Douglas Seabrook was the longest serving chairman of judges at the Royal Melbourne Wine Show, he adjudicated over the most memorable vintages for thirty years and held a passion for great Riesling. From a single superb site at Springton in the Adelaide Hills, an exceptional sixty year old vineyard which lies in a secluded valley and ripens much later than most other sites on the surrounding hills. It yields fruit of marvelous minerality, pristine of citrus fruit and elegant of spice, offering superlative finesse as the wine continues to evolve and become more complex with age.

Sevenhill are a quiet achiever, softly spoken artificers of Clare Valley's finest. Riesling develops so much charm as it grows in the vineyard, that if it's picked at the right time, the wine is virtually made. Riesling's desire to wear her heart on her sleeve still means that she can be sensitive, so the vinification must be compassionate. Amongst the propitious terroirs of Sevenhill, vines yield fruit of refined minerality and savoury edge, the richer, red soils are higher in nutrients, all the team have to do is protect and maintain the character of fruit.

Riesling is planted on four separate vineyard blocks, each with different soils, a combination of silty stone/slate and richer, red loam. The silty stone and slate soils are older and less fertile, they offer ideal chemistry for wine grapes. The vines produce leaner characters, the wines show minerality and a more savoury edge. The richer, red soils are higher in nutrients, so the vines don't have to battle quite so hard. All grapes are gently pressed, taking great care not to allow oxygen to steal the flavour. Juices are kept very cool, inoculated by choice yeasts and fermented to dryness at temperatures around 12C. Individual vineyard blocks are all kept separate until completion and the final assemblage.
 
Pale straw colour with a tinge of green. Highly aromatic, waxy orange blossom predominant, nose displays the character and charm of pure, elegant Riesling. The palate is tight and lean, showing prominent citrus flavours followed by a minerally, dry finish, long and crisp.
Sevenhill St Francis Xavier Riesling

St Francis Xavier is really made in the vineyard. Fruit is sourced from a prized parcel at Sevenhill that captures the very essence of Clare Valley Riesling. St Francis Xavier is grown and made with great devotion to the preservation of flavours nurtured in the vineyard. The highly regarded clone from Geisheim is planted to a protected site, a block referred to as Herr Weikert. Great care is taken to settle and bottle the wine quickly, ensuring the vineyard's signature flavours are captured. It's the aim each year to release St Francis Xavier after twelve months in bottle, just as the glorious fruit characters begin to emerge.

Sevenhill Cellars are nestled among the vineyards close to St Aloysius Church. Herr Weikert Block's red brown loam soils and cool, sheltered aspect are key elements in achieving the balanced growth and fine Riesling attributes of St Francis Xavier. The winemaking focus is on preservation of pristine fruit characters that develop during ripening of the berries. Grapes are picked during the coolest part of day, gently pressed and fermented at a very low temperature. Great care is taken to settle and bottle the wine quickly, ensuring the vineyard's signature flavours are captured.
 
Citrus green hues. Concentrated elegant perfume indicates the finesse of the St Aloysius style. In the mouth, the wine combines the fresh zest of citrus flavours with the toasty, nutty character that comes from bottle age. Mouthfuls of citrus fruit combine with enticing minerality, assertively astringent and a touch of lime, talcy yet pleasingly drying.
Skillogalee Riesling

Skillogalee is Celtic for a sort of gruel commonly fed to prisoners. When John Horrocks finally made it back to Penwortham after his trek through the Flinders ranges on Afghan camels, he gave the creek nearby the name Skillogalee in memory of the scant provisions which sustained the expedition. Skillogalee makes wine in a small but modern facility, which crushes only around 250 tonnes each vintage, affording the team a unique opportunity to hand make discrete quantities of individually carefully crafted, small batch vintages.

The grapes for this pleasingly dry Riesling are harvested off low yielding vines, grown to the highest slopes of Skillogalee, 500 metres above sea level. Vines are hand pruned and the fruit is mostly hand picked. Yields are kept to a modest two tonnes per acre, extremely low, but the site produces Riesling with intense flavour profiles and heady aromatics. The family owned vineyard is managed in accordance with sustainable farming practice. Estate grown, vinified and bottled, grapes are handled and processed in small individual parcels, as each block achieves its optimum flavour ripeness. Components complete their vinification with a view to retaining individual character before assembling into the final wine.
 
Pale citrus colour. Lively fresh kaffir lime and white blossom florals, acacia and linden blossom aromatics. The palate has tight, stoney minerality with intense lemon drop, citrus flavours. A refreshing, crisp acidity provides the backbone for a dry, lingering finish. Drink now with fish, seafood or white meats.

Monsters is sourced from exceptional vineyards, parcels are whole bunch pressed and settled for a long cool ferment to wild and cultured yeasts, finished into an extremely limited release of a few hundred dozen. From vines over forty years of age, grown to an elite site at Springton, supported by a parcel of fruit, picked off a bespoke vineyard, higher up the elevated aspects of Valley Eden. It was early German settlers who found a new home for the Riesling grape on the chilly contours of Eden, the terroir and clime being so similar to the challenging slopes along rivers Mosel and Rhine. A winsome perfume of kaffir leaf and bickford lime, followed by a provocative palate of pristine citrus zest flavours, the Riesling of choice to accompany dover sole or the finest sushi.

Sons of Eden are well disposed to craft the very finest Eden Valley Riesling. They host a precious inventory of splendid low yielding vineyards, stimulated by cool nights and warm dry days, for optimal slow ripening of full flavour development and the retention of crisp citrus fruit acidity, so essential to the most graceful vintages of Eden Valley Riesling. Grapes are all harvested by hand, chilled to 6C and whole bunch pressed, retaining nothing but the purest free run juices. A long cool vinification to complete dryness, in temperature controlled fermenters, aimed at preserving maximum varietal perfumes and retaining purity of fruit, is followed by gentle fining and filtration before a prompt bottling.
 
Pale straw hues. Aromatic and intense, pure lemon citrus and lemon sherbet characters, supported by savoury chalkiness and calico notes. Lemon lime citrus on the palate, accompanied by a tight mineral line. The long fine length of flavour is supported by crisp natural acidity, judiciously dry in style, resolving on an aromatic lilac, lemon floral finish.
