The Domaine Chandon and Green Point operations are located amongst some of the most superlative Chardonnay vineyards of the Yarra Valley. Moet & Chandon first purchased the Green Point property with the intention of establishing a leading Australian brand. Vines were planted to soils made rich after many decades of mixed farming. Fruit is sourced primarily from the cooler, elevated sites of the Upper Yarra Valley, off vines planted to red volcanic soils. Vineyards in this region are renowned for producing Chardonnay with citrus flavours and high natural acidity at moderate sugar levels. Parcels of fruit from the lower reaches of the Valley floor contribute lovely soft stone fruit characters.
 
Pale straw with lustrous shades of green. The aroma expresses pristine varietal characters of white nectarine, ripe citrus and stone fruit as well as a subtle flavour profile of sweet, exotic spice. The palate is complex, structured and layered showing excellent balance between the expression of vibrant fruit and the secondary characters of roasted spice, soft cheese and toasty characters derived from fermentation, aging and lees stirring in French oak.
Chandon N.V Brut
From some of Australia's finest sparkling wine vineyards, Pinot Noir and Chardonnay are harvested and pressed through techniques very similiar to parent company Moët Chandon. The batches are vinified separately to maintain purity. A minimum of eighteen months on it's sedimentery lees as per Methode Traditionelle, to enhance the complexity of the wine and to emulsify the mousse with all the vibrant expressions of fruit. All of Chandon's releases are aged in their own bottle, prior to disgorgement, treatment to liqueur doseage and the final tirage.

The Chandon wineworks are located at Green Point, so named as it is one of the few places in the Yarra Valley that remains green throughout the summer months. Chandon draws on the high quality standards of its parent company Moët Chandon to make the best possible sparkling wines anywhere in Australia. In addition to her exquisite Yarra Valley vineyards, Domaine Chandon has established a forty hectare site on the remote and cool, slow ripening altitudes of the Strathbogie Ranges. The elevated property is planted to Chardonnay and Pinot Noir, and is called upon to provide splendid parcels of fruit, from highly specialized blocks of vine, to embellish the superb Chandon sparkling cuvées.
 
Light golden colour with persistent bead and fine mousse. Aromas of lifted spice and fig with honey and floral notes are immediately evident. Secondary biscuit aromas and yeast autolysis attesting to it's extended period of rest on sediments, lemons and pear, the front and middle palate is round and creamy, the flavours are complex and discernible. Enjoy with a tasty selection of canapes, poultry and desserts. Crafted to the classic Methode Traditionnelle, Chandon is long and lovely, with a lively, crisp Brut finish.

Fruit is sourced from upper reaches of the cool climate Yarra Valley, grown to a variety of soil types ideal for Sauvignon Blanc. Vineyards are meticulously maintained to achieve dappled light throughout the canopy, ensuring the retention of pristine flavours. Grapes are harvested when they can best display optimum intensity and acid balance. Bunches are pressed in the coolest part of the early morning, juices are held in contact with lees for a short time to liberate complex flavours and add texture. Ferments are racked and inoculated to a strain of yeast which complements the fruit. Vinified under strict controls at cool temperatures in tank, followed by clarification, assembling and bottling. Alcohol 12.0%

Chandon Tasmanian Cuvee 2008

A single vineyard wine from some of the most superior terroir in Tasmania, an elite, sophisticated sparkler delivering cool climate vibrancy, true Methode traditionelle. Grapes are sourced exclusively from the twenty hectare Tolpuddle Vineyard in Coal River Valley. Planted to Pinot Noir and Chardonnay, Tolpuddle is influenced by the maritime climes and weather patterns of Southern Ocean. The conditions retain cool night and day time temperatures which allow grapes to ripen more slowly for the development of spectacular, intense and complex flavours.

Top soils at Tolpuddle have a very high sand content whilst the subsoil is dense clay. The vineyard is trained to vertical shoot positioning trellis, minimising the development of phenolics and tannins whilst maintaining vibrancy of flavour. Chardonnay and Pinot Noir are hand picked at the onset of fruit ripeness throughout the cooler parts of day to preserve quality and ensure minimal colour extraction. Parcels are gently pressed and chilled for cold settling. Juices are racked off lees and transported to Domaine Chandon for a wild indigenous yeast fermentation, settling and stabilisation. The final assemblage is treated to over three years ageing on yeast before disgorgement and addition of liqueur dosage.
 
Pale gold colour, a persistent mousse with fine, elegant bead. Vibrant and enticing aromas greet the nose with jasmine, warm cashews and zesty citrus fruit. Toasty yeast notes are complemented with classic flint and wet river stone character. In the mouth, crisp green apple and nashi pear freshness from the Chardonnay meld seamlessly with yeast autolysis which provides a creamy silkiness that continues throughout. Hints of camomile and brioche along with Pinot Noir characters of raspberry, spice and pomegranate complete the sensation and complement the refreshing minerality. A wine of great persistence, character and charm to be brought out at every occasion.

Is there a hedonist who can resist the creamy pink? Domaine Chandon's is bred to be luscious yet poised and elegant, exuding perfumes of sultry liqueured cherry and essences of framboise. The Pinot Noir's seductive aromas and darker berry fruit flavours dominate this exciting Cuvée, whilst the presence of Chardonnay's rich tropicality and the tang of fine pineappley acidity keep things strictly Pinot Chardonnay. With a heritage of growing the Yarra Valley's best Pinot Noir and Chardonnay, expressly for the purpose of making world class sparklers, Domaine Chandon can set aside the most favourable batches of grapes to fashion into the most enticing sparkling Rosé. Crafted to true Methode traditionelle, assembled from a selection of the most complimenting vintage wines, rested on yeast lees to age and to infuse a rich autolysis, disgorged and treated to liqueur doseage.
 
This copper pink Rosé is as spectacular to behold as it is to taste. It's heady perfumes of liqueured cherry and tart pineapple precede secondary bouquets of citrus, and of nuts. Aromas unfold with layers of strawberry cream and freshly baked cakes, autolysis characters and nuances of lemon. On the palate are impressions of refreshing juicy berries, currant and strawberry, cherry and custard flavours give way to a creamy mid-palate offering toastyness, raspberries and plum. The wine retains it's effervescence all the way through, it's creamy mouthfeel and petulance matches taste sensations, with fine texture. True to the House style, it offers seamless structure and an impressive finish.
Domain Chandon Cuvée Riche
Modelled on the French Doux style, an assemblage of Chardonnay which brings creamyness to the palate and contributes structure. Pinot Noir adds middle palate dimension with hints of cherry and cream. A rich cake textured palate, warm and fruit driven, with a tingling acidity that cleans and refreshes, the perfect every occassion wine.

Chardonnay, Pinot Noir and Meunier are sourced from a range of cool climate viticultural sites, including Strathbogie, Upper Goulburn, King and Yarra Valleys. Grapes are gently pressed and vinified separately. When the primary and malolactic fermentations are complete, components are settled and stabilised for assemblage. A component of reserve wines from previous vintages are included, enhancing the complexity and structure. A small amount of sugar and cultured yeast is added before the wine is bottled and sealed under a crown seal for fermentation in bottle. After ageing on yeast for a minimum of thirty months, the bottles are riddled and disgorged before disgorgement and dosage liqueur. Alcohol 12.5%
 
Pale gold straw, creamy, persistent mousse. A sweeter, richer but balanced sparkler fashioned to the French Cuvée Doux. Enticing aromas of guava, ripe tropical fruits, vanilla and dried apricots combine with complex notes of cashew nuts and brioche. A soft and opulent front palate leads seamlessly into a middle palate offering dried fruit and yeast derived savoury creaminess. The complexity is enhanced by liqueur doseage and the result is a richer more exciting wine exhibiting lovely balance between toastyness and fruit. Cuvée Riche culminates in a refined finish. Surprisingly adaptable as a richer style of aperitif, an accompaniment to canapes and as dessert wine, it mates perfectly to quince tart or wet ripe cheeses.

Blanc de Blanc is exclusively Chardonnay, a wine of intense elegance, cleanliness of aroma, flavour and heightened varietal expression. Fashioned to the essential Méthode Traditionnelle style, the choicest parcels of Chardonnay from Green Point vineyard in the Yarra Valley are assembled alongside components grown to the splendid slow ripening climes of Strathbogie and King Valley. Endowed with a tight palate structure, vibrant fruit characters and refined acidity, Blanc de Blancs is a profoundly fresh and elegant wine with a soft dry finish.

Chardonnay is harvested throughout the cooler parts of day to preserve the quality and freshness of juices. Grapes from each site are pressed and separately vinified in temperature controlled fermenters to ensure the unique characteristics of each parcel is retained. Fourteen individual Chardonnay Cuvées are selected on the basis of subtle yet concentrated varietal flavour, balanced structure and generous palate length, all essential for the delicate and elegant Blanc de Blancs style. Following tirage and a secondary fermentation, Chandon spends over forty months ageing on sedimentery yeast lees, an essential part of the Méthode Traditionnelle process. Alcohol 12.5%
 
Bright pale gold hue with a fine mousse and persistent bead. Freshly roasted chestnuts and warm baked bread aromas are complemented by subtle stone fruit and lemon zest on the nose. A soft, voluptuous front palate exhibiting the classic Chardonnay generosity, a soft and mouthfilling entry, with fine, crisp acidity providing the structural backbone to support a generous middle palate. Classic Blanc de Blancs citrus and white peach characters excite, toasty, nutty yeast autolysis notes delivering richness and creaminess, building to a crescendo, before tapering off, right through to the long and flinty, mineral finish.
Domaine Chandon Sparkling Pinot Shiraz
Chandon is the progeny of an old world winemaker who has recognized the microclimes of Victoria as being akin to the native vineyards of Champagne. Sparkling reds are a style that Australia has made it's own, Chandon have fashioned one with unique character and charm. Pinot Noir forms the backbone and supports the palate. Shiraz contributes complexity and length, structure and richness. The wine is aged in seasoned oak barrels and assembled to yield a palate of layered chocolate, ripe dark cherry and cinnamon spice flavours.

Parcels are crushed and separately vinified in open top fermenters to preserve their unique characteristics. Ferments are gently punched down by hand up to six times daily to extract colour from the skins. Upon completion, the wine is racked for malolactic, some batches are stored in seasoned oak barrels for a few months to achieve a soft, smooth tannin structure. The final assemblage includes fifteen individual cuvées and a small amount of one to two year old reserve wines. A secondary fermentation in bottle is inoculated followed by twelve to eighteen months yeast ageing and disgorgement. A final dosage is then added before sealing under cork and a further spell of ageing before release.
 
Deep tawny purple. A bouquet of dark berry fruit aromas, from blackberries and cherry through to ripe blueberry. Sweet spice notes of liquorice, cinnamon and cloves echo throughout the full, rich mouthfilling palate. The intense bead resultant from the extravagant Prise de mousse adds softness and weight to the middle palate, supported by fine chalky tannins which contribute structure and length, before a bright, persistent and savoury finish. A wonderful wine to match with food, complex arrays of full, rich flavours make this the ideal effusive beverage to accompany roast pork, turkey or duck. Match with fired belly of suckling pig on schezuan eggplant, or serve alongside oven baked, self saucing chocolate pudding.

Grapes are picked at the onset of fruit ripeness, throughout the cooler parts of day to preserve quality and ensure minimal colour is extracted during the press. All parcels are separately handled to preserve their unique character, over forty components are assembled into the final Cuvée. Chardonnay provides flavour and intensity at the front of palate. Pinot Noir contributes weight, focus to the back palate and persistent creamy finish that is the defining quality of Vintage Chandon. The wine is disorged and doseaged after an extended yeast ageing, followed by a rest in bottle before release, providing additional complexity to the aromas, flavours and texture.

Based at the Green Point winery operations located in the Yarra Valley, viticultural region which enjoys a wide range of cool to cold climate vineyards, ideal for sparkling wine production. The group of wineries was brought together as Chandon Estates in 1997 and formed a division of Moet - Hennessy. The winery is also well situated to draw fruit from other cool climate vineyards throughout Tasmania, Coonawarra, the Strathbogie Ranges and the Victorian Alps. When Moet & Chandon purchased the Green Point property, the original homestead, built around 1880, was renovated and a purpose built winery located next door. Originally a mixed farming property, Chandon and the Green Point winemaking operations are located in lovely grounds amongst the vineyards, enjoying spectacular views across the valley to the mountains. The Colonnade linking the winery to the visitor's centre, with its distinctive link arches, was architecturally inspired by the Chateau of the Champagne Houses of France. The winery was purpose built to architecture which is a marriage of modern, and the traditional Champenoise.

In addition to the Yarra Valley vineyards, Domaine Chandon Australia has established a forty hectare vineyard on the remote, and very cool Strathbogie Ranges, about 150 km north of the Yarra Valley Vineyard. The Strathbogie Vineyard is planted to Chardonnay, Pinot Noir and Sauvignon Blanc, and is called upon to provide distinguished batches of fruit, from highly specialized sparkling wine vineyards, to embellish the superb Chandon Cuvées. Grapes sourced at the Strothbogie site are of world class and yield exemplary varietal wines.

A wide range of styles are produced, including the Vintage Brut, Rose and Blanc de Blancs, three distinct styles which exhibit complexity from three years ageing on yeasts in the bottle. The immensely successful Chandon Vintage range was launched in 1989 and is now established as a leader in the Australian market. It has also been very successful in export markets, particularly the UK and Japan. The NV Brut is a recent inclusion to the range and has become Chandon's volume leader.

The classic Pinot Noir Chardonnay, Rose and pure Chardonnay non-vintage Brut are fresh, lively styles distinguished by a complexity derived from the inclusion of Reserve wines (base wines of older vintages that are aged in tank or under oak. The Cuvee Riche is a luscious high doseage sweeter style. Green Point Cuvee, Chandon's prestige sparkling, is a very long yeast aged wine (five years) made from the finest Pinot Noir and Chardonnay base wines. A Sparkling Pinot Noir Shiraz expresses the Australian classic style through an unusual blend of seldom matched varietals.
