Blue Pyrenees has established a truly unique winestyle that captures the perfect balance. The dedication, expertise and traditions that are inherent to the finest Methode traditionelle are clearly evident across the entire range. The non vintage Brut was created to showcase this very house style. To this end, components from earlier years are held back to blend with the current vintage, maintaining a consistency across the years, and ultimately infusing the non vintage edition with the luxuriant, toasty characters of aged wines.

Blue Pyrenees Estate is the realisation of a desire to create a unique vineyard of superior quality. It was in the early 1960s that the Pyrenees region became recognised for its potential, by virtue of a unique combination of deep gravely soils and cool climate conditions. Blue Pyrenees Estate is the coolest site within the Pyrenees region, with a diversity of microclimes enabling each clone to be planted in the best situation. A mostly Chardonnay Cuvée with a smaller portion of Pinot Noir. The inclusion of components of mature wines has the effect of reducing the time of ageing on secondary bottle fermentation lees to achieve the desirable complex flavours. This keeps the finished wine, ever more fresh, and vital. Approx 13.0%
 
Pale straw with a green hue. A fine and persistent bead, the hallmark of a true Methode traditionelle. The complex aromas of mature white wine, fresh dough, citrus and hint of confection give an overall impression of freshness and vitality. Lemons and shortbread, and toasty, aged wine complexity linger harmoniously together on the palate all the way towards the very end, and beyond.

Blue Pyrenees was established as Chateau Remy in 1963 by Remy Martin of France and has since become well known for their Bordeaux styled Cabernet Sauvignon. The estate was developed under advisement of the great Colin Preece and Maurice O'Shea's Hunter Valley management team. Victoria's Pyrenees have since become renowned for statuesque Cabernet wines, displaying great complexity, superior concentration and definitive regionality. Very few viticultural precincts in Australia can lay claim to doing Cabernet so very well and so consistently.

Cabernet is the most consistent high quality performer for Blue Pyrenees. The vineyard is surrounded by the picturesque blue hued Pyrenees, so named for the beauty and similarity to its namesake range of mountains along the border of Spain and France. The climate is warm enough to develop concentration and power in the grapes, yet cool enough to achieve elegance and sophistication, translating into generous wines with ripe tannins and solid structure. Estate grown Cabernet Sauvignon is vinified in a mix of two tonnes open fermenters and fifteen tonnes static fermenters before a year's maturation in a combination of new, one and two year old French oak barriques.
 
Bright ruby red in colour. Fragrant red berry fruit, regional mint and classy French oak aromas. A generous mouthful of ripe dark berries complemented by forest flavours of eucalypt, mint leaves, earth and cedary oak. Full bodied with classical varietal structure and abundant fine grain tannins which contribute to an elegant, persistent finish characterised by lingering, vinous chocolate flavours. A suitable accompaniement to good beef, venison and game.

The production of Methode traditionelle sparkling wines has been an integral part of the winemaking at Blue Pyrenees for many years. Established in 1963 by the Champagne houses of Krug and Charles Heidsieck, an adherence to the stylish French influence of the founders is central. In 1992, the team at Blue Pyrenees decided to experiment with hand picking fruit in the middle of the night, under floodlights, to optimize fruit condition and temperature. The results were amazing, crisp and clean juices of outstanding quality. The Midnight Cuvee was born.

Although hand picked fruit is often most desirable for the production of premium quality juices, day time temperatures in Australia can mean that hand picked fruit is often quite warm when received into the press after a day's picking. Nowadays the Blue Pyrenees team select the best fruit parcels, whilst still on the vine, to be separated out from the rest and picked at night by hand to generate the juices that will become the Midnight Cuvee. Although very laborious and time consuming, the rewards are evident in the glass. The Blue Pyrenees Estate Midnight Cuvee is made entirely from estate grown fruit, predominantly Chardonnay with a touch of Pinot Noir. Approx 12.7%
 
A brilliant pale straw with a fine bead of gentle bubbles. The aroma is delicate and complex with the yeast autolysis character of freshly baked bread complimented by citrus fruits and hazelnuts. The bright, green apple flavoured palate exhibits a fine acid backbone which enhances the fresh doughy yeast notes and fine refreshing effervescence. A wine of great elegance, balance and finesse, with a long and clean, lingering finish.

The essential Victorian Methode traditionelle, from vines surrounded by the blue hued Pyrenees, so named for their beauty and similarity to the range bordering France with Spain. French eccentricity was the genesis of Blue Pyrenees Estate and remains central to the winemaking philosophy. Entrepreneur Francois Henri was so inspired by the picturesque blue hills that he commissioned a painting which has since become the famous label. A cépage of the holy trinity, Chardonnay, Pinot Noir and a healthy tranche of Pinot Meunier.

Established in 1963 as Château Remy by the Champagne houses of Heidsieck and Krug, the Blue Pyrenees style has evolved into a unique wine that captures the perfect balance between new world technology and old world tradition. Following considerable development and experimentation, the inaugural release was in 1982, the rest as they say is history. The winemaking team assembles the finest components of Pinot Chardonnay into a harmonious whole that represents excellence in expression and styling. Inoculated by strains of yeast native to Champagne, the judicious use of small amounts of reserve wine adds complexity and maturity whilst maintaining consistency from year to year. Alcohol 12.8%
 
Brilliant straw yellow with a green hue, a fine and persistent bead. Complex aromas of baker's dough, freshly baked biscuits and nougat after an extended ageing on yeast lees. Subtle hints of lemon and confection give an overall impression of freshness and vitality. Concentrated yeast autolysis characters and grapefruit flavours. The lively palate is driven by a fresh acidity, which lingers harmoniously with the aged complexity. A component of Pinot Meunier adds complexity to the final cuvée. The wine completely coats the palate and leaves an ample feeling of beautiful ripe fruit lingering in the mouth. In the truest style of Blue Pyrenees, sensuous, attractive and creamy, released as a mature style, ready to ingratiate.
The Pyrenees region of Central Victoria is the third oldest of the State's vignobles

The mountain range was named by the noted explorer and surveyor Major Thomas Mitchell, for its raw beauty and similarities to the Pyrenees in south western France, where Mitchell had served as a young Army officer. The first grower of vines for winemaking in the Avoca area was a man named MacKereth, who planted his vines in 1848. His vineyards grew to supply the thirsty miners working in the then thriving old mining industry.

It is interesting that the lake depicted on the Blue Pyrenees Estate labels was originally the site of a gold mine, but on following a gold reef, miners struck an underground spring, which is now the source of a valuable water supply to the Estate.

It was in the early 1960's that the area was recognised for its potential for premium quality wine production with its unique combination of deep gravely soils and cool climate conditions. Following considerable development and experimentation the initial release under the Blue Pyrenees label was the 1982 Blue Pyrenees Estate Reserve Red. The rest, as they say is history.

The painting on the label is reproduced from the original oil painting by the respected artist Lorrie Banks. It depicts moonlight over the vineyards and was painted in 1985 and represents the Estate signature.

The factors determining terroir are primarily climate, geology and hydrology or soil water relations. The Blue Pyrenees Estate in the Pyrenees of Central Victoria was selected because these factors could be identified in a specific combination ideally suiting premium quality wine production. Research conducted by viticulturists and CSIRO of Australia demonstrates that Blue Pyrenees Estate consistently reaches maturity ten days after Coonawarra, a key reference for cool climate viticulture in this country.

Blue Pyrenees Estate is also the coolest in the Pyrenees region, with a diversity of microclimate and soils enabling each clone, and each variety to be planted in the best situation. The vineyards have been planted along the foothills facing north, at an altitude of 400 metres. Rainfall averages around 630mm, the pattern in most seasons being ideal - mainly in winter and early spring.

There is considerable geological diversity as the vineyards are spread over three types of very deep sub-soils

Red sandstone, old grey gravel and colluvium of pure loam. Each grape variety and its chosen clone is painstakingly selected and planted in suitable soils and within the appropriate micro climate. Cabernet Sauvignon, Shiraz and Merlot were planted, specifically in order to produce a superior house style, blended red wine. Several clones of Chardonnay are planted in selected sites to produce a flavoursome white wine and in other sites, for fine sparkling wine production. Pinot Noir and Pinot Meunier were also planted in these ideal Pyrenees cool climate conditions. In fact, the Estate now has the largest plantings of Pinot Meunier in Australia.

Sauvignon Blanc and Semillon are also grown on the property. Petit Verdot is now planted, as is Viognier the premiere varietal of Condrieu in France. These fine quality grape varieties are planted in vineyards totaling 185 hectares or some 460 acres, making it the largest single Estate investment in the premium Pyrenees winegrowing region.
