Capel Vale Debut Cabernet Merlot 2011

Western Australia Cabernet Merlot has evolved discernible regional style and established an international reputation, a new genre of wine that's quite unique. Debut is drawn from harvests of the finest fruit, grown to good vineyards across the eminent winegrowing precincts of Western Australia. The aim is to fashion a profoundly fruit driven wine, that's supported by supple tannins and a supple veneer of oak, to match tomato meat pastas, gourmandise sausage or juicy cut of lamb.

Dr Peter and Elizabeth Pratten have spent the last thirty years successfully pursuing their dream of creating quality wines with regional style and elegance. Building on that strong foundation, the Pratten family have been triumphant in focussing on the rudiments of world class viniculture. The team works to the belief that working hand in hand with nature is the best way to produce fine wine. Grapes are destemmed but not crushed for a maximum whole berry inclusion. The must is chilled and cold soaked for several days, followed by traditional fermentation. Musts are pressed, settled and racked off lees for completion of malolactic and a year's maturation in a selection of older oak barrels. Alcohol 14.0%
 
Rich red hue. Classic Cabernet Merlot nose of cassis, mulberries and capsicum. A supply structured palate exhibiting sweet fruit flavours, currants blackberry and plums. Barrel ferments infuse the wine with a delicious mouthful of chocolate/ cedar notes. Will complement many cuisine, the wine of choice to accompany roast leg of lamb or penne with chunky tomato and pork salsiccia.

Chardonnay grown to the cool nether parts of southwest Australia can stand alone, unwooded and unoaked, showing lifted aromas of pineapple and melon, nectarines and peach. Vines are stimulated by the unique maritime influence of the coastal regions into yielding grapes which express the hallmark characters that we know and love about WA Chardonnay. Debut makes the grade, not least for it's vitality and freshness in a vivacious fruit driven styling, but also for its generosity of flavour, contemporary styling and exquisite balance.

Capel Vale can lay claim to some of the finest vineyards in the nation, one of the few major family owned wineries in Western Australia. The team's philosophy has always been to deliver intensely fruit driven, complex and powerful, yet elegant wines, from the fruit grown to those vineyards most suited to each grape variety. Chardonnay is harvested at optimum ripeness, grapes are crushed and destemmed, the musts are chilled and dejuiced. Batches are racked off into fermenters after three days of cold settling and introduced to aromatic yeasts. Vinification is halted early to retain the natural grape sugars, to add body and enhance fruit characters in the finished wine.
 
Straw yellow hue. Lifted tropical fruit aromas, pineapples and peach, apple and fresh cut melon. A clean, fresh mouthful of citrus and nectarine flavours on a textural Chardonnay palate exhibiting excellent depth and weight of cool climate fruit, culminating on a long and crisp finish. The wine of choice for baby snapper or baked eggplant and bolognaise with tomato and basil.

Winemakers Dr Peter and Elizabeth Pratten have spent the last thirty years pursuing their dream of the finest quality wine, proud regional styling and true elegance. Eighty acres of capel Vale vineyards are named after the original Capel Shire subdivisions, the Stirling district being one of the earliest areas surveyed in the entire state. Merlot grapes are partially hand picked from a split canopy trellising system and de-stemmed without any crushing for maximum whole berry inclusion. The must is then chilled and cold soaked for up to five days followed by a traditional vinification. The wine is pressed, settled and racked off gross lees for malolactic and maturation in a selection of older oak barrels to soften and form structure.
 
Plum / cherry coloured. Bouquets of kirsch and plum, blackcurrants, bramble and spice, luscious dark blueberry fruits are complemented by mint, autumn leaves and leather. Maturation in French oak barriques produces flavours and aromas reminiscent of sweet plum and cherry with hints of mint, tomato, autumn leaves and leather, complemented by subtle spice, chocolates and tobacco. The palate is rich and generous whilst maintaining elegance and finesse, fine tannins leading to a dry finish. Match it with lamb, osso bucco or hard, pungent cheese.

Semillon and Sauvignon Blanc have found a perfect home under the favourable maritime climes of Western Australia's premier viticultural precincts. Crafted from harvests selected by the award winning Capel Vale team, totally fruit driven and completely unoaked, Debut is remarkable as much for it's marriage of ripe tropical fruit flavours with greener vegetable characters, as it is for it's clean, crisp and elegant styling.

Capel Vale have grown enormously, one of the few major family owned wineries in Western Australia, they own and operate seven vineyards in the four EU registered growing areas in the state's southwest, each site is planted to varietals which are most appropriate to the climate and terroir. Semillon and Sauvignon Blanc are harvested at optimum ripeness, crushed and de-stemmed, the musts are chilled and dejuiced. After three days of cold settling, juices are racked off and an aromatic yeast is introduced. Fermentations are halted early to aid in preserving the natural grape sugars and to add body and enhanced fruit character to the finished wine. Alcohol 13.5%
 
Pale straw hue. Freshly cut grass aromas, pink grapefruit, passionfruit and gooseberries, Primary fruit in the middle palate maintains interest from start to finish, flavours of lemon and preserved rind, fruit salad and figs. A clean finish with lingering fruit characters. To accompany barbecued prawns, greek salad or goat cheese risotto.

Capel Vale have played an important role in the establishment of the Western Australian wine industry and the recognition of southwestern Australia as a premium winegrowing region. They established their first vines in 1974 after determining that the Capel are near Geographe Bay was ideally suited to viticulture. Capel Vale have enjoyed runaway success with their second tier Debut label, having claimed gold medal at the National Canberra wine show and Blue Gold at the Sydney International for Shiraz.

The winemaking philosophy at Capel Vale is to make intensely fruit driven and complex, powerful yet elegant wines, from fruit grown specifically to the mesoclime that's most favourable. Every Capel Vale vineyard was established from day one with the grape varieties most appropriate for the climate and terroir. Shiraz grapes are destemmed but not crushed for a maximum inclusion of whole berries. Musts are chilled and cold soaked for several days. Choice yeasts are added to initiate a traditional vinification in controlled fermenters. Upon completion, the batches are pressed, settled and racked off lees for a course of malolactic and maturation in a selection of older oak barrels.
 
Bright garnet hue. Licorice nose, red berries and black pepper spice. Succulent berry and black pepper fruit flavours skillfully balanced by spicy French and American vanillin oak. A liingering finish on a note of plums, currant and spice. Will accompany many food styles but is the accompaniement of choice to red game meats, lamb and rich beef recipes.

Western Australia has enjoyed a long and salubrious history with Verdelho, with a succession of the nation's finest vintages. Capel Vale have made the most of their baronial expanse of vineyards, to find the perfect sites for the establishment of superior Verdelho vines. Made to measure for whole roasted birds, pine nut risotto and good Al fresco faire, a revitalizing Verdelho wine at it's very best, fruit forward and refreshingly unoaked.

Light pale straw hue. Tropical fruit nose of mango, apricots and guava, preserved lemon and scents of nut. Intense lemon lime flavours on the palate, fully rounded and balanced mouthfeel complemented by sweet fruit characters, finishing pleasantly dry, lingering and clean. A match to mild Asian curries, roast duck, or chorizo with puy lentils.

Capel Vale bears the fruit of more than thirty years research, trials and improvements in the vineyard. Predominantly Cabernet Sauvignon and very, very Margaret River, enhanced by a small percentage of classic Bordeaux varietals, a full bodied red wine by one of the region's most distinguished estates, elegant and statuesque, framed by attractive tannins and splendid oak.

The Margaret River region while cool, experiences an earlier vintage and can support red grape varieties which would not ripen so well elsewhere. The cooling influence of the Indian Ocean permits complex flavours to develop while warm days ripen the tannins. Picked at optimum ripeness from the Scholar Vineyard, vines are carefully husbanded and harvest is carried out to healthy levels of baumé. Fruit is destemmed but not crushed and each batch is handled separately. Treated to a cold maceratation and moderate ferment, yeasts are introduced to increase texture and aromatics. Following vinification and extended maceration, the wine is matured in a selection old and new French oak barriques. Alcohol 14.0%
 
Vibrant red colour with purple hues. Mulberry, cassis and capsicum overtones. Mulberries, cassis and plum with some secondary chocolate tones. Delicious to drink young for its primary fruit characters, promising great complexity. To accompany beef stroganoff, dukkah crusted lamb, mature cheddar, parmesan or romano.

Crafted to a combination of traditional and modern vinification techniques, Capel Vale displays strong Pemberton regionality while exhibiting clear varietal character. Climatically unique for the regular afternoon cloud cover, the growing seasons around Pemberton permit Chardonnay grapes to ripen slowly and completely, translating into wines of elegance and tightness on the palate.

Capel Vale's winemaking team subscribe to the philosophy that working hand in hand with nature is the best way to produce fine wine. The family owned operation manages mature established vinyards around the cool climate Pemberton region and strives to produce wines which reflect the distinct climate and soils. Capel Vale hold a long term commitment to interacting with the environment for the production of the highest quality healthy grapes. Harvested to a schedule determined by the development of vibrant varietal characters in the grapes, the fruit is treated to barrel fermentation and a spell on sedimentery lees to enhance complexity, followed by a spell of maturation under a combination of fine oak barriques.
 
Pale yellow colour. Aromas of citrus and grapefruit are complexed by French vanilla oak and rich yeast lees characters. The aromas follow through to a long and complex palate exhibiting creamy mouthfeel and good length. An elegant wine which drinks beautifully alongside roast chicken and rosemary or a washed rind cheese.

Capel Vale have been crafting intensely fruit driven, powerful yet elegant Sauvignon Blanc from harvests grown to the finest Western Australia vineyards since 1974. The balmy maritime climes encourage Sauvignon Blanc grapes to develop the requisite qualities for a generously textured palate with firm structure and fine length. Completely unwooded and unoaked, Capel Vale displays revitalizing green bean, snow pea and lantana characters with an underlying minerality.

Pemberton sits on the slow ripening southwest coast of Australia, fully blessed by the most appropriate climates and soil to make serious Sauvignon Blanc. The success of Australia's southwest regions are due in no small part to decades of viticulture by Capel Vale. Grapes from the cooler parts of Pemberton are harvested at optimum ripeness, crushed, de-stemmed and chilled. Juices are transferred to fermenters after three days cold settling and introduced to aromatic yeast. Vinifications are halted early to preserve natural grape sugars, adding body and enhancing fruit character in the finished wine.
 
Limpid pale straw green colour. Fine gravelly mineral aromas of Pemberton soils, citrus and cut grass, snap bean and snow pea working against a backdrop of mineral elements, kiwi and herbaceousness. The aromas are carried through to the textured palate, complemented by flavours of honeydew melon, tropical fruits, limes and flint. Match with grilled snapper, sashimi or goats cheese and truffle omelet.
Capel Vale began as a hobby for Sydney radiologist Dr Peter Pratten and his wife Elizabeth when they purchased land on the Capel River between Bunbury and Busselton in 1974

Capel Vale Winery, restaurant and cellar door, now sit atop the original vineyard site, Stirling Estate. Stirling Estate was originally the site of a stone fruit orchard in the 1930s. Consisting of rich, red alluvial loams over a limestone base, it possessed a natural, permanent watertable and was perfect for growing vines. The first plantings were in 1974, producing the first commercial vintage in 1980. After determining that the soils of the Capel area (now included in the EU registered Geographe Region) were best suited to Chardonnay and Merlot, it became the Prattens passion to determine the best region in South Western Australia for each of the main premium grape varieties.

Capel Vale owns and operates seven vineyards in the four EU registered growing areas in South Western Australia, in total 500 acres (210 hectares). Each vineyard grows the most appropriate fruit appropriate for the climate and terroir. The winery's operation has played an important role in the establishment of the Western Australian Wine Industry and the recognition of South Western Australia as a premium grape growing region. The winery now exports to over fifteen countries. It's been an amazing journey from a few vines and a small tin shed!

The Whispering Hill vineyard is the most southern at Mount Barker, followed by Sheldrake at Pemberton, Madrigals at Margaret River and Stirling and Wellington at Capel in the increasingly recognised region of Geographe. All wine produced by Capel Vale is made at the winery on the Stirling Estate in Capel.

Capel Vale's vineyards in the Geographe region consist of Capel Stirling 1, Capel Stirling 2 and Capel Wellington, eighty acres in total. The first vines were planted on the Stirling Estate vineyard in 1974. The winery, bottling line, warehouse, tasting cellar and restaurant are now all located on this property. The vineyards are named after the original Capel shire subdivisions. The Stirling area being one of the earliest surveyed areas in the state, deriving its name from Captain James Stirling, the founding father of modern Western Australia.

The Pemberton area is enjoying increasing acclaim as a premium cool climate viticultural region producing elegant flavours and wines of note. Capel Vale's Sheldrake Vineyard was planted in the winter of 1995 to initially supplement and ultimately replace fruit sourced from the Pemberton region. The name 'Sheldrake' seemed a natural progression from our emblem, the Shelduck. The vineyards here support superb varietal vines.

When Capel Vale's Margaret River vineyard site was purchased the wide variety of native birds in the area inspired the name Madrigals. A madrigal is a part-song sung by several voices. The word voices is to be taken literally, the madrigal being a piece of vocal chamber music, dating back to the 1600s, intended to be performed with one singer to a part. It was noticed that the birds around the vineyard seemed to be singing in a madrigal style. Rather than all singing together it was as if each were awaiting their lines. Then, as if on cue, the next madrigal would perform their contribution to the recital.

The vineyard name, Whispering Hill was inspired by the noise that the wind makes when blowing through a stand of rare Casuarina trees, near a rocky outcrop on the property - making it indeed a Whispering Hill. Fruit from the vineyard has a long history of producing award winning wines. This began when the 1986 Capel Vale Riesling was awarded the Australian National Dry White Champion - against many other varieties of white wines. This particular wine was made by Capel Vale's owner and founder Dr Peter Pratten from 75% Mt Barker and 25% Capel fruit. The accolades have continued with the Whispering Hill Riesling receiving Top Gold at the Mt Barker Show.
