Hay Shed Hill was planted way back in the 1970s to the varietal grapes which have put Margaret River on the map, Semillon and Sauvignon Blanc. The mesoclimes which rejuvenate the vines at Hay Shed Hil in Willyabrup are generally excellent with generally favourable temperatures and ample sunshine, simply superb grape growing conditions. Sauvignon Blanc typically displays lovely tropical aromatics, the Semillon grapes are endowed with sweetly scented grassy, fresh fruit characters. Pitchfork is completely unwooded and bottled promptly after vinification. A low temperature, protective regime is adopted throughout the process, preserving the finer fruit characters of the crisp and aromatic varietals.
 
Pale straw/ green hues. Lifted Semillon/ Sauvignon aromas, lemon/ lime, gooseberry and pine, green mango and passionfruit with a distinctive grassy edge. Intensely flavoured, clean and zippy, offering fresh flavours of lemon, passionfruit and pineapple, before a clean linear finish. A match to Chinese scallops, gujons and quick fried fish.
Redgate Sauvignon Blanc Semillon

A fresh and vibrant blend of grapes which has become the signature of stylish Margaret River white wine. Redgate grow six blocks of Sauvignon Blanc and five of Semillon on gravelly loam clays less than three kilometres from the Indian Ocean. Each is nurtured from budburst until harvest to maximise flavour development, the vines are encouraged to yield fruit that's worthy of Margaret River's elder wineries. A vigorous bouquet of lively citrus fruit and freshly cut grass precedes an effusive palate of passionfruit and lime sherbet flavours, all competing for attention.

Sauvignon Blanc and Semillon are harvested block by block throughout the cool of night, as optimal flavour character, sugar levels and acid are achieved. Fruit is crushed and pressed, juices are transferred to tank and chilled below 10C for settling. Each parcel is processed individually and transferred again to leave sediments behind. Juices are warmed to 13C and inoculated with a specially select yeast. Fermentations can last up to a fortnight before chilling and permitting yeast and other grape solids to settle. Parcels are then ajudicated for assemblage following a series of trials to identify those components most compatible for inclusion, filtered and clarified for bottling.

Sandalford Margaret River Classic Dry White
Margaret River
Sandalford is designed to be fully fruit driven, completely Margaret River, refreshingly unoaked, classic and dry. The winemaking story goes back, way back to the 1840s as the second land title in all of Western Australia. In 1972 Sandalford broke out of their Swan Valley environs and established an estate vineyard along Margaret River, today it is one of the oldest and most salubrious. The exclusively free run juices of Semillon and Sauvignon Blanc are treated to a cool ferment on low solids, achieving an articulate expression of the enduring Classic Dry White.

The Sandalford team train their vines to yield Semillon and Sauvignon that's perfectly ripened and disease free, achieving marvelous sugar/ acid profiles. Viticulture is state of the art and only the vagaries of the growing season are left to chance, the quality of fruit from each vintage is second to none. Canopy management is either vertical shoot positioned or modified ballerina. Harvested throughout the cool of night and early morning, fruit is immediately processed, inoculated with choice strains of yeast and treated to a long, slow vinification. Ferments are stopped at the desired level of sweetness prior to the base wines being assembled, unwooded and unoaked, stabilised, filtered and bottled.
 
Pale lime in colour. Lovely, elegant, perfumed bouquet of fresh cape gooseberry and manage tout. A light bodied wine which is just so easy to drink. A real minerality to the palate, flavours seen on the nose translate beautifully to the palate. Acidity is perfectly judged, the wine finishes with a zesty crispness and harmonious balance.

All Sandalford wines are made by the same exacting standards and attention to detail, small batch processing of the best fruit is the cornerstone of the estate's reserve range. Fruit is sourced off fully mature Margaret River vines planted in 1970 to the famed Wilyabrup subregion of Margaret River, harvested throughout the cool of night and crushed. The must is transferred to presses and only the crystal clear free run juices are vinified. Low solids and cool ferment temperatures ensure fruit characters are preserved. Upon completion, components are assembled into the final wine. A small portion of the Sauvignon Blanc is treated to partial barrel ferment in seasoned French oak barrels.
 
Pale lime hues. An elegance on the nose, slightly herbal in nature, a fine perfume to the bouquet. Sauvignon exudes gooseberry and grassiness, Semillon fills out the palate with weight, texture and citrus nuances. A light to medium bodied wine with beautiful balance in respect of acidity giving a lovely zestiness to the finish, a touch of minerality adding to the overall allure.

Mark Lane found his way to Margaret River in a roundabout way. For a while he made cheese and wine in Victoria with the likes of Tarrawarra and Eyton-on-Yarra before taking the trek west to take up position as chief winemaker with Deep Woods and Flying Fish Cove. Having earned a reputation as one of Margaret River's most talented winemakers, Lane pulled together a young and enthusiastic team to establish Swings & Roundabouts. Drawing the highest quality Sauvignon Blanc and Semillon from estate vineyards, the fruit is gently processed to achieve maximum flavour profiles and aromaticness. Early bottling is a key element to ensuring that the wine retains freshness and vivacity.
 
Pale green hue. Lifted fresh crystalline sharp fruit that's perfectly clean, succulent Sauvignon Blanc freshness with a dry Semillon background. Flint dry but with an explosive first impact of sweet racy fruit, the palate is medium to light bodied, slatey savouryness and a quenching minerality, it's a wine in fine form, long, perfectly fruit driven and dry, with a fine clean finish and crisp acidity. Tempus Two is the culmination of Lisa McGuigan's dream to create a world class tourism experience within an ultra premium winemaking estate. Tempus Two have broken the tradition with their tantalizing editions of dessert wine, sealing the precious liquid within hand blown bottles of Italian glass, which have claimed conspicuous design awards. Botrytis Cinerea Noble Rot is a fungal infection which causes dehydration and concentration of juices within the infected grape. There was much debate at Tempus Two about which style to produce from the intensely sweet Griffith Semillon. Natural sugar levels were heightened and grapes harvested late to enhance the intense flavours. Alcohol 10.0%
 
Colour is a deep golden yellow. Aromas of preserved apricots and candied citrus marmalade with hints of wild honey. Powerfully rich and opulent displaying the quintessence of botrytis semillon. Tim Adams knows about Clare Valley Semillon. He began his career as a cellarhand for the Stanley Wine Company, rising to the position of chief winemaker, he also worked under the tutelage of Mick Knappstein. Adams objective with Clare Valley Semillon is to retain its freshness and authenticity, for an aromatic wine of exquisite balance and generosity of flavour. Ferments in French oak infuse complexity into the grass and stonefruit character of Semillon.

The Tim Adams wineworks are located right at the heart of Valley Clare, along Warenda Road, not far from the Main North Road, about midway between the townships of Sevenhill and Clare. Harvests of Semillon grapes are selected off choice blocks on the Sheoak, Rogers and Fairfield Vineyards. Parcels are crushed and the juices left in contact with skins for twelve hours to maximize fruit flavour extraction. All pressings are retained and vinified for inclusion into the finished wine. Batches are vinified in a combination of fermenters and French oak barrels, components remain in oak for several months before being assembled and cold stabilized into the final wine.
 
A light, bright yellow hue. Citrus, mineral and vegetable bouquet with hints of dried florals, asparagus and pear. This aromatic wine has great balance and generous flavours so expressive of Clare Valley. French oak fermentation has added complexity to the grassy and stonefruit characters of the Semillon.

Fashioned with the savoury, food friendly dry whites of southern France in mind, Woodcutter Semillon is the ideal tonic after a long day in the vineyard. The copper hued skins of the characterful and ancient Madeira clone of Semillon, fleshes out the palate markedly, infusing the complexity of pineapples and almond kernel, roasted cashew and ripe white peach. A match to creamy French style curries, yabbles and frog legs almondine or grilled fishes on fragrant rice.

Fruit is sourced from two splendid vineyards in Kalimna and Rowland Flat. All grapes are hand picked into separate parcels and individually processed, bunches are whole bunch pressed to open vats for a term of cold soak and gross lees settling. After a day of rest, the younger blocks are racked to fermenters, whilst the older more robust parcels are filled to a selection of well seasoned French oak barriques for a long cool vinification. Components are assembled into the finished wine in the November following harvest.
 
Pristine lemon hues. Delicate notes of cumquats and calamansi, limestone, candle wax and toasted brioche. Medium bodied, youthful palate, suppored by underlying notes of minerals and citrus oil, an exquisite freshness of fruit, preserved by a crisp spine of razor acidity which neatly laces into the finish.

A new wine by one of the Riverina's leading estates, it'll excite those who are venturing out for a lighter style with less alcohol. Through early harvest and skilled vinification, the award winning Trentham team have fashioned a luscious young white with only 8.5% alcohol, two thirds the strength of a normal wine. Grapes are harvested early in the vintage from vines which are specially trained, throughout the cool of early morning, at the precise juncture where sugar levels are low and flavour development has peaked. Grapes are crushed, chilled and gently pressed, the juices are settled and fermented to dry. Young, vivacious and completely unoaked, Two Thirds is bottled early to retain freshness. Alcohol 8.5%
 
Pale lemon hue. Two Thirds shows light lime and lemon aromas with fresh tropical flavours, quinces and grapefruit, vegetables and herb. It's rich with minerality and fills the palate with its weight of fruit, finishing satisfyingly dry and crisp.
