Fox Creek Chardonnay 2010

McLaren Vale makes gentle Chardonnay wines, Fox Creek is made more complex by treatments of battonage, a course of lees resting and luxurious barrel ferments. Grapes are harvested throughout the cool of night and processed in the early morning, retaining all the crisp, clean charm of McLaren Vale Chardonnay. The peachy varietal stonefruit characters becomes prominent, together with a noticeable mineral quality and the beginnings of honey toast as it evolves. Wonderful upon release, expect Fox Creek to be at its very best alongside fine food.

Chardonnay is harvested at ripe and healthy baumés, grapes are crushed and two thirds of the juices are vinified in a mix of new and one year old French oak barrels, a moderate proportion is wild yeast fermented for greater complexity. Barrel components are matured on yeast lees for nine months, developing a rich creamy palate. The balance is vinified in fermenters at moderate temperatures to retain maximum fruit character. Components are assembled and the final wine is returned to oak for a spell of integration, which serves to harmonise the flavours and enhance the structure prior to bottling. Alcohol 13.8%
 
Pale golden hue. Golden peach, nectarine and honey notes over creamy yeast and subtle biscuity oak for a rich complex bouquet. A rich fruity palate showing golden peach, apricot and pineapple flavours. The textural oak frame surrounds dollops of creamy butter, honey and toast, a crisp mandarine finish completing a complex, restrained and balanced wine. Fully integrated oak coupled with crisp acidity gives zing, persistence and length.

Fox Creek's vineyards are hand pruned to control vigour abd to keep cropping levels quite low to yield small berries full of concentrated flavour and colour. Native flora and fauna are encouraged as they are excellent pest control and deter parasites. The winemakers sample the grapes regularly to determine optimum picking time as judged by flavour development and baumé. Grapes are delivered promptly to the winery. Each batch is open fermented for seven to eight days on skins with low intensity pumpovers conducted to preserve primary fruit flavours. The wine is pressed off to finish fermentation and maturation, mostly in a selection of older French and American oak barrels. Alcohol 14.5%
 
Vibrant purple. Intense aromas of mulberry, blackberries, plum and cherries, interwoven with nutmeg, cinnamon and clove. Fresh juicy red berries, plums and black cherries lead into a vanilla custard mid palate with hints of toast, coffee and mocha. The youthful tannins complete the experience with an injection of fresh toasty oak on the finish. The perfect accompaniment to richly sauced meats.

Fox Creek began to flow when a group of medicos decided to realize a lifelong passion and create the best possible wines out of bare earth and sunshine. The Fox Creek vineyards were established from the ground up to be the most environmentally friendly, whilst the vines themselves are spoiled with attention. The superlative quality of Fox Creek begins with an exacting pruning of vines to achieve smaller yields of the most intense fruit. Fruit is harvested off vines planted to well drained sandy loam soils. Two unique clones of Merlot, which are quite new in Australia, grow very well in McLaren Vale, making wine with a bigger bouquet and flavour, as well as finishing with finer tannins than what has been traditionally produced from D3V14. Each individual vineyard parcel and clone is handled separately throughout the fermentations and ageing until final assemblage. Grapes are vinified for eight to ten days on skins, most components complete their ferments in a selection of predominantly older oak hogsheads. Samplings are taken barrel by barrel to ensure that only the best are included into the finished wine. Alcohol 14.5%
 
Deep red with a ruby rim. Red cherry nose with a hint of musk, earthy with a hint of bracken and a heady mix of nutmeg, cinnamon, clove and toast. Bright red cherries, blackberry, plums and quince fill a luscious mid palate, all framed by elegant, textural grape and oak tannins. A serious construct of Merlot in which balance is the key. Decanting a Fox Creek for one to two hours prior to service is highly recommended.

Shiraz is sourced from the choicest blocks of McLaren Vale vineyards endowed with a range of terroir contributing structural and flavour complexity. Soils include bay of biscay, grey loam, and red gravels. Grapes are harvested when fruit flavours, tannins and acids are in perfect harmony. Vinified on skins for eight to ten days, all components complete fermentations in barrel, developing texture while integrating oak and tannins. Matured for eighteen months in a combination of specialized oaks by a range of French, American and Australian coopers. Barrel by barrel selection throughout all stages of fermentation and maturation ensures that only the best parcels are included in the final wine. Alcohol 14.5%
 
Intense dark garnet colour. Red cherries, plums and a hint of herbaceous spearmint lift meld with the complex aromas of cinnamon, nutmeg and roasted chestnuts. The palate is rich and full showing lashings of plums and cherries, with earthy nutty notes rounding out the mid palate. Power, richness and complexity, the structure is thick and rich, exhibiting great balance and length, characterised by the vibrant textural tannins which soften as the wine evolves. A Shiraz of great purity and unequivocally fine acidity, it finishes long and lingering.

Grapes are grown to a trellis system called Scott-henry and the vines are trained to two cordons. The shoots from the top cordon are lifted by a set of foliage wires while the bottom cordon shoots are down-turned. This system helps control the natural vigor of Shiraz while allowing maximum sunlight penetration and ventilation of the canopy. Hand pruning yields a harvest of small, concentrated berries full of colour and flavour. Parcels are individually fermented for a week on skins whilst being gently pumped over to preserve primary fruit flavours in the wine. Components are pressed off for completion and a term of maturation in a mix of fermenters and prior use French and American oak barrels. Alcohol 14.5%

Short Row is crafted from harvests of intense, gutsy Shiraz grapes, sourced off the best McLaren Vale blocks and Fox Creek 's short rows of vine growing adjacent to the estate cellars. Endowed with rich and powerful aromas, an amazing palate of blackberry fruit, toast and sweet red berries, all wrapped in velvety soft tannins, culminating with a long and dry, flavoursome finish. The vines on Short Row block are planted for optimal light exposure, translating into yields of the most flavoursome Shiraz grapes. Fruit is vinified on skins for seven to ten days in open fermenters prior to pressing, the majority is treated to a spell of oak barrel fermentation. Parcels are matured in varying proportions of new and one year old French and American oak barrels for eighteen months. Components are selected for inclusion based on fruit intensity, richness, structure and integration of oak. While made to drink well upon release, like all good wine, Short Row rewards the enthusiast who will take the time to decant and set aside for breathing. Alcohol 14.5%
 
Deep purple/ crimson hue. Ethereal perfume of nutmeg and musk, cinnamon and vanilla, intertwined with aromas of plum and raspberries, strawberries and red cherry, all sitting on a layer of dusty, smoky toast. Rich fruit driven front and mid palate crammed full of cherries and plum, strawberries and cream. This ball of richness is a hallmark if the style, youthful grape tannins provide a gritty texture and length that will continue to soften and integrate.

All vineyard staff at Fox Creek take pride at growing the best wine grapes in McLaren Vale. Whilst crafting the ultimate wine is the goal, sustainable viticulture is a priority. The areas around the vineyards are planted to native trees which provide habitat, food and shelter for native fauna. The focus is to be environmentally friendly and only use sustainable practices. Like all temptresses, Vixen is timeless, an assemblage of various vintages. Vixen is a complex yet sophisticated synergy of younger and aged material, a finely balanced, well focused Cuvée with pleasant mouthfeel and tamed tannins. A mostly Shiraz wine with a slightly lesser proportion of Cabernet Franc, and lesser still of Sauvignon. Approx 14.0%
 
Bright red colour, good bead and a purple foam. Vixen oozes a seductive and exotic perfume of black cherry, plum and sweet spice. It is a perfume so alluring, so very arousing, that if it weren't already under glass, you might just think about bottling it yourself. When Vixen cascades into you, surrender to her pleasures. Vixen is a volcano of fragrances and flavours. When she erupts there are hints of blackberry, liquorice and chocolate all capped with a delicate pink mousse. Like finely crushed rubies, the beads of this wine are delicate and persistent, indicative of her high quality and fine breeding. Pure bliss when served on her own, Vixen is also a mouthful of deliciousness with festive puddings, tapas or meats.

In the past years since Fox Creek was established, many of the Fox Creek wines have been recognized by being awarded both Trophies and Gold Medals from National and Regional Wine Shows. The McLaren Vale Region has a Mediterranean style climate with a strong maritime influence and is frost-free as we are 7km from the sea. Annual Rainfall is 600-700mm falling mainly in Winter. It is an ideal location for growing grapes, with little disease pressure.

Fox Creek

Fox Creek has three company vineyards or approximately 60 hectares of vines. The vineyards are within a range of 5 kilometres, near the village of Willunga. "On our vineyards we grow most common grape varieties. The red varieties are our specialty, Shiraz and Cabernet Sauvignon, Cabernet Franc and Merlot. The white varieties grown are Chardonnay, Sauvignon Blanc, Verdelho and Semillon.

"Fox Creek has always protected and enhanced the areas surrounding the vineyards with plantings of indigenous native trees. These provide habitat, food and shelter for native birds. Our focus is to be environmentally friendly and only use sustainable practices if possible. We strive to minimise the use of any chemical or other artificial agents."

There are many different soil types at the estate vineyards. About one half are black cracking clays full of organic matter which can develop deep cracks in summer. The rest are red sandy loams with rocks right through their profile. These soils are well drained and aerated.

Fox Creek manage the vineyard floor with a mix of cover cropping and permanent swards. Mulching the under-vine area is also carried out to improve the structure, fertility and microbiological diversity in soil. Cultivation is kept to a bare minimum to conserve soil structure. The vineyard layout and trellis systems have been designed to best suit the specific needs of individual varieties.

Most of the Shiraz is grown on a trellis system called Scott-Henry, and the vines are trained to two cordons. Most white varieties are grown on a Vertically Shoot Positioned trellis. This gives excellent fruit exposure and ventilation to reduce disease pressure, but enough shading to prevent sunburn damage to the bunches.

With the use of weather stations and continuous monitoring of soil moisture, stress can be minimalized in critical periods such as the time of flowering, controlled stress is utilized to dictate shoot size after fruitset. The outcome of this careful management is to make the most efficient use of limited underground water supplies. All the estate vineyards have drip irrigation, with the exception of one premiere dry-grown Shiraz vineyard.
