Chapel Hill expresses the affability and charm of the finest McLaren Vale Cabernet Sauvignon. With such a close proximity to the Gulf of St Vincent, and the cooling afternoon sea breezes she provides, the grapes do not ripen too quickly. Flavours, colours and tannins develop slowly, and to the very fullest. Cabernet grapes grown here are bursting with natural fruit sugars and exhibit excellent varietal definition. The individual parcels are harvested separately and vinified on skins for eight days. Ferments are handled gently towards the end, ensuring that any astringent or stalky tannins are not drawn. Grown to the cooler climes of the Adelaide Hills this fine example of Pinot Grigio displays all the elements associated with the variety. Chapel Hill source Pinot Grigio from vineyards in the sub regions of Paracombe, Mt Torrens and The Range to obtain a more diverse spectrum of flavour and texture. The underlying principle is to achieve a healthy balanced vineyard, neither vigorous nor stressed, to grow the desired yield with moderate canopy. Grapes are hand harvested and delivered promptly to the winery, minimizing any skin contact to avoid the extraction of undesirable colour and phenolics. The crusher is bypassed and whole berries are loaded into the membrane press, which is run on a delicate cycle. A slow and gradual cool ferment is followed by eight months on yeast lees to encourage the integration of fruit flavours. Alcohol 13.0%
 
Light yellow with green tinges. Alluring aromas of floral and pinenut, lemon preserve and apricot over a scent of calico. Displays guava, lychees and nashi pear flavours underpinned by a lingering, spicy, grainy and minerally palate. Fashioned to a drier style of Grigio, in combination with the textural mouthfeel, showcases the supple nuances of the grape as well as ensuring that the wine can be enjoyed in partnership with all good food. Sangiovese offers unique savoury fruit characters and the most splendid tannins. Parcels are sourced from Chapel Hill's Kangarilla vineyard located at the foothills of the Mount Lofy Ranges on the eastern border of McLaren Vale. This mesoclimate is ideal for encouraging Sangiovese to reveal all of its varietal charm. Grapes are vinified in small open fermenters and gently hand plunged to encourage the preferential extraction of subtle savoury qualities while avoiding any astringent tannins. After a total of eight days on skins the ferment is basket pressed and the wine racked into a selection of seasoned French oak barrels for sixteen months to encourage the expression of grainy varietal tannins. A deep red colour. The nose exhibits aromas of bay leaf, violets and pancetta. The palate is alive with flavours of black cherry and sun dried tomatoes, balanced with chalky tannins and a lingering savoury finish. A distinctive personality which exudes interest, the higher natural acidity and firm tannins pair well with Mediterranean recipes, particularly tomato based dishes. Chapel Hill's philosophy is to handle the grapes and the ferment gently in order to minimise the extraction of any undesirable harsh phenolics. The idyllic day and night time temperatures of Adelaide Hills allow the vines to recover and encourage the grapes to achieve optimum ripeness. The bunches bypassed crusher rollers and whole berries were introduced to the open fermenter, carefully pumped over and hand plunged to ensure an optimum and gentle level of colour, flavour and tannin. The wine was left in contact with it’s lees for seven of the nine month barrel maturation to encourage the integration of fruit flavours and the grainy varietal tannins. Aged in a selection of prior use French oak hogsheads. Alcohol 13.5%

Chapel Hill's estate grown Shiraz is endowed with an intense, opulent mouth coating palate, exhibiting a unique combination of power and grace. Grape are sourced from vines up to thirty three years of age. The various parcels were harvested and fermented separately to ensure each articulates the unique character of terroir and site. All ferments are left on skins for a minimum of seven days. Throughout the maturation process, barrels are racked and returned periodically, to seamlessly integrate the tannins into the wine, ensuring that minimal filtration and no fining is required prior to bottling. The parcels are harvested and vinified in small fermenters separately, to ensure that each remains articulate of the unique characters of the site. Verdelho originated in Portugal and has acclimatized itself well to the McLaren Vale's maritime climate. One of the very first varietals planted in the McLaren circa 1825, Verdelho is a beguiling variety, its generous and vibrant characters evoke an array of stylistic influences due to its wide versatility. Grapes are sourced from the Chapel Hill Kangarilla vineyard, located in the foot hills at the base of the Mt Lofty Ranges. The gully winds and higher altitude create a cooler mesoclimate than that on the McLaren Vale floor. Some vines are fully shaded and picked early for grassy herbaceous characters. Another portion is harvested at medium ripeness for it’s tropical fruit salad flavours and the balance is left to hang until full bloom of honeysuckle is achieved. The wine is bottled immediately after fermentation to protect this unique flavour profile. Grapes are cold pressed and racked, free run juices are cool fermented in tank with no barrel ageing or wood treatment whatsoever. Alcohol 12.5%
 
Colour is a deep straw green, a richly hued wine. Expressions of kaffir lime leaf, gooseberry and honeysuckle, guava and passionfruit. Verdelho’s luscious, generous and vibrant flavour renders it perfectly compatible to a myriad of cuisines and occasions. A consequence of the phased harvesting, Chapel Hill displays an intriguing array of flavours, complex stonefruits and buttered toast, the characteristic honey tones continue to soften demonstrably. Chapel Hill takes its name from the historic ironstone church built at the property in 1865

Chapel Hill Winery is entirely in the Hills Face Zone. In 1990 environmental consultants were briefed to advise regarding development in this sensitive rural preserve. The estate obtained planning approval from the Minister for Environment and Planning in 1991, and built the winery in 1993. Chapel Hill is the embodiment of the wine and food experience delivered using the best of environmental practices by people who are passionate about their product and the McLaren Vale winegrowing region.

Originally the Christian Bible church and parish school, the church closed in its centenary year (1965) and fell into disrepair until its restoration in the 1970s. The church is today a tourist attraction and serves as the cellar door at Chapel Hill. In December 2000 Chapel Hill changed ownership once more, this time being purchased by the Swiss family of Mr Thomas Schmidheiny. The Schmidheiny family also own Cuvaison Winery in California and vineyards in Argentina and Switzerland.

In 1994 the winery received a commendation for "A development sensitive to the environment in the Hills Face Zone". In 2003 Chapel Hill obtained planning approval to build the Chapel Hill Winery Gourmet Retreat, the boutique hotel and cooking facility.

Set into the hillside, constructed of stone in browns and greys, using recycled materials, the Gourmet Retreat construction is cognisant of minimising its impact on its vineyard environs. In 2005 the company received a merit award in the Nature Foundations Environment Award.
