Belford is the Hunter Valley archetype, showing a tightly structured palate with considerable length and breadth of citrus honey flavours. From fruit grown to the Belford property, owned and operated by the Elliotts, just fifteen kilometres northwest of the Tyrrell wineworks. Edward Tyrrell planted his first vines in 1858 after receiving a grant over poor pasture land in the lee of Brokenback Range. Tyrrell can lay claim to being one of the only companies in the world to have inaugurated a distinctive genre of wine, Hunter Valley Semillon. At just over four hectares and completely dry grown, Belford was established 1933 to very fine sandy loams, almost talcum powder in consistency. Grapes are all hand picked, lightly crushed and coolly fermented, after a term on gross lees, Belford is racked and treated to an unoaked maturation before bottling. Alcohol 11.0%

Straw coloured. A classic Hunter Semillon showing a tightly structured palate with considerable length and breadth of citrus honey flavours. Belford develops honey characters but maintains its natural fresh acid. The last of the Semillon picked, characterized by the fuller palate of Belford vineyard, a Semillon of great fruit intensity and a high, clean acid finish.

Tyrrells HVD Semillon
Hunter Valley
Available in cartons of six
Hunter Valley Distillery is a continuation of the same dry creek bed as the Short Flat Vineyard that produces Vat 1 Semillon. HVD is a proven Semillon vineyard, which consistently yields parcels of fruit that reach the very high standards that are demanded for inclusion in the exalted Vat 1. In 1995, the winemakers decided to keep the HVD Semillon by itself as a separate reserve wine and it went on to become one of the most talked about releases of the last decade. HVD Semillon is rapidly gaining a solid repute as one of Australia's great white wines.

Vines planted in 1908 form the Sign Post Block, completely dry grown and all on original root stock. The property lies between two small creeks that are fed from a spring in the Brokenback range. Soils are light sandy loam going down into coarse river sand. The vines are rarely stressed and their roots are almost continuously in water. Fruit is crushed but not de-stemmed and placed through a Miller airbag press. Juices are centrifuged after pressing and fermented following inoculation by an old strain of Tyrrell's yeast over the course of a fortnight. HVD is winemaking in its purest form, parcels are treated to a short time on gross lees prior to racking, assembling and preparation for bottling. Alcohol 11.0%

Bright straw colour. Floral fruit in youth, an immediate impact of big, soft baked notes on the nose and palate which moves towards deeper biscuit characters with age. The palate is mellow with softer acids than most other Tyrrell Hunter Valley Semillon. A fine match to gourmandise white meats and poultry, truffle recipes or fine cheese.

At Tyrrell's Hunter Valley, the beginnings of five generations winemaking can be traced to an unassuming one roomed hut. The homestead of ironbark slabs was founder Edward Tyrrell's home. Built by hand in 1858 and progressively surrounded by grape vines, the site marks the birthplace of one of Australia's great winemaking dynasties. Glenoak is a predominantly hillside vineyard that features rich and unusually coloured purple ochre clay loams yielding a scant tonnage per acre. After a relatively cool fermentation, Steven spends minimal time on yeast lees, promptly bottled to maintain its freshness. Vinified completely unwooded, without any barrrel ferments or oak maturation whatsoever.

Light straw hue. Complex mineral and flint aromas with a palate dominated by the length of fruit and richness of flavour. As always with semi mature Hunter semillon, there is a wonderful balance between the fresh citrus flavours of youth and the aged toasty characters that are beginning to surface. An immensely approachable, seamlessly structured wine.
Tyrrells Vat 1 Semillon
Hunter Valley

Outstanding Langtons Classification. Arguably Australia's finest and most enduring Semillon, Vat 1 articulates the merits of patient bottle ageing as it transforms this pure, unoaked wine. First produced in 1963 and sourced from historic Pokolbin fruit parcels, a mature Semillon aged under the Tyrrells cellar. While drinking like a dream immediately upon release, it will continue to develop delicious bottle age characters for many years hence, a joy to experience time and time again.

The story of Tyrrell is based in no small way around the formulation of that most Australian of white wine styles, Hunter Valley Semillon. Semillon is sourced from the Short Flat and Johnno’s vineyards, established circa 1908. Vines are all dry grown and were originally planted on their own roots. Grapes are hand picked throughout the cool early hours and lightly crushed, the must is fined prior to a relatively cool fermentation. After a short period on gross lees, components are racked and matured for several months before bottling. The subsequent six years are quietly spent in a dark, temperature and humidity controlled cellaring facility at the Tyrrell Winery before release.

Mid green/ gold in colour. Ripe toasty fruit, nuts and wax characters on the bouquet. A considerable length and breadth of lemon and citrus fruit flavours on the tightly structured palate, Vat 1 is only just beginning to display toasty bottle aged complexity. Whilst drinking well now, it will continue to evolve for many years to come. Match with Moreton bay bugs, crispy skinned spatchcock or grilled whiting.

Vasse Felix Cane Cut Semillon 375ml
Margaret River
Available in cartons of six
Vasse Felix produce the most exquisite Margaret River Semillon, wines of extraordinary freshness, lifted fruit intensity, elegance and finesse. Vasse Felix make a cane cut dessert style Semillon by slashing the shoots at the base, essentially detaching fruit from the vine. Bunches are then allowed to hang for several weeks, during which time the berries desiccate, concentrating the sugar, flavours and acid. The result is an attractive quince and tropical fruit flavoured wine offering amazing depth of flavour and vitality, seasoned by just a hint of spicy French oak.

Cane Cut Semillon is all about timing and precision, exercising care in the vineyard to create fruit which can ultimately translate into a wine of purity and elegance. Being an early ripening grape, Semillon finds the growing conditions in Margaret River idyllic. Vines will usually compensate for cooler conditions by reducing yield so that every chance is given to obtain optimum ripeness. Given the amount of shrivel in a cane cut grape, yields are precious and extraction rates are very low for this style of wine. Following harvest and the crush, juices are inoculated to select yeasts before vinification in a combination of fermenters, folowed by a judicious term of lees stirring in a mix of French oak barriques. Alcohol 11.0%

Medium straw hues. Intensely fragrant with barley sugar and spice, lovely citrus marmalade notes, gingernut and meringue are seasoned by toasty French oak notes of vanilla and spice. Preserved lemon, tangerine and grapefruit flavours burst onto the palate, a fresh tangy acidity perfectly balancing the rich luscious sweetness. A lovely viscous, silky, creamed honey mouthfeel provides medium bodied richness and texture, finely focused mineral acidity and long luscious finish.

Vasse Felix enjoys near perfect conditions for viticulture. The Mediterranean climate features mild, wet winters and warm, dry summers, ideal for the growth of high quality fruit. Semillon and Sauvignon Blanc flourish in these climes, developing distinctive regional characters not found anywhere else in Australia. Ripening conditions provide the varietal definition and aromatic qualities which make Margaret River so unique. Grapes are picked to modest levels of sugar baume, capturing fine aromas, crisp primary fruit flavours and good, clean acid structure. The juices are fermented under cool conditions with specially selected yeasts, completely unoaked to preserve the vitally crisp bouquet and flavours.

Bright pale straw, fresh green hue. Lifted citrus aromas are supported beautifully by nuances of passionfruit with hints of yellow rose, orange and lemon rind. The palate is zesty and vibrant, with fresh fruit sweetness adding a juicy succulence to the pure fruit characters. The crisp acidity provides great length to the wine, while flavours of freshly cut grass, citrus and passionfruit add further intensity.

Vasse Felix Sauvignon Semillon
Margaret River
Praise the virtues of Margaret River's most suave, stylish and stimulating oenological accords! A portion is fermented and matured fourteen weeks in new barriques, adding an amazing complexity to the core of fruit, infusing a delicate influence of very fine grain tannins and the unique spicy vanillin characters of French oak. The aromatic and textural complexity of a Semillon Sauvignon style has been enhanced by retaining extra solids in some of the parcels. A small contribution from Sauvignon Blanc fermented entirely on skins has added a unique savouryness.

Bright straw, lime green. Gooseberry and lime notes, sourdough, romano cheese and coriander to the bouquet. The savoury element is mirrored on the palate as a rich and textural composite of citrus fruits, as herbs build and evolve in the mouth. A slatey, mouthwatering acidity permeates the generous fruit flavours and accentuates a long cleansing finish. Subtle sandalwood and clove hint at the contribution of fine French oak.
