Single vineyard Syrah, from a sparse harvest of the most amazing grapes, hand picked off the dry grown, Drögemüller family orchard at Springton in the very southeast of Barossa Valley. Bunches are treated to a six tonnes, open top fermenter, for a week of skin contact and daily pumpovers, followed by a year in a selection of well seasoned French oak barrels. An intensely perfumed, Rhône valley style, redolent of peppercorn and spiced black bramble fruit, its ripe, juicy, loganberry, cherry and morello freshness, lingering on a long, licorice wick of, elegant, tensile tannins.

Chaffey Bros Pax Aeterna Grenache

Old vine Grenache, a few inestimable rows, planted during the 1930s to a picturesque place in the northern Barossa called Light Pass. Impassioned vigneron Kevin Schild is custodian of these wizened old veterans, yielding barely enough of a crop to make a few hundred cases. The Chaffeys see themselves as oenological parfumiers, identifying the supple complexities of wayward fruit, revelling in the lost art of small batch vintages. They have elected to treat Schild's fruit to a Nouveau style of ferment, a third included as whole bunches, to be judiciously bottled unfiltered and unfined.

An outstanding assemblage of the most exceptional fruit from the elite Ehrat Vineyard, picked off unirrigated rows of parallel grown Shiraz and Cabernet Sauvignon along Krondorf Road. The inclusion of choice picks Shiraz from a panoply of terroirs in the Valley Eden, Stockwell and Light Pass, add palate weight and complexity. A traditional ferment and old world standards of élevage, just a few hundred dozen are made, are followed by eighteen months in a luxuriously high proportion of new Leroi French oak hogsheads, purposefully bottled unfiltered and unfined.

Chain Of Ponds Amadeus Cabernet Sauvignon

Amadeus Francis Symonds was a local preacher, Justice of the Peace and chairman of Para Wirra district, he took up land at Chain of Ponds in 1848. The first bible christian Methodist services in the district were held at his old farm house, continuing until he laid foundations for the local church. One of the earliest vineyard wineries ever mentioned in the local Adelaide Hills papers, much of the fruit grown to Chain of Ponds has been a component of Penfolds most memorable vintages, the finest parcels are set aside and vinified under the estate's own label.

Chain of Ponds was the first major planting in the northern Adelaide Hills. Today the vines are husbanded by one of the regions most eminent growers, planted to salubrious soils and trained to Scott Henry trellis. Grapes for Amadeus are picked off two elite sites at Charleston and Kuitpo, only a small selection of fruit is chosen for inclusion. Grapes are destemmed and cold settled before vinifying in traditional open fermenters, skins and cap are hand plunged and pumped over twice daily. Ferments are completed in a combination of mostly new Fench and American oak, followed by twenty months maturation in same barrels. Amadeus is bottled with minimum filtration and may produce a slight crust.
 
Deep brick red with an inky hue. Intense blackcurrant, dark chocolate and ripe plum aromas, followed by sensual sweet, nutty oak. Liquorice and earthy overtones continue to mellow after years of bottle age. Flavours of black olive, spice and liquorice give a wonderful mouth feel and lingering aftertaste. The tannins at the back of the palate have developed beautifully and continue to soften. The Cabernet of choice to accompany lamb with tarragon, venison or hare.

The Harvey family established their first vineyard in 1897, it remains productive to this day and yields the most precious harvests of McLaren Vale fruit. Six generations later, the Harveys own and operate a total of six closely managed sites, scattered throughout the premier viticultural precincts, from Kangarilla Road to Willunga and Maslin Beach. Each site was selected over the years for its uniqueness, a confluence of soil and mesoclime to assemble complex yet seamless wines, endowed with the articulate charm and seductive appeal of McLaren Vale.

Growing McLaren Vale's finest Shiraz is not just a skill for the Harvey family, it is a way of life. Fruit is gently handled throughout the entire vinification process to ensure that the expression of vineyard is captured and preserved in the finished wine. Upon completion, components are matured for up to sixteen months in a selection of seasoned and new, fine grained French oak barrels. Alcohol 15.5%
 
Deep purple red. Lifted dark berry and plum fruit nose, dark chocolate notes and sprinkles of savoury spice. Rich and concentrated palate, showing layers of dark McLaren Vale chocolate flavours, plums and dark berry fruit characters. A hint of white pepper on the long and savoury, aromatic finish. A match to fine cheeses, succulently braised lamb shanks or ox cheek over shitake risotto.
Chanson Bourgogne Pinot Noir

Chanson Pere et Fils was founded in 1750 during the reign of Louis XV. The cellars are still located in the Bastion de L'Oratoire, a lookout and defensive tower built at the end of the 15th century. The Chanson family already owned a large Domaine located across Beaune, Savigny les Beaune and Pernand Vergelesses. Chanson survived the tribulations of the phylloxera epidemic and remain one of the most distinguished Maison in Le Bourgogne. An elegant wine, very pure and soft with good lively fruit of raspberry, cherry and a touch of licorice.

Grapes are exclusively sourced from select vineyards in the Cote de Nuits, from plots of Domaine Chanson and from sites in the south of the Cote de Beaune. Soil types are mostly clay over limestone, which yield grapes exhibiting an immense concentration of flavours. All the grapes are hand picked at optimum maturity. A careful selection of Pinot Noir in the vineyard produce crunchy red wines with pure aromas. Grapes enter the fermentation vats in whole bunches for improved temperature control, gradual release of the sugars, and a more refined tannic structure. A cold maceration is followed by a long alcoholic fermentation for greater depth and expression of the wine's structural elements.

Chapoutier have been a part of Rhône Valley viticulture since 1808. Within their portfolio of great vineyards, are many old and distinguished sites which can trace a heritage back to the company's establishment during the reign of Napoleon. The timeless and enduring cépage of Grenache and Syrah in equal proportions, Belleruche is a passionate expression of the Cotes du Rhône, sourced from vines planted to some of the most noble and ancient winegrowing precincts in all France.

Les Vignobles providing fruit for the vinification of Belleruche are spread out across several appellations along the Cotes du Rhône, Drôme and Vaucluse, Gard and Ardeche. Vines are planted on slightly varied soils, alluvial clays, sand and limestones, a patchwork which contributes extraordinary richness and complexity to the final wine. Grapes are all hand harvested at full maturity, destemmed and macerated over a period of fifteen days, extracting tannins and developing good structure which permits the ageing and guarantees stability of the wine. Following inoculation and vinification in a selection of traditional fermenters, Belleruche is aged in large oak vats and assembled in the spring.
 
Garnet red colour. Red fruit aromas, morello cherries and red liquorice, milled pepper, bay leaf and spice. The palate exhibits great structure, layered with crisp red currant and bramble fruit flavours, olives and applejack, before resolving on an engagingly aromtic finish, over a length of firm, sustained and silky tannins.
