Chestnut Grove Cabernet Merlot 2005

Chestnut Grove have harnessed the electric qualities of their now famous Merlot wines, loved by all and sundry, to create this most stylish of West Australian blends. A mostly Cabernet (56%) Cuvée with a lesser component of good Merlot fruit (43%) and a judicious tot of Petit Verdot, sourced exclusively from the mature (over twenty years old) Chestnut Grove vineyard at Manjimup. A mighty vintage for the region and for Chestnut Grove, which has kept production of this silken wine to a mere thousand cases.

A programme of limiting crop load and irrigation together with canopy management to achieve 80-100% light exposure in the fruit zone ensures intensity of flavour, body and colour in a cool climatic region. The fruit is crushed to small open fermenters and then undergoes a cold pre-fermentation maceration for 24-36 hours. During fermentation, management is achieved with a combination of hand plunging, pumping over and rack and returns at critical stages in the fermentation. The oak regime was 30% new, 70% 1 year old French oak sourced from three selected cooperages which fully complement the fruit. All barrels and wine batches are assessed individually with only the best barrels making the final cut. Alcohol 14.5%
 
Deep red with crimson hues. The aromas are laden with red currant, plum, chocolate and a sweet herbaceous mint character with spicy biscuity oak to compliment the lifted perfume. The palate displays complex blackcurrant and subtle menthol with fruit cake and vanilla bean flavours. A wine of great weight and depth of flavour with fine, mouth coating tannins.

Chestnut Grove has developed a fine reputation for producing one of Australia's best examples of cool climate Verdelho. The growing conditions and excellent soil types of the Chestnut Grove vineyards, produce intensely flavoured, fresh topical characters, and juicy forward drinking wines. Complexity is purely fruit derived in this dashing Verdelho Cuvée, enhanced by a smaller proportion of Sauvignon Blanc, it shows good intensity of ripe tropical fruit, guava, gooseberry, passionfruit and spice. A fruity white with a crisp dry finish.

All parcels are handled with the aim of retaining the unique, pristine fruit flavours of Verdelho grapes without any complicating winemaking derived influences. A range of winemaking techniques are employed, aimed at the retention of primary fruit characteristics, focused on maintaining cool temperatures for the fruit at harvest, to transport to the winery, through to pressing. Viniculture between midnight and midday, the juice is only ever handled under cover of inert gas to avoid air contact. Cool fermentation temperatures were maintained to minimise the influence of yeast on the flavour profiles. Post ferment the wine was racked off lees promptly, before blending and fining, stabilisation and filtration. Approx 14.5%
 
A rich, immediately appealing wine, with very good concentration of tropical, stone fruit flavours. Gooseberries with subtle spicy / savoury hints almost reminiscent of white pepper add complexity. The balanced palate offers luscious tropical fruit notes that linger on a fresh, crisp, clean finish.
Down at the southern tip of Western Australia, between Margaret River and Mt Barker lies the little town of Manjimup and a very large and beautiful Chestnut Tree

The Chestnut Tree is at the highest and most visible site of the Chestnut Grove vineyards. It was always going to be the focal point of the winery that today produces one of the best Merlots in the country, as well as West Australia's finest example of Verdelho.

Every release under the Chestnut Grove label is made fromestate grown fruit, the quality of the wines is a direct reflection of the quality of our vineyards. As the Chestnut Grove vines continue to mature, the wine improves dramatically. The natural balance maintained in the vineyard is evident in the wines, delicious on release, with the ability to age with grace.

Chestnut Grove is rapidly gaining an enviable repute for their world class wines, and created quite a stir when they took out the Most Successful Exhibitor award at the 2006 RSM Bird Cameron Timber Towns Regional Wine Show, winning three Silver and three Bronze Medals.
