Coldstream Hills Pinot Noir
Yarra Valley
Available by the dozen
Coldstream Hills make the quintessential Yarra Valley Pinot Noir, gentle and exquisitely balanced, well developed and engagingly complex. Whole bunch stalkiness and refined French oak add structure and interest. A gamey, earthy proposition displaying all the requisite varietal characters, a stylish wine of intensity and velvet textures, brimming with punnets of ripe berry flavours. Elegantly medium bodied, lined with silky tannins, the Pinot Noir of choice to accompany gourmandise venison, braised hare or succulently roast duck.

Coldstream Hills were established in 1985 by James and Suzanne Halliday. From its initial vintage of 450 dozen, it has grown to become one of Australia's leading small wineries with a reputation that belies its size. Situated in the cool Yarra Valley, its steep, closely planted vineyards have become a signature of the region. So too have its wines, most notably a Pinot Noir which reflects a clime cooler than Bordeaux and warmer than Burgundy. Hand picked grapes from low yielding vineyards in Upper and Lower Yarra Valley are vinified to a variety of Burgundian handling techniques, including whole bunch fermentation and a term of age in a selection of choice French oak barrels. Alcohol 13.5%

Medium red, vibrant purple hues. Fragrant cherry and blueberry fruit aromas with underlying gaminess and spice. Toasty oak adds further complexity to the wine's bouquet, but does not dominate. Vibrant fruit characters of cherry, strawberry and blueberry persist on the juicy palate alongside stalky savoury notes of game, leaf and spice.
Coldstream Hills Reserve Cabernet Sauvignon
Yarra Valley
Available in cases of 6
Founded by the nation's most renowned wine industry savant, Coldstream Hills is as fastidious today under the stewardship of its highly respected winemakers, as it was in the halcyon days of the emergent Yarra Valley boutique wineries. Vintage conditions permitting, Coldstream Hills releases a special Reserve edition in excruciatingly restricted quantities, assembled from the most exceptional barrels of superior Cabernet Sauvignon. The intensive handling of this princely Cuvée includes the extravagance of new French oak ferments, followed by the luxury of extended maturation.

The tannins are engineered through the inclusion of whole bunches and stemmed batches of Shiraz grapes grown to fully mature vines around Kyeema and Murrumbateman, grown to a mix of granite and shale soils which produce fruit that's well perfumed and elegantly structured as well as savoury, textured and rich. Fruit is brought to the wineworks near Collector on the southern tablelands of New South Wales. Grapes are treated to a natural vinification initiated by wild yeasts present on the skins. Individual parcels are fermented, gently pressed and matured in new and seasoned French oak prior to assemblage.

Lively crimson colour. Fragrant bouquet of dark cherry and blackberry, pepper and aniseed. A rich, textural mouthfeel over an elegant structure, it's plum and black cherry palate is lined with cocoa and savoury characters. Showing a sturdy spine of tannin which augurs for graceful ageing, nevertheless exquisitely balanced for a memorable early drinking.
