Cape Mentelle's Rob Mann is grandson to one of Australia's legend winemakers, West Australian pioneer Jack Mann. The father to son skills, handed down and embellished throughout the vintages, translate into some of the country's most distinguished Cabernet wines. The majority of the vineyards are established on undulating country surrounding the major water courses that flow to the Indian Ocean. Most are within three to seven kilometres off the coast at elevations between 150 and 200 metres, where the revitalizing maritime climes are idyllic for Cabernet Sauvignon. After destemming and light crushing, the individual batches are fermented on skins for up to twenty days. At the desired balance of fruit and tannin extraction, each batch is gently basket pressed, with harder pressings kept aside. Once sugar dry, batches are racked to a selection of new and seasoned French oak for malolactic, followed by eighteen months maturation incorporating regular rack and returns. Alcohol 14.0%

Fruit is predominantly sourced from the cooler southern Wallcliffe and Karridale subregions. Most of the vines are cane pruned and vertical shoot positioned. The majority of sites are planted to Mendoza (GinGin) clone of Chardonnay, which has proven to be particularly successful in Margaret River. Hand picked bunches are elevated to the Bucher membrane press and settled overnight. The following day, juices are racked into Burgundy coopered French oak barriques. Fermentation is activated by natural and select yeasts. Matured in a combination of fine oaks for nine months, during which time battonage and topping is conducted weekly. The best barrels are determined and assembled. Alcohol 13.4%
 
Pale straw in colour. White peach, nashi pear and quince greet the nose with fresh brioche and toasted hazelnuts providing delicate complexity. A fresh, vibrant expression of Margaret River. The lion’s share of the fruit came from the cooler southern half of the Margaret River region, including the estate Chapman Brook Vineyard. Every effort is made in the vineyard and winery to promote the clean aromatics and punchy citrus characters of Sauvignon Blanc. Various canopy management methods are employed, with the objective being to maximise fruit flavour development. The soils of these vineyards are geologically ancient, free draining sandy loams with a high percentage of lateritic gravel. Fruit is machine harvested at night to take advantage of the cooler temperatures. Vinified in tank to retain freshness, the finished wine is assembled after five months on lees. Alcohol 13.0%

A mostly Shiraz wine with smaller components of Mataro and Grenache, sourced primarily from good vineyards along the Margaret River. Drawing inspiration from the wines of the Rhone Valley, Marmaduke balances the pepper and spiceyness of Shiraz, sweet fruit flavours of Grenache with the earthy, gamey influence of the torrid Mataro. The majority of the Shiraz was grown on Cape Mentelle vineyards, mostly located in the Wallcliffe and Karridale subregions within the Margaret River appellation. Soils are derived from decomposed granite and consist of gravelly loam over deep clay subsoil. All vines are vertically shoot positioned and managed to ensure balanced growth throughout the season. Parcels of hand and machine harvested fruit are vinified in a combination of open and static fermenters, managed with a combination of plunging and pumpovers. Cape Mentelle’s draws inspiration from the tasty reds of the Rhône Valley. Whole bunch fermentation and ageing techniques are aimed at retaining the refined fruit and floral characters of Shiraz along with the more savoury, spicy elements derived from the vineyard. Deep plum colour with hints of purple. A balancing act of spiciness, white pepper and aniseed, rich, sweet fruit of fully ripe dark plums. Fine and almost creamy in texture, the palate progresses through layers of sweet mulberry and Satsuma plums, before a lingering and sophisticated finish of fine dark chocolatey oak. The wine is treated to the most extravagant vinification techniques, a complete destemming, cold soaking, and a traditional vinification. Aged in a mix of large oak vats and small barriques to retain the refined fruit and floral characters along with the more savoury, spicy elements derived from the vineyard. 2007 was one of the earliest recorded vintages in Margaret River producing the best Cabernet and Merlot blends. The majority of the vineyard soils are derived from decomposed granite and consist of a gravelly loam over a deep clay subsoil. All vines are vertically shoot positioned and managed to ensure balanced growth during the season. After destemming and light crushing, individual vineyard batches were fermented on skins for ten to twenty five days. At the desired balance of fruit and tannin extraction, each batch was gently basket pressed, with harder pressings kept aside. Once sugar dry, batches underwent malolactic in tanks before being racked to oak barriques for fifteen months maturation. Alcohol 14.5%

Cape Mentelle enjoy access to some of the Margaret River's most elite vineyard sites, and have long been one of the region's most ardent formulators of classy white wines. The Wallcliffe Vineyard was established on a ridge of free draining lateritic gravel between 1970 and 1972. Sauvignon Blanc and Semillon were grafted onto shiraz vines in the early 1980s and today produce the distinctive fruit. Wallcliffe is a wine that creates itself in the vineyard. Plainly fermenting the different plots individually in French oak barriques helps to build and define individual characters. A selection of the best barrels are then blended to make a wine which best reflects the characters of the season and the vineyard. Alcohol 12.5%
 
Aromas of lemongrass, citrus blossom, lychee, coriander and wet slate. The fresh citrus fruit characters of the nose transfer seamlessly to the palate, with some white fleshed nectarine and subtle smoke characters also evident. Introduced to the Cape Mentelle Vineyard via cuttings from California in 1975, Zinfandel is a particularly challenging variety to manage in the vineyard and winery. This rich, almost hedonistically dimensioned effort makes all the hard work worthwhile and as such has developed something of a cult following among enthusiasts of bold red wines. Predominantly sourced from the Cape Mentelle's estate vines, grown to a combination of ironstone gravel soils, old bush vines and vertically shoot positioned canopies. The vines are shoot thinned and in some cases leaf plucked to ensure the perfect balance between ensuring fruit exposure to light along with protection from the midday sun. Grapes were handpicked and destemmed, the must was allowed to soak for several days prior to fermentation, softening up the raisined berries before being inoculated with a vigorous yeast strain. The wine fermented to dryness before being basket pressed directy to large oak vats or French oak barriques for malolactic and eighteen months maturation. Alcohol 15.0%

Cape Mentelle is situated mid-way between the township of Margaret River and the popular surfing beaches of Prevelly

Its spacious, rammed earth Tasting Cellar offers a comprehensive range of wines for sampling and sale, including special Cellar Door releases normally unavailable through retail outlets. The Cellar looks through to the winery's barrel hall, home to over several hundred oak barriques of quietly maturing cabernet. Professional and friendly staff provide excellent service and are well-informed about all aspects of wine production.

The winery is surrounded by landscaped native gardens, in which visitors are welcome to picnic or to just relax and enjoy the busy local birdlife. Private tasting facilities are available for special interest groups at negotiated rates, and light meals can be catered on request.

Margaret River is surrounded on three sides by water - Geographe Bay to the north, the Indian Ocean to the west and the cool Southern Ocean to the south. It comprises the rolling hills of the Leeuwin-Naturaliste Ridge, which extends 90km south to north between Capes Leeuwin and Naturaliste and runs only 27km east to west.

The majority of the vineyards have been established in undulating country surrounding the major water courses that flow west to the Indian Ocean; the Boodjidup Brook, Margaret River and Willyabrup Brook. Most vineyards are within 3 - 7km off the coast at elevations between 150 and 200 metres.

The climate is categorised as 'west coast mediterranean', the prime features being mild to wet winters and warm to hot, dry summers. Annual rainfall is 1190mm but the total for the summer months of December, January and February is only 48mm. Heat summation in degree days (C) is 1597 compared to Bordeaux's rating of 1463.

The Leeuwin-Naturaliste Ridge rises from an ancient granite landmass 2000 million years old. The ridge, once an island off the mainland, is now joined by a low mineral-rich area known as the 'sunklands'. The soils are mostly formed in situ as a result of long periods of weathering. The maritime location, and the mild temperature of the Leeuwin current flowing along the coast, ensure an absence of both frost and extremes of summer and winter temperatures. Humidity is relatively high, providing an excellent growing environment. In winter and spring, intense southerly low pressure systems can generate gale force winds which, in some years, will damage young vine shoots and flowers.

Granite decomposes to form iron-rich clay, which precipitates to the surface forming laterite gravel loams, the best vine growing soils in the region. Due to their great age and constant leaching, these soils are relatively low in organic matter and essential elements and require careful management to sustain good vine vigour.
