There are only two hectares of Merlot at Haan but they have yielded a conspicuous tally of the nation's most memorable vintages in grand Barossa Merlot. The original property along Siegersdorf Road was acquired 1853 by George Friedrich Schmidt for the cost of a pound an acre. The excellence of the harvest from this princely parcel, known to neighbouring Barossans as Hanenhof, has established a celebrity for Merlot which belies its tiny size. An edifying indigo whorl of sweet and savoury fruits, supported by cedar, while seasoned by a soupcon of sage and spearmint spice.

The nation's preeminent vintage of pure Merlot, from precious parcels of tightly packed berries, picked off fully mature vines at a magnificent old Barossa site. The pick of Hanenhof Vineyard Shiraz, a superior site of closely coddled vines at Tanunda on Siegersdorf Road, cropped to a scant 3½ tonnes per acre and ripened to 15° baume before harvest. Prestige is inoculated with choice strains of yeasts to enhance the eloquence of fruit and maximize depth of palate, plunged and pumped over thrice daily, as the fermenting wine is allowed to rest on skins for a week. Batches are racked into a selection of the finest French oak barriques for a course of malolactic and an extravagant two years maturation.

Hanging Rock acquired an established vineyard which came up for lease in the 1980s, located on the southern slopes of Mount Camel to the north of Heathcote township. The combination of low rainfall, hot summers and red Cambrian soils formed a challenging environment in which Shiraz vines thrive, albeit producing low yields of small berries with intense flavours. Parcels of crushed and whole berries are treated to a traditional course of open potter ferments through the action of wild indigenous yeasts, pumped over thrice daily for optimal extraction of tight grain tannins. Upon completion, batches are macerated forty days on skins, the finished wine is matured in a selection of new American oak barrels for two years.
 
Dark plum, deep purple hues. Intense rich, ripe blackcurrant and mulberry aromas over vanilla and spice overtones. The palate is very intense yet well balanced between fruit, chalky tannins and oak. The complex spicy, sweet and savoury flavours of the wine builds in the mouth and crescendos to an remarkably long finish backed by a great acid back bone and tannic structure that asserts Hanging Rock will continue to evolve.

Crafted from a single parcel of Durif at Block 2609 on Delves Farm, yields are low, the tiny berries are intense with flavour and wrapped in ripe juicy tannins. Grapes are de stemmed and inoculated, plunged thrice daily over a week of ferments, pressed and settled into seasoned French oak barrels for fifteen months maturation. A mouthfilling wine of black cherry and blood plum characters, dark chocolates and spice, full bodied and seductive, its structured Durif tannins in support of a mouth filling, savoury fruit driven palate, defined by its linearity, persistence and drive.

Hanwood Estate 1913 Series Touriga

From a parcel of old Touriga Nacional vines on Block 13 of Farm 130. Grapes are carefully de stemmed for three days of cold soak, vinified through the action of natural yeasts and hand plunged thrice daily over a week of ferments, pressed and settled into seasoned French oak for fifteen months maturation. A juicy style characterised by red cherry and violet perfumes, juicy red berry characters within a light, fragrant structure dominated by its freshness and roundness of palate, a supple red wine showing great purity of fruit over a smooth length of fine savoury tannins.

Cabernet Sauvignon is assembled from a canon of vineyards which share a synergy, mature vines up to twenty years of age which can provide the quality of fruit worthy of the HRB label. Small, constricted berries with an intensity of flavour and grape tannins and model tannins are selectively harvested off vines planted to a combination of Terra rosa Coonawarra terroir and gravelly Margaret River sandy loams. Fruit is vinified through a combination of old and new world fermenters, followed by a course of full malolactic to soften the tannins. Upon completion, the wines are sent for an extended maturation into a selection of new and seasoned French oak barriques, crafted by the finest Bordeaux coopers.
 
Rich ruby red colour. Complex and aromatic nose, exhibiting chocolate mint and cassis notes, ripe berries, bay leaf and perfumed French oak. A continuity of fruit character, herb and fragrant savouryness on the full bodied, richly textured palate, chocolateyness, plums and red/black cherry notes are supported by fine tannins and an exceptional length of flavour. Match with lamb shanks or beef ragu with baby potato and parsnip mash.

The tradition of HRB Shiraz dates back to the 1850s, when Thomas Hardy established his Bankside wineworks on the banks of the River Torrens. Hardy believed that assembling wines of different regional character would complement and enhance the qualities in the final blend. A unique code was assigned to each, beginning with the inaugural A001 HRB Reserve is fashioned from Shiraz grown to choice slow ripening vineyards. The finished wine is complex and savoury with an understated power that is very much in the fashion of the enduring Aussie Shiraz style.

The story of Oomoo begins as Thomas Hardy's first wine venture at Bankside, a property on the banks of River Torrens just west of Adelaide. Hardy's now retain the finest Cabernet vineyards in Coonawarra and beyond. Fruit is harvested and taken to the Hardy wineworks for crushing, followed by a term of cold soak maceration. Exacting techniques are employed to manage the amount of contact between pulp, juices and skin for optimal extraction of flavour and tannin. Parcels are treated to a combination of new and old world winemaking techniques, inoculated in a combination of fermenters and vinified at controlled temperatures. The finished wine is matured for a year in a selection of fine French oak barriques.
 
Deeply crimson with garnet hues. Fragrant varietal leaf characters, mints and cassis, liquorice and cedar, blackcurrants and aromatic mocha oak, lifted sage notes. The palate is all about luscious mulberry and blackcurrant flavours, supported by spiced chocolate oak and regional mint, the tannins are seamless, offering terrific line and length. Oomoo will suitably accompany a slow cooked duck or marinated cutlets of lamb.
