Riesling grapes grown to the higher altitudes of slower ripening latitudes, form distinctive fruit characters and the wonderfully fragrant esters which have established the varietal as favourite amongst the world's great winemakers. The big secret at Mount Langi is that they retain access to some of the oldest Riesling vines in Australia, planted to craggy heights and wind swept plateaus in the Grampians. A generously flavoured, fully aromatic Riesling wine, endowed with viscosity and a measure of mineral, uncannily akin to her noble old world siblings.

Famous for their stately reds, Mount Langi are also well placed to make the nation's finest white. Always among the last vineyards in Australia to be picked, Mount Langi can look forward to the type of extended growing season which yields remarkable white wine vintages. Grapes are harvested off blocks of old vine, the youngest are in their fourth decade, some planted over a century ago. Fruit is crushed into controlled fermenters for inoculation to a high glycerol, Riesling specific yeast 796, for three weeks vinification on light solids at 15C. Upon completion, components are assembled into the finished wine for early bottling, to capture and retain the wonderfully fragrant Grampians Riesling characters.
 
Very light straw hue. Intense lemon and lime citrus nose, lanolin and floral notes, honeysuckles and a fragrant mineral edge. A palate of terrific fruit precision and splendid length, exquisitely clean fruit characters upfront, chalkiness and quartz, reined in by a lean yet juicy, crisp, tight acidity. Amazing balance throughout, the wine lingers on a prolonged, pristine finish.

The family Wynn were enthused about the potential of a very special site to produce wines of exceptional elegance and structure. They established vines at 550 metres above sea level in 1968, a place of quartz rich soils over weathered Schist bedrock, within the loftiest aspects of Valley Eden, It remains to this day, the highest productive vineyard in South Australia. Riesling grows magnificently here, the chilly climes and challenging terrains yield harvests of the most extraordinary fruit, lemony and calico, mineral and jasmine florals, a wine of amazing persistence.

Mt Difficulty Bannockburn Dry Riesling

Mt Difficulty were established in just the right way, when Bannockburn's most dedicated growers formed a commune to make Central Otago's finest wines. Riesling is sourced predominantly from Templars Hill vineyard, hand picked and fermented to dryness through the action of indigenous yeasts on full solids, rested unstirred on gross yeast lees for eleven months to build exceptional palate weight. Ripe citrus bouquet, peach blossom and linear grapefruit palate, a lovely line and drive, a pithy phenolic structure, works in harmony with the acidity to frame the finish beautifully.

After twenty years of the most distinguished winemaking, having amassed over sixty trophies and three hundred gold, including a Jimmy Watson and twice International Red Wine Maker of Year, David O'Leary and Nick Walker came home to Valley Clare. Two heart surgeons from Adelaide own the Doctors Vineyard at Polish Hill River. Grey loam soils over sandstone and slate, ideal for the Drs Cut style, a highly perfumed Riesling of gorgeous minerality, these old Clare Valley vines were always destined for something special.

The auspicious soils on Doctors block are fortuitiously littered with just the right amount of surface stones, reflecting the sun's warmth and hinting at just how tough the vines need to be to sustain growth and yield a high quality harvest of fruit. A combination of super rich soils and favourable climes make the holy grail for Riesling. Grapes are picked throughout the cool of night, de stemmed and crushed, a day of cold soak is followed a gentle press for finest free run juices. Batches are vinified by wild vineyard yeast flora on full solids over the course of a fortnight. Six months of lees stirring battonage builds complexity and texture.
 
Pale straw, green tinge hues. A stunning wine exuding wonderful florals, delicate lime and citrus notes, hints of lemon and fennel, bosc pear. A very fine palate with great length of acid, purity of lime fruits and crisp, lemon with hints of musk and fennel, balanced finish. The perfect accompaniment to freshly shucked oysters, Atlantic salmon or king george whiting.

The soils and surrounding mesoclimes are the thumbprint of all great wines. Virtually next door to each other in the Polish Hill River, lie two outstanding blocks of Riesling, Martin Joan Smith's and the Molloy Vineyard. These sites have long been known to yield some of the most expressive fruit that Valley Clare Valley can produce. A wine which espouses the virtues of Polish Valley, displaying great character and depth of flavour, offering mouth watering expressions of intense citrus fruits. The perfume is alluring with powerful slate characters and juicy minerality.

The avenue leading to these elite NASAA Organic Certified vineyards is called Blue Cutting Road. Grey loam acid soils over sandstone and slate make up the profile, much of the top soil is littered by rock, hinting at just how tough the vines must be to sustain growth and produce quality fruit, not to mention the work of the vigneron to ensure quality. Fruit is hand harvested, each section of the vineyard is treated separately. Grapes are de stemmed and given a gentle crush to burst the berries. The finest quality free runs are chilled, preserving expression of fruit, seeded and treated to a fortnight of vinification. Upon completion, the wine is racked off lees, chilled to 5C and filtered before bottling.

Palliser Estate Riesling

Palliser Estate's vineyards were first planted in 1984 and the wines now produced are starting to show characters from these older vines. Riesling planted over a relatively small area, gains complexity from differences in slight variations of soil types and microclimates. Palliser have consistently outgunned rivals in all but the most uncooperative vintages, producing a North Island Riesling like a Riquewehr, but more generous and refined. Fermented cool to retain varietal bouquets and rested on sediments for palate texture, it's sensationally rich with balanced acidity and just a little residual sugar.

Neil Paulett is one of Clare Valley's most distinguished growers with decades of history in the winemaking industry. He hand picks and reserves stocks of Polish Hill River Riesling from outstanding vintages to mature quietly under the estate cellars for some years, to evolve and bloom into all those wonderful, inimitably aged Riesling expressions. Bottled in the August after vintage and kept under the Paulett cellars until current release, a rewarding experience alongside king george whiting, garfish, quenelles or white meat terrines.

In his quest for the finest site in Valley Clare, Neil Paulett acquired a property with vines over a century old, which had been managed by a single family of growers since the 1860s. Polish Hill Riesling of the finest quality, the fruit of an exceptional growing season. There are five separate sites from which to source, vines are grown to altitudes of 500 metres, planted to favourable easterly aspects. Soils tend from shallow red and grey loams over a slate blue stone substrata. Grapes are crushed and pure first run juices are cold settled for clarification before fermenting at an even rate over the course of two to three weeks, ensuring optimal flavour retention and preserving the outstanding quality of harvest.
 
Light straw with hues of gold. Maturing fragrances of honey and toast on the bouquet, a clean crispness. Developing some honey, toast and richer flavours on the palate, supported by underlying lime citrus notes, a delightful freshness of mineral acid through the palate and carrying through to the beautifully aromatic finish.
Pauletts Antonina Riesling

Andreas Weiman was one of Polish Hill River's earliest settlers, he established a block of Riesling vines atop the choicest terroirs on the the Paulett estate property. He named the site Antonina, after his daughter. Today, the limited yields are crafted into a single vineyard selection, which yield what the Paulett winemaking team consider to be their very finest Riesling. Unpretentious and elegant, restrained power and a wonderful spectrum of citrus flavours throughout.

A large part of the Paulett estate was destroyed by Ash Wednesday bushfires. Nevertheless, a significant planting of Riesling vines, well over thirty years of age remain, a treasured resource which makes up the backbone of the icon Antonina, named for the Paulett's affinity to the original settler's family. The choicest bunches are hand picked into 6kg buckets, transferred individually to the winery and placed gently into a bag press without rendering any juices.The lightest pressure is applied once the press is full, an exclusive free run juice that's reserved for Antonina. Batches are cold settled to remove solids before a slow and even vinification to select yeasts over the course of three weeks.
 
Pale straw with green hues. Fine spice, apple and mineral aromas, limes and apples, zest and complexity, then stunning, delicate floral notes. Subtle citrus and lime with mineral overtones to the bouquet. Intense, bright and firm, expressions of lime and chalk which melt onto an underbed of mineral and slate. Fine and lively palate with great length and depth of flavour exhibiting lemon and lime zest, finishing with a crisp acidity.
