Clairault are one of the pioneering vineyard wineries of Margaret River. Their aim has always been to create balanced, well structured wines which reflect a unique terroir and the outstanding quality of fruit from a mature site. Semillon in particular is a stand out performer, vinified alongside parcels of intensely aromatic Sauvignon Blanc, into a crisp, clean wine of exciting mineral fruit character, the classic dry Margaret River white, offering immense drink now appeal.

$2299each $275DOZEN EACH DOZEN Clairault implements a non interventional approach to winemaking, focusing on aromatics, picking on the basis of flavour rather than fruit sugar. Fruit picking occurs over several days as each block achieves optimal ripening, harvested throughout the cool of night and chilled. Parcels are cold pressed, settled and vinified to a variety of techniques, a fifth is fermented in French oak barriques for richness and texture. A unique strain of yeast is employed to enhance the passionfruit and gooseberry of Sauvignon Blanc. Upon completion, batches are held for a month on gross lees while gently treated to battonage before bottling in July.

Pale straw hues. Bright bouquet, newly cut grass characters, guava, grapefruit and orange blossom notes. Pleasingly dry, its vibrant acidity, driven by crushed lime, followed by white pear, lemongrass and dried apricot flavours. Time in French oak has infused a lingering, creamy finish accompanied by subtle minerality.

$3199each $383DOZEN EACH DOZEN Crawford River Wines has been a stimulating challenge for a fourth generation wool grower exploring the viticultural benefits of Henty as a new and unique appellation. As the first Crawford Vineyard posts were pounded into the slope in 1975, a number of the bemused locals pondered the efficacy of a drive-in theatre at such a remote location! A growing number of vineyards adopting the undulating grazing fields and natural bushlands of the surrounding landscape are today making significant contributions to the tapestry of Victoria viticulture. Following vinification and extended time on lees, a small amount has been barrel fermented in old French oak barriques, lending subtle textural elegance, balance and finesse.

Light straw colour. Subtle is the keyword, fragrant bouquets of honeysuckle, minerals and lime . A deliciously fresh, soft and evenly poised palate underpinned by firm chalky minerality, courtesy of time spent on lees. Fine, linear acidity is complimented by plush texture throughout, the lingering, bone dry finish is bright, persistent and crisp.

From time to time at Crawford River, when vintage conditions are just so, the capricious botrytis cinerea blights a parcel or two of Semillon and Sauvignon Blanc grapes. This however can be a blessing of nature, if a spell of clear skies and sunny days, just before the time of picking, works its magic by drying out the berries and intensifying the natural sugars. The uniquely favourable mesoclimes of the Henty region are heaven sent for white wines, even more so when mother nature sets the stage for a toothsome sauternes style to rival the very finest.

Fruit is slowly and carefully whole bunch pressed, the cleanest most pristine free run juices are essential to the integrity of style. Batches are racked for several days and treated to a regimen of rackings for clarification. A combination of yeasts inoculate the vinification, a third of the wine is filled to a selection of seasoned French oak for a luxurious course of barrel ferments, enriching the wine with complexity while softening the palate.

Deep bright yellow. A lifted, fresh scent of elderflower blossom and apricots, followed by yellow nectarine, chargrilled peach and cashew notes. A luscious, textural and dense, focused structure on the palate, fresh passionfruit and ripe peach linger on the back, its crisp, clean acidity capping off the extremely persistent finish. Exquisite as aperitif, a joy alongside fresh fruit desserts and ices.

Cullen will vary the proportion of Sauvignon Blanc to Semillon according to performance. Picked at healthy levels of baume, crushed and inoculated to mostly indigenous yeasts, a minor component is vinified and matured in French oak, while the freshness and vitality of Margaret River fruit is retained through a course of vinfication in controlled fermenters. Pungent, piercing and linear bouquet, the delicious flavours lead in to a long and particularly fine acid finish. Already drinking very well, will continue to evolve, a good choice today alongside gourmandise style crustacea and the freshest fish.

Cullen's splendid Margaret River vineyards are cultivated to represent the purest environment in the world, renowned for white wines of character and charm. Climes are similar to that of Bordeaux and the vines positively flourish. The superlative harvests of Semillon grown to Mangan Vineyard are characterised by their fine linear structure and rich minerality. Land management and vinification techniques for this unique property differ slightly from those employed for white grapes on other sites, each are tailored to allow the influence of terroir to be fully expressed.

Cullen are driven by a passion for purity of fruit and perfect balance in the finished wine. Grapes are picked by hand off vines grown to a strict environmentally friendly philosophy. All wines produced at Cullen are certified as biodynamic, carbon neutral and naturally powered. Cullen vary the ratio of Sauvignon Blanc to Semillon with each vintage according to how the varietals perform. Grapes are individually sorted and fermented to indigenous yeasts, with no acid additions and limited fining, permitting the expression of terroir to have a stronger voice in the glass.

$3049each $365DOZEN EACH DOZEN A pure, single vineyard wine. Fruit is picked over three weeks at optimal baumes to ensure that the wine would possess a desired combination of richness and fresh. The complexity of this famous style is also attributable to the marked differences between the characteristics of Sauvignon Blanc produced by seven unique blocks which reflect subtle differences in soil structure and composition. A component is barrel fermented in new French oak before being treated to several months maturation. As with all Cullen wines, the fruit is completely dry farmed, hand picked and sorted before vinification to natural yeasts without the requirement of any acid adjustment.

Vibrant, pale straw with green hues. Intensely perfumed nose, combining attractive cut grass and hazelnut aromas over clean vanillin oak. Wonderful, round middle palate showing a complex amalgam of lemon, white floral characters and papaya flavours supported by clean background oak. The finish is very long and lingering.

De Bortoli hold an extensive collection of barrel aged wines. Stocks of fortified and botrytised Semillon are drawn on from time to time to assemble into a wickedly decadent wine of rare opulence. Black Noble has most notably claimed Gold and Silver at the prestigious London International. Created by Darren De Bortoli, it is an inspiration from a 1930s wine made by Vittorio De Bortoli. Black Noble is extraordinarily unique and has been compared to the great wines of Jerez.

$3899each $467DOZEN EACH DOZEN De Bortoli are universally acknowledged to have made a great contribution to the pantheon of Noble dessert wines. A very short vinification is applied to harvests of Semillon at rich baumes of 20 to 22, followed by fortification with a neutral grape spirit to arrest ferments. Black Noble is then clarified, a touch of brandy spirit is added for further complexity before ransfer to seasoned oak barriques which have previously aged Noble One. Alcohol 17.5%

Amber colour with olive green hues. Hints of toffee and coffee with raisins and mandarin peel. Unique and delicious, rich raisin and dried date fruit with hints of citrus peel, toffee and caramel flavours. Concentrated and viscous with lingering aged complexity. The perfect end to a meal, with espresso, dark chocolates, cheeses, dried fruit and nuts.
