phase of the production process that a unifying character emerges, the complete, well-rounded and radiant personality which distinguishes all of Moet & Chandon's wines. The range from which the team can choose includes over 150 crus from the house's own vineyard as well grapes purchased from other wine growers. The three Champagne varieties, Pinot Noir, Pinot Meunier and Chardonnay, continue to be the wine's mainstays, offering their complementary features and specific synergies.
