Superior single vineyard Shiraz fruit with a component of co-fermented Cabernet Franc, the quality of the soil and microclimate are astonishingly well represented in the finished wine, long and complex, massively structured, an extroverted palate with generousity and confidence. Jasper Hill have taken aim at making great wine, with the preservation of nature's flavours, complexities and balance, by using minimal intervention in the vineyards and in the cellar - to allow the individual vineyard's terroir and sense of place to express itself. Massive with fiery tannins and sleekness from the Cabernet Franc, a profound and distinctive wine, sophisticated fruit lurks beneath the spice-driven highlights of the complex cuvee.
 
Tasty elements drift up with the alcohol, virulent menthol-like aromas, doses of mint and a touch of eucalypt, Emily carries it very well, with an elegance to the marry of fruit and tannin and a lovely dish of sweet, dry earth, coal and aniseed. Earthy and briary, riddled with roasted tomato flavours and spotted with blackberry, this is an elegant wine that's good and fine and worth cellaring if you can wait that long. Unique citrussy oak and cedar in the background, there are delicious woodspice and dusty characters, spices and herbs, sweetness and savouriness, a complex and intriguing wine, there's a lot going on and the tannin structure is superb. As always, Emily will age gracefully and tremendously.

Outstanding Langtons Classification. Emily is beautiful but eccentric, the usual spiceyness of Shiraz, it finishes firmer with fantastic structure and elegance. Cabernet Franc adds complexity, but ultimately the vineyard terroir distinguishes Emily from sibling Georgia.

Essentially a small and exclusive single vineyard Shiraz, Emily is co fermented with a portion of well integrated Cabernet Franc, perhaps the only wine of it's kind in the world. Emily's Paddock is a mere three hectares of Shiraz, which grow alongside a parcel of Cabernet Franc, yielding about two tonnes per hectare, a scant and precious fourteen hectolitres. Organically grown grapes are picked by hand and completely de-stemmed, put through maceration for several weeks with minimal intervention to express the paddock's uniqueness in the finished wine. Emily is then transferred into a selection of small French oak barriques, without any racking, fining or filtration for maturation.
 
Bright, deep garnet coloured. Mint and menthol, aromas of red berries and plums, a touch of pepper, tar and smoked meats. A magnificently balanced wine with amazing structure, a profoundly successful natural acidity. Pleasing savoury, earthy and mineral qualities, chalky tannins sneak up on you after swallowing.

The aim is to make great wine, with the preservation of nature's flavours, complexities and balance by using minimal intervention in the vineyards and the cellar. To allow the individual vineyard's terroir and sense of place to express itself. Georgia's Shiraz Paddock is twelve hectares, each yielding about three tonnes of fruit, mainly planted in the seventies on own rootstock, to retain purity of style, rather than grafted to phylloxera resistant American non-vinifera material. The vines have a sunny open, balanced canopy that keeps fungal diseases at bay and eliminates the need for summer pruning, leaf plucking and crop reduction. All picking and pruning is carried out by hand with wonderful skill, from local friends.
 
Dark ruby colour. Intense, complex nose of licorice, berries and earthyness. A multi layered palate which unravels to expose clean and discernible fruit flavours, fresh spice and pastoral characters. Supported by vivid tannins and the finest oak, with a splendid, lingering finish.

Chapoutiers of the Rhone Valley have invested in a joint venture with Jasper Hill to develop an adjacent vineyard. Beyond the sensational site, it's the commitment to low yields, dry farming and non-interventionist, organic viticultural practices that place Jasper Hill among the top Australian Shiraz producers. The two vineyard sites are named after daughters Emily and Georgia. The unirrigated, low-yielding, drought and frost ravaged Georgia's Paddock is a must for the Shiraz afficianado. Following vinification she is treated to maturation in a combination of new and prior use French and American oaks. Approx 14.5%
 
Dark red colour. Fine bouquets of florals and bright fruit, cranberrry and cherry, plums and spiceyness, powerful savoury expressions of smoked meats and game, tarry, earthy, so very redolent of excellent, clean oak. Myriads of dark fruit flavours, notes of bitter cherry, candied liquorice, violet and rose pastille. A core of super concentrated fruit encased in fine, firm tannins, a wine which truly clings to the palate, and grows perfume-like nuances of soil and fruit as it works with the air.

Georgia's Shiraz Paddock is twelve hectares yielding about three tonnes each, mainly planted to vine in the 1970s. The intention from the very start was to retain varietal purity and clonal character through planting on own rootstock rather than grafting to phylloxera resistant American non vinifera material. The vines enjoy a sunny, open and balanced canopy which keeps fungal diseases at bay and eliminates any need for summer pruning, leaf plucking or crop reduction. All picking is carried out by hand with the help of well rehearsed locals. Following vinification the wine is pressed off lightly and the pressings rerturned. Georgia's Paddock is matured in a selection of new and seasoned French and American oak barriques.
 
A brilliant, dense crimson colour. Subdued aromas, opening swiftly to nuances of red berries bound by chocolate and subtle coffeed, caramelled oak, fruits of the forest and a touch of game. The palate shows delicious malt and vanillan oak, sweet green herbs, savoury and mint, morello, roast meat and parched earth.

Occam's Razor is a marque established by Emily Laughton, daughter of Jasper Hill winemakers Ron and Elva. A teacher by training, a traveller by choice and a winemaker by preference and practice, Emily has crafted this very special Shiraz wine from fruit supplied by independent growers Andrew and Melissa Conforti, from the neighbouring town of Mia Mia, within the Heathcote wine region. Occam's Razor is produced in small, highly prized quantities based on the same bio-dynamic principles as Jasper Hill's flagship editions of conspicuous red wines.

Like her father, Emily Laughton's philosophy is to keep it uncomplicated and not muck around with the vinification. William of Occam was a philosopher who devised intersting theories. One of his better, is that the simplest explanation is generally the most correct, cut the embellishments and return to basics. Fermentation is carried out by native or wild yeasts present on the grape skins. All pressings are returned for completeness of the wine. Racked off gross lees into small French and American oak barriques for oak maturation with no racking or fining or filtration. Malolactic occurs naturally in the barrel without any inducement. Following assemblage, the final wine is treated to a coarse filtration.
 
Deep garnet colour. Aromas of dark fruit, aniseed, coal, a touch of mint, cloves and fine cedary oak. On the palate it has beautiful glossy dark fruit, there are flavours of coal, earth, leather and aniseed that make it wonderfully complex.

Jasper Hill are produced entirely on the estate using organic/biodynamic principles. The estate produce their own organic compost and have never used synthetic chemicals on either the vines or the soils, since vineyards were planted in 1975. Viticultural practices are as close to nature as possible: own rooted vines (ie. not grafted on to American rootstocks to confer Phylloxera resistance), no irrigation whatsoever, minimal tillage, natural inter-row mulching leading to broad bio-diversity, in turn giving depth and intensity to our wines. Only hand pruning of the vines and hand harvesting of the fruit can allow the human connection to the living soil.

The soils are derived from Cambrian age basaltic rock (500 million years). Quite rare in the world and particularly in Australia, here they are unusually deep (4metre), red coloured, well drained, gravelly loams on undulating hillsides, but with good moisture retention. They occur in a narrow, non-contiguous strip between two naturally occurring North/South faults, typically only a few hundred metres wide. The faults give rise to a complex mineralogy.

Soil organic matter is high, allowing great bio-diversity in micro flora and fauna and supporting large earthworm populations - all beneficial for natural soil fertility. No synthetic chemicals have ever been applied to the soil or vines; the vineyards are totally organic; no insecticides, no herbicides, no synthetic fungicides and no artificial fertilisers.

The soil surface is either covered in mulch derived from vine prunings, leguminous cover crops and native grasses, or is lightly cultivated, with aeration. Minimal tillage is practiced, within and between vine-rows, using lightweight 4WD tractors to minimise soil compaction. Minimal intervention is used during fermentation and maturation, allowing terroir or earth character of the individual paddock or plot to emerge in the wine. More importantly the grapes at harvest are flavour ripe, regardless of sugar ripeness.

The vines have a sunny, open, balanced canopy that keeps fungal diseases at bay and eliminates the need for summer pruning, leaf plucking and crop reduction. All picking and pruning is carried out by hand by wonderfully skilled people from the district. All vineyards are unirrigated and rely on natural rainfall only. Underscoring the quality of the soils, at vintage the grapes retain high levels of natural acidity. Acid adjustment is rarely ever needed, even when sugar levels reach 14 Baume or higher.

Both Emily's and Georgia's Paddocks are on elevated hillsides at an altitude of 320 metres (1000 feet) and are approximately 1 km apart. Emily’s Paddock has a NE aspect and shallower soil, while Georgia’s Paddock has a NW aspect and the deeper soil. The vineyard at Cornella, is 20km north of Emily’s Paddock, within the Heathcote Region and on the same Cambrian soil, with an altitude of 330 meters and a NE aspect. Emily's Paddock is three hectares of Shiraz including around five percent Cabernet Franc, yielding about two tonnes per hectare (14hL per hectare), planted in 1975/76. Georgia's Paddock is twelve hectares of Shiraz yielding about three tonnes per hectare (20hl per hectare). Three hectares of Riesling giving about three tonnes per hectare (20 hL per hectare). Planted in 1975/76 with further small plantings done after the vineyard was ravaged by bushfire in 1987. One hectare each of Semillon planted in 1992, and Nebbiolo planted in 1993. Cornella Vineyard is four hectares of Grenache planted in 1998.

All fermentation is carried out by indigenous (native or wild) yeasts present on the grape skins. All pressings are returned for completeness of the wine. The red wines are then racked off gross lees into small French and American oak barriques (20 percent new each year) for oak maturation of about 15 months with no racking or fining or filtration. Malolactic fermentation occurs naturally in the barrel without any inducement during late spring. After blending, they are given a coarse filtration just prior to bottling on our own state-of-the-art equipment.
